GLUTEN FREE PEANUT BUTTER CHOCOLATE CHIP OATMEAL BARS

Steps:
- Preheat your oven to 350 degrees and line an 8x8 baking dish with parchment paper.
- In a small bowl prepare your flax egg by whisking together 1 tablespoon of ground flax seed with 3 tablespoons of water. Set aside to thicken.
- In a mixing bowl, mix together the peanut butter, maple syrup, non-dairy milk, cooled coconut oil and vanilla until smooth.
- In a separate bowl, whisk together the quick oats, peanut flour, baking powder and salt until combined.
- Add the dry ingredients into the wet ingredients and stir until combined.
- Fold in the mini chocolate chips.
- Pour the sticky batter into your prepared baking dish and spread until smooth and even.
- Bake the bars for 15-18 minutes or until starting to turn golden brown along the edges.
- Remove the baking pan from the oven and allow the bars to cool completely before removing and slicing in to 16 squares.

These flourless peanut butter oatmeal bars chocolate chip bars are so easy to make! They are loaded with chocolate chips and are a moist and chewy dessert!

Steps:
- Preheat oven to 350 F.
- Spray an 8x8 inch metal baking dish with non-stick release pan spray.
- In a medium bowl, combine peanut butter, brown sugar, vanilla, baking soda and salt. Using an electric mixer, beat at medium speed for about 2 minutes.
- Add in egg, mix until combined.
- Add in oatmeal and chocolate chips. Mix until combined.
- Transfer the prepared baking dish and spread so that batter is an even height across the top.
- Bake for 15 minutes or until toothpick is inserted and comes out clean (don't over cook).
- Let cool before cutting into squares. Enjoy!

DELICIOUS CHEWY PEANUT BUTTER CHOCOLATE CHIP OATMEAL BARS
These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

Steps:
- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking dish.
- In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
- Add in the peanut butter and beat until combined.
- Add in eggs and beat until combined.
- In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
- Mix in chocolate chips.
- Transfer and spread into prepared baking dish.
- Bake for 22-25 minutes or until JUST set (do not overbake).
- Cool then cut into squares.

- In a large bowl, beat brown sugar and eggs until well blended. Add bananas, peanut butter and salt until blended. Stir in the oats, butterscotch and chocolate chips., Spread batter into a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. Cut into bars.

- Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
- In a large bowl or in the bowl of your stand mixer, mash the bananas. On medium speed, beat or whisk in the remaining ingredients in the order listed. Batter will be a little thick, but still pourable.
