Yield Makes 8 Scones

Number Of Ingredients 8

2 cups all-purpose gluten-free flour
1 teaspoon xanthan gum
1 tablespoon baking powder
1/2 teaspoon kosher salt
2 tablespoons sugar
1 cup frozen berries (I love cranberries or blueberries here)
5 tablespoons unsalted butter, diced and chilled
1 cup milk (low-fat is fine, nonfat is not)

Steps:

  • 1. Preheat your oven to 400°F. Line baking sheets with parchment paper and set them aside.
  • 2. Combine the flour, xanthan gum, baking powder, salt, and sugar in a large bowl. Transfer a few tablespoons of this dry ingredient mixture to a small bowl and add the frozen berries. Toss to coat the berries and set aside the small bowl.
  • 3. To the large bowl with the dry ingredients, add the diced butter. Cut it in until the butter resembles pea-size chunks covered in flour. You can either use a pastry cutter or two knives and pretend like you're cutting steak with them over and over.
  • 4. Add the milk to the dry ingredient/butter mixture and stir to combine. The dough will come together. Once the dough has come together, add the berries to the dough and gently fold them in until they are evenly distributed throughout. Handling it as little as possible to keep the butter from melting in your hands, turn the dough out onto a lightly floured surface and pat it into a rectangle about 1/2 inch thick.
  • 5. Cut the dough into 8 triangles. Transfer the triangles to baking sheets lined with parchment paper, a couple of inches apart. Brush with a bit of milk and sprinkle with a tiny bit of sugar, if you like.
  • 6. Bake for 15 to 20 minutes, until the scones are puffed up and slightly brown around the edges. Serve immediately.

GLUTEN-FREE SCONES

Cater for guests intolerant to gluten with these easy scones. Add sultanas if you like and serve with oodles of jam and clotted cream

Provided by Liberty Mendez

Categories     Afternoon tea, Treat

Time 35m

Yield Makes 6-8

Number Of Ingredients 9

250g gluten free self-raising flour
½ tsp fine salt
1 tsp xanthan gum
1 tsp gluten-free baking powder
50g caster sugar
40g cold butter , cubed
75ml whole milk
1 large egg and 1 egg yolk
50g sultanas (optional)

Steps:

  • Mix the flour, salt, xanthan gum, baking powder and sugar together in a bowl. Rub in the butter with your fingertips until you have fine breadcrumbs. You can also do this by gradually pulsing the mixture in a food processor until it resembles breadcrumbs.
  • Whisk together the milk and whole egg and gradually mix into the flour mixture with your hands until you have a smooth dough. Mix in the sultanas, if using. Knead briefly to come together into a ball.
  • Gently roll out the scone dough until 2cm thick. Transfer to a baking tray lined with parchment and chill for 30 mins to firm up the dough - this makes them easier to cut out.
  • Remove the dough from the fridge and, using a 5cm cutter, cut out 6-8 scones (press the offcuts together and re-roll when you need to). Put the scones upside down (this will mean you get a neater top when baked) onto another baking tray lined with baking parchment, spread 2cm apart.
  • Whisk the egg yolk and evenly brush the tops of the scones, making sure that the egg wash doesn't run down the sides of the scones otherwise they will rise unevenly. Put the scones on a tray and transfer to the freezer for 15 mins. Heat oven to 220C/200C fan/gas 7. Remove the scones from the freezer and brush the tops with the beaten egg again, then bake for 12-15 mins until golden brown. Eat just warm or cold, generously topped with jam and cream, if you like.

  • Position the oven rack in the center of the oven. Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
  • In a medium mixing bowl, mix together the sorghum flour, tapioca starch, potato starch, brown sugar, baking powder, baking soda, xanthan gum, salt, and citrus zest. With a pastry cutter or fork, cut butter into flour mixture until the mixture is crumbly and resembles a coarse meal, then add the berries.
  • In a small bowl, beat 1 egg until very light and foamy. Add the sour cream and vanilla, then add the mixture to the dry ingredients and mix with a big spoon until all the ingredients come together. The dough will be soft and somewhat sticky, but should not be wet.
  • Transfer the dough to a countertop dusted with 1 tablespoon of sorghum flour. Dust the top of the dough with a little sorghum flour, push the dough together until all dry ingredients are incorporated, then shape it into a large round 3⁄4-inch thick and 7–8 inches in diameter. Don’t play with the dough too much; the warmth of your hands will melt the butter. With a very sharp knife, cut the dough into 8 even triangles.
