EASY GLUTEN FREE CHICKEN PARMESAN

Easy Gluten Free Chicken Parmesan image

GF isn't hard or expensive - just use what you have on hand! This is an easy weeknight recipe, great for satisfying a comfort food craving.

Provided by B-Walk

Categories     Chicken Breast

Time 45m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb chicken breast
2 cups Chex cereal (make sure you're using rice or corn, GF)
1/2 cup parmesan cheese, divided
1 egg
1 teaspoon italian seasoning
1 teaspoon garlic powder
1/4 teaspoon paprika
1 dash cayenne
black pepper
salt
1 (24 ounce) jar spaghetti sauce

Steps:

  • Preheat oven to 400 degrees F. Spray nonstick 9x13 pan to grease. Chicken breasts should be no more than 1" thick, pound chicken down if needed.
  • Combine Chex, 1/4 cup Parmesan cheese, Italian seasoning, garlic powder, cayenne, and paprika in food processor. Pulse until you get a fine, even consistency from your coating mixture. Pour into wide, shallow bowl.
  • Beat egg with salt and pepper to taste in wide, shallow bowl.
  • Dip chicken in egg mixture and dredge in coating. Place in pan, and bake for 20 minutes or until coating is set and golden.
  • Remove pan with chicken from the oven, and pour sauce over the top of chicken. Top with remaining cheese, cover with foil, and bake for 15-20 minutes more until chicken is done and sauce is heated through.
  • Serve with hot cooked GF pasta (Sam Mills is my favorite) or polenta and a green salad.
  • ***Allergen modifications: Try using plain yogurt to coat chicken instead of egg if you are allergic to eggs. Leave cheese out of coating mixture and topping if you are dairy free.

GLUTEN FREE CHEX PARTY MIX

Gluten Free Chex Party Mix image

Chex Mix was one of the snacks I missed most when I was diagnosed with Celiac disease. When I heard that General Mills had reformulated their recipe for Rice Chex, I quickly got to thinking of how I could adapt the recipe to be gluten free. The brand names I've listed are the ones I've found to be certified gluten free. It tastes just how I remember!

Provided by DreamoBway

Categories     Lunch/Snacks

Time 1h15m

Yield 12-16 serving(s)

Number Of Ingredients 10

6 cups Rice Chex
1 cup gluten-free pretzels (I use Glutino)
1 cup gluten-free onion crackers, broken into bite size pieces (I use Mary's Gone Crackers)
1 cup peanuts
6 tablespoons butter
2 tablespoons Worcestershire sauce (I use Lea & Perrins)
1 1/2 teaspoons seasoning salt (I use Lawry's)
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups gluten-free corn flakes

Steps:

  • Preheat oven to 250.
  • Combine Rice Chex, gluten free pretzels, gluten free crackers, and peanuts in a 13x9 pan and set aside.
  • Melt the butter in the microwave (about 30 seconds on high) and add the worcestershire sauce and spices. Stir until well combined.
  • Pour the butter mixture over the Chex mixture and toss until everything is coated. Add the corn flakes and toss to coat them in the residual sauce. (By adding these at this point in the process, it prevents them from getting mushy from the sauce.).
  • Bake for an hour, stirring every 15 minutes.

  • Artificial Sweeteners. While artificial sweeteners have been around for quite some time, so has the controversy surrounding them. However it appears that the tide is finally turning as there has been a plethora of research demonstrating that regular consumption of artificial sweeteners aren’t good for you.
  • BHT (Butylated Hydroxytoluene) and BHA (Butylated Hydroxyanisole) BHT and BHA are used as preservatives added to” maintain freshness” in countless processed (gluten free) foods—and everyday products you wouldn’t dream of eating.
  • Artificial Food Colorings. Potentially linked to behavioral issues, hyperactivity, allergies, and even increased risk of cancer, artificial food colorings should be on your chopping block –particularly Yellow #5, Red#40, and the oh-so-prevalent “Caramel Color” (which is usually produced with ammonia).
  • BVO –Brominated Vegetable Oil. Used in soft drinks and flavored sports drinks to create an appetizing color and appearance, BVO or brominated vegetable oil is literally oil that has added bromine (it’s fused to the fat).
  • Added Gums. While some experts and studies state that most added gums are harmless because a lot of them are indigestible and just pass through the body, there are numerous sources that state the opposite.
