BEER BATTER HUSH PUPPIES
A classic Southern delicacy that is great served with fried seafood and pork BBQ.

Steps:
- Pour oil do a depth of 2-3 inches into a heavy-bottom pot. Heat to 350-degrees F.
- While oil is heating whisk together dry ingredients in a large bowl. Stir in onion and beaten eggs until well combined. Add beer; stir well to combine.
- Working in batches, carefully drop batter by rounded tablespoonfuls into 350-degrees F oil and fry for about 2-3 minutes until golden brown, turning as they fry to evenly cook. Carefully transfer hushpuppies using a slotted spoon (or Chinese spider strainer) to a paper towel-lined baking sheet or cooling rack to drain and cool.
BEER BATTER HUSH PUPPIES
These hush puppies are made with beer in the batter and lots of minced onion. Add some jalapeño pepper or hot sauce to these hush puppies for a kick.

- Gather the ingredients.
- Put about 2 inches of peanut oil or canola oil in a deep, heavy pan. Heat to 360 F.
- In a medium bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Stir to blend. Stir in the chopped onion, green onions, and jalapeño peppers , if using.
- In a cup, whisk the egg with the beer. If desired, add a few dashes of Tabasco sauce or cayenne.
- Pour the beer mixture into the dry ingredients and stir until blended.
- Drop by rounded teaspoon or small cookie scoop into the hot oil.
- Fry in batches of 6 to 8, turning after a minute or two, until golden brown, about 3 to 4 minutes.
- Makes about 1 1/2 to 2 dozen hush puppies.
- Serve and enjoy!

- In a large cast-iron Dutch oven, heat the oil over high heat until it reaches 375 degrees F on a deep-fry thermometer.
- To make the batter, in a large bowl, whisk together the cornmeal, baking powder, cayenne pepper and 1 teaspoon salt. In a second bowl or large liquid measuring cup, combine the beer, eggs and onions. Add some salt and pepper and whisk until smooth. Stir the wet ingredients into the dry ingredients, using as few strokes as possible. (The mixture should resemble wet sand; add more beer, if needed.)
- Line a plate with paper towels and set by the cooktop. To fry the hushpuppies, scoop up the batter using a medium ice cream scoop and drop it into the hot oil without crowding. Fry, stirring occasionally with a slotted spoon, until golden brown, 3 to 5 minutes. Remove with a slotted spoon to the prepared plate. Adjust the heat to maintain the proper temperature and repeat with the remaining batter. Serve immediately.

BUBBA GUMP SOUTHERN HUSH PUPPIES
These are really good hush puppies. This recipe is quite different than most recipes I have tried. The cream corn, cheese and jalapeno peppers really make these hush puppies special. I got this recipe from an old church cookbook I found one day in the attic.

GRANDMA'S HUSH PUPPIES
My grandparent's used to have a Fish Fry at their house about once a month. Grandma always put the hush puppy batter together while grandpa sat on the back porch and fried them with the fish in his big frying cooker. You just can't have a Fish Fry without these wonderful hush puppies. This recipe makes about 15-20 hush puppies.

- Pour vegetable oil into the fryer of your choice. Allow it to be getting hot while mixing.
- Mix the first five ingredients together in a large bowl.
- Add the last four ingredients and mix well.
- If the batter isn't the consistency of pancake batter, add a little more flour to thicken or a little more milk for thinning.
- Take a metal spoon and dip into the hot grease. This allows the batter to just slide off into the grease after putting on spoon.
- Now, take about 1 tbs. size spoonfuls and place into grease.
- Allow to cook for about 5 minute or until golden brown and turn.
- Let cook on other side for about 3 more minute.
- Remove from grease and drain on paper towel lined plate.
- Enjoy with fried fish and cole slaw.
LOVELESS CAFE'S HUSH PUPPIES

- In a large bowl, whisk together cornmeal, flour, baking soda, baking powder, and salt. Stir in onions. Combine egg yolk and buttermilk; stir into cornmeal mixture until combined.
- In the bowl of an electric mixer fitted with the paddle attachment, beat egg whites until stiff. Gently fold into cornmeal mixture.

- Mix all dry ingredients; beat milk and egg together and combine with dry ingredients; batter should hold its shape when picked up in spoon.
- If it is too soft, add more cornmeal.
- Drop by molded Tablespoon into 350"F fat and cook about 1 1/2 minutes; turn and cook on second side 1 minute.
- Allow oil to heat a few seconds after removing a batch.

- When batter consistency is correct and oil is at 350"F, hush puppies will become firm, round shapes almost as soon as they enter the hot oil.
- If they are cooked in oil that is too hot, they will not cook in the center.

The last time we fried catfish, I decided to try out this hush puppy recipe for a bit of a change. I used a can of mild Rotel tomatoes since I have small children, but you could use the hotter Rotel if you wish. This makes a lot of hush puppies, so you might want to halve the recipe.
