1 cup finely ground white rice flour ((4 ounces; 113 grams))
1/2 cup sweet rice flour ((2 ounces; 46 grams))
1/2 cup Dutch-process cocoa powder (regular cocoa powder works as well but the finished cakes won't be as dark.)
1/2 cup tapioca starch ((2 ounces; 46 grams))
1 1/4 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon xanthan gum
1 stick unsalted butter, room temperature ((1/2 cup; 4 ounces; 113 grams))
1 cup dark brown sugar, packed ((7 1/2 ounces; 212 grams))
1 large egg ((1 3/4 ounces; 50 grams))
1 teaspoon vanilla extract
1 cup buttermilk ((8 ounces; 226 grams))
1 stick unsalted butter, softened ((1/2 cup; 4 ounces; 113 grams))
1 (7 1/2 ounce) jar marshmallow crème ( (I used Marshmallow Fluff))
3/4 cup confectioners' sugar ((3 ounces; 85 grams))
1 teaspoon vanilla extract

Steps:

  • For the Cakes: Center oven rack to middle position and preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In small mixing bowl, whisk together white rice flour, sweet rice flour, cocoa powder, tapioca starch, baking soda, salt, and xanthan gum.
  • Fit stand mixer with paddle attachment. In bowl of stand mixer, cream together butter and brown sugar until butter-sugar paste lightens slightly, about one minute. (Use medium high-speed on a stand mixer. If using a handheld mixer, use high speed.) Turn off mixer. Scrape down sides and bottom of bowl. Add egg and vanilla extract. Turn mixer back on. Cream until egg is thoroughly incorporated, about one minute. Scrape down bottom and sides of bowl. Mix for 15 seconds.
  • Add 1/3 of the dry ingredients. Mix until combined. Add half the buttermilk. Mix until batter is smooth. Add another 1/3 of the dry ingredients. Mix until combined. Add remaining buttermilk. Add remaining dry ingredients. Mix batter until smooth and thick, about 30 seconds.
  • Scoop six mounds of batter, about 1/4 cup each, onto prepared baking sheet. Space cookies several inches apart as they spread during baking.
  • Bake until cookies are set and spring back to the touch, about 18 minutes.
  • Remove pan from oven. Allow cookies to cool on pan for one minute. Using a metal spatula, transfer cookies to wire rack to cool. Repeat with remaining batter.
  • While cookies cool, make filling. (method below) Sandwich cooled cookies together with icing.
  • For the Filling: In medium mixing bowl, cream together butter and confectioners' sugar until light and fluffy, about 30 seconds. (Use high speed on a handheld mixer or medium-high speed on a stand mixer.)
  • Add marshmallow crème and vanilla. Mix until fluffy.

1 box Betty Crocker™ Gluten Free brownie mix
1/4 cup butter, melted
2 eggs
1 cup powdered sugar
1/2 cup butter or margarine, softened
1 cup marshmallow creme (from 7- or 13-oz jar)
1 teaspoon pure vanilla
1/4 cup semisweet chocolate chips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 8- or 9-inch square pan with cooking spray (without flour).
  • In medium bowl, stir brownie mix, 1/4 cup butter and the eggs until well blended (batter will be thick). Spread batter in pan.
  • Bake 8-inch pan 28 to 31 minutes, 9-inch pan 26 to 30 minutes, or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely in pan on cooling rack, about 1 hour.
  • In medium bowl, beat powdered sugar and 1/2 cup butter with electric mixer on medium speed until light and fluffy. Beat in marshmallow creme and vanilla on low speed until combined. Spread over brownies.
  • In small resealable freezer plastic bag, place chocolate chips; seal bag. Microwave on High 30 to 60 seconds, kneading bag every 15 seconds, until chocolate is melted and smooth. Cut tiny corner off bag; squeeze bag to drizzle chocolate over brownies. Let stand 30 minutes or until chocolate is set. Cut into 4 rows by 4 rows. Store loosely covered at room temperature.

1 3/4 cups gluten free flour blend (* see note)
3/4 cup sugar
5 tablespoons cocoa powder
1 teaspoon baking powder (aluminum free)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter (softened)
2 eggs (large)
1 cup non-dairy milk (* see note)
1 1/2 teaspoons pure vanilla extract
1 1/2 cups powdered sugar
1 teaspoon pure vanilla extract
1/4 cup butter (softened, room temperature)
1 tablespoon milk (more if needed)

Steps:

  • Preheat the oven to 350º F.
  • Add the gluten free flour, sugar, cocoa powder, baking soda and powder, and sea salt to a large mixing bowl and mix together.
  • Add the softened butter, vanilla extract, and non-dairy milk to a medium bowl and whisk to blend.
  • Pour the wet ingredients into the dry ingredients. Mix the ingredients until the batter is mixed. Be sure to not overmix the batter. This will help ensure your whoopie pies will turn out really fluffy!
  • Use a cookie scoop to drop balls of batter onto a parchment paper-lined cookie sheet. You can also use a silicone mat on the baking pan if you prefer. Use a wet hand to slightly press each dough ball down.
  • Bake the whoopie pies at 350º F for 15-20 minutes until they are done. You can test for doneness by inserting a toothpick into one whoopie pie half. If the toothpick comes back clean, they are finished baking. Actual baking time will vary depending on the size of your whoopie pies.
  • Remove the pies to a wire rack for cooling. They need to cool completely before adding the filling.
  • Add softened room temperature butter, powdered sugar, vanilla extract, and milk to a standing mixer. (Note that you can also use an electric mixer.)
  • Turn it on low speed and mix on low speed until the powdered sugar is incorporated. Gradually increase to medium speed and whip the frosting for 30-45 more seconds.
  • Pipe, spread, or spoon on the frosting. I have also dropped frosting onto the bottom half with a small ice cream scoop.
  • Add the top cookie half on top of the frosting. Press down slightly so the frosting spreads around the cookies.
