BANANA COCONUT FLAXSEED MUFFINS WITH APPLE AND CHIA

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin with butter.
- Combine flaxseed meal, sugar, chia seeds, baking powder, and cinnamon in a bowl. Add bananas, eggs, and apple; mix batter thoroughly. Stir in 6 tablespoons coconut flakes. Fill tin 3/4 full with batter. Sprinkle remaining 2 tablespoons coconut flakes on top.
- Bake in the preheated oven until tops spring back when lightly pressed, about 30 minutes.

GLUTEN FREE APPLE AND SULTANA MUFFINS
Fruity muffins that are gluten free, what more could you want? Absolutely delicious! Best eaten just out the oven or warmed up slightly in the microwave.

- Heat oven to 180C/160C fan/gas 4. In a large bowl sift and mix the flour, baking powder, cinnamon/spice and caster sugar. If you have self raising flour mix then you only need 1tsp of baking powder.
- In another bowl, mix the eggs, milk and oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
- Divide the mix between 6-8 muffin cases and bake for 25 mins. Allow to cool slightly before eating.

- Preheat the oven to 355 degrees F (179 degrees C). Line a 12-cup muffin tin with paper liners.
- Mix carrots and sugar in a bowl and set aside so carrots can release their liquid and soften.
- Combine buckwheat flour, almond flour, baking powder, and cinnamon in a large bowl. Whisk together applesauce, milk, oil, eggs, and vanilla extract in another bowl. Pour wet ingredients into the dry ingredients and mix until just combined. Fold in the carrot-sugar mixture.
- Spoon about 1/4 cup batter into each prepared muffin cup and sprinkle with chopped almonds.
- Bake in the preheated oven until the tops have slightly browned and a toothpick comes out clean, 20 to 23 minutes Turn off the oven and leave muffins inside without opening the door for 5 minutes.
- Remove from the oven and transfer muffins to a wire rack to cool completely.
