Steps:
- Mash all ingredients, except cheese and spinach.
- On a greased cookie sheet use a rubber spatula to spread dough out into 2 circles (about the size and thickness of a corn tortilla).
- Use a knife to cut across circles to make triangles.
- Broil on middle rack in oven for about 4 minutes or until slightly brown on edges.
- Take out of oven, flip, sprinkle grated cheese on top.
- Return to oven to broil for about 1 minute just to melt cheese.
- Serve immediately over a bed of organic baby spinach.

Here's what you need: ground beef, taco seasoning, gluten-free tortilla chips, shredded cheddar cheese, roma tomatoes, red onion, large avocados, green onion, sour cream

Steps:
- Set smoker to 300°F. Place beef in a cast iron skillet and brown in a smoker. Once browned, add taco seasoning. Then, remove beef from the skillet and set aside and set the smoker to 225°F.
- Line skillet with a layer of chips, cheese, meat, tomatoes and onion. Then, repeat these steps until the skillet is full. Top skillet with remaining cheese.
- Smoke at 225° for 10 minutes. Then, set the smoker to 400° and cook until the cheese is golden brown.
- Take the skillet off of the smoker and top with avocado, green onion, and tomato.
- Serve topped with dollops of sour cream.

- Arrange tortilla chips on a baking sheet. Preheat oven to broil on high. Brown the beef, drain the fat, and add seasoning packet & water. Cook according to package directions.
- Over the tortilla chips, add the ground beef, grated cheese, salsa, and any other ingredients you want to melt. Place in the oven for 8-10 minutes, adding more time if needed.
