GNOCCHI WITH PEAS, SPINACH AND LEMON



Gnocchi with Peas, Spinach and Lemon image

Easy and delicious, this one starts with store-bought gnocchi and frozen peas, so it's ready in less that 30 minutes!

1 cup baby peas (frozen, unthawed)
1/2 cup whipping cream
1/8 - 1/4 tsp dried red pepper flakes
1 garlic clove (smashed)
1/4 tsp salt
3 cups baby spinach (packed)
1 tsp lemon zest
1 1/2 tsp lemon juice
1 lb gnocchi (shelf-stable or dried)
1/4 cup Parmesan (grated)

Steps:

  • Bring a large pot of water to a boil and salt it generously.
  • While waiting for the water to boil: In a large skillet, bring the frozen peas, cream, red pepper flakes garlic and salt to a simmer over medium heat. Cover skillet, reduce heat to medium-low and simmer until peas are tender, about 5 minutes. *If your skillet doesn't have a lid, place a large baking sheet over-top of the skillet to cover. Be careful removing. It gets hot!
  • Remove lid from the skillet and add the spinach. Cook, stirring, over medium-low heat, until the spinach is wilted. Remove the skillet from the heat and stir in the lemon zest and juice.
  • When water is boiling, add gnocchi and boil until gnocchi floats to the top, about 2 minutes. Remove gnocchi to skillet with a large slotted spoon (reserving the gnocchi cooking water). Add Parmesan to the skillet as well as splash of the gnocchi cooking water. Return the skillet to the heat and cook, stirring, until just re-warmed through, adding a bit more gnocchi cooking water if necessary to thin out the sauce.
  • Spoon into bowls. Season well with salt and freshly ground pepper and garnish with a bit more lemon zest, if you like.

1 ½ teaspoons lemon-infused olive oil
1 ½ teaspoons herb-infused olive oil
1 (12 ounce) package refrigerated gnocchi
3 cloves garlic, minced
1 shallot, minced
2 cups small broccoli florets
1 cup frozen peas
1 cup julienned carrots
½ cup chopped red bell pepper
1 small zucchini, sliced diagonally
1 small yellow squash, sliced diagonally
1 cup vegetable broth
1 ½ tablespoons lemon juice
½ cup heavy cream
½ cup finely shredded Parmesan cheese, or more to taste
1 pinch salt and ground black pepper to taste
¾ cup halved grape tomatoes
⅛ teaspoon crushed red pepper flakes, or to taste

Steps:

  • Heat butter and infused olive oils in a large skillet over medium-high heat until butter is melted. Add gnocchi and stir frequently until golden, about 3 minutes. Add garlic and shallot; cook and stir until fragrant, 1 to 2 minutes.
  • Add broccoli, peas, carrots, bell pepper, zucchini, and squash; lightly saute until tender, 2 to 3 minutes. Slowly pour in broth and 1 tablespoon lemon juice; cook until heated through, about 5 minutes. Slowly add cream and 1/2 cup Parmesan cheese; mix to incorporate. Add remaining lemon juice and heat until warmed through and Parmesan is melted, about 3 minutes. Season with salt and pepper.
  • Garnish each serving with tomatoes, red pepper flakes, and Parmesan.

1-pound package potato gnocchi
6 slices bacon, chopped
2 tablespoons minced garlic
2 tablespoons freshly chopped thyme leaves
2 tablespoons butter
1 1/2 cups frozen peas, thawed
Freshly cracked black pepper
1 lemon, juiced

Steps:

  • Bring a large pot of salted water to a boil over medium heat. Add the gnocchi and cook for 5 to 6 minutes.
  • In a large skillet over medium heat add bacon and cook until slightly crisp. Discard the excess fat. Add the garlic and thyme and cook for 30 seconds. Drain the gnocchi and add it to the pan. Stir in the butter, then add the peas, a pinch of black pepper, and a pinch of salt and mix to combine. Add the lemon juice and allow flavors to blend. Taste and season with salt and pepper, if needed. Transfer the gnocchi to a serving bowl and serve.

125 grams (about 1 cup) peas, preferably fresh
One 17.5-ounce package gnocchi
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese, plus more for serving

Steps:

  • Bring a large pot of water to a boil and season generously with salt. Add the peas and cook until tender. Transfer the cooked peas to a bowl of ice water to cool; drain and reserve.
  • Cook the gnocchi in the same pot of boiling water until they float; drain and reserve.
  • Meanwhile, heat the heavy cream in a large pan over medium heat until slightly reduced. Stir in the cheese, lemon zest, lemon juice, gnocchi, and peas; season with salt and pepper. Spoon the pasta into bowls and served with extra cheese, lemon wedges, and parsley, if desired.

2 tablespoons olive oil
Kosher salt
1 pound frozen peeled and deveined jumbo shrimp (16/20)
2 tablespoons lemon pepper seasoning
1/2 cup white wine
2/3 cup heavy cream
1/2 cup mascarpone cheese
1/4 cup prepared pesto
2 lemons, both zested and 1 sliced, for garnish
Freshly ground black pepper
One 17.5-ounce package gnocchi
2 cups frozen peas
6 to 8 fresh basil leaves

Steps:

  • Place a large skillet with a lid over medium-high heat and add the olive oil. Bring a large pot of salted water to the boil.
  • Lightly rinse the shrimp to help separate them and remove any large pieces of ice. Shake off any excess water, then toss the shrimp with the lemon pepper seasoning.
  • Add the shrimp to the hot oil, using tongs to move into a single layer. Cover and let cook until the shrimp start to defrost and turn pink, about 2 minutes. Uncover, flip the shrimp and cook for an additional 2 to 3 minutes, flipping for the final minute. Check that the shrimp are pink all over, then remove to a plate.
  • Deglaze the skillet with the wine, scraping the bottom. Add the cream, mascarpone, pesto, lemon zest and good pinch of salt and pepper. Stir to combine and bring to a simmer. Continue simmering for 1 to 2 minutes and allow the sauce to thicken slightly.
  • Add the gnocchi to the boiling water and cook for 3 to 4 minutes. When the gnocchi are ready, they will begin to float.
  • Drain the gnocchi and add to the sauce along with the frozen peas and the shrimp with any juices. Stir and heat through until the sauce has thickened a little more and everything is combined, about 2 minutes. Taste and adjust the seasoning as needed. Garnish with the basil and lemon slices.

3 tbsp crème fraîche
½ tbsp Dijon mustard
½ lemon, zested and juiced
200g long-stem broccoli, each cut into 3 pieces
350g fresh gnocchi
2 tbsp olive oil
100g frozen peas
1 tbsp toasted pine nuts

Steps:

  • Mix together the crème fraîche, mustard and lemon juice. Set aside. Bring a large pan of salted water to the boil. Once boiling, add the broccoli and cook for 3 mins, then tip in the gnocchi. Cook until the gnocchi begins to float to the surface, this will only take 1 min so keep an eye on them, then drain.
  • Heat the oil in a large non-stick frying pan and, once hot, tip in the gnocchi, broccoli and frozen peas. Toss around in the hot oil for 1 min, then stir through the crème fraîche mixture. Season to taste. Once hot, spoon into bowls and top with the lemon zest and pine nuts.
