Gluten-Free Grilled Pepper Steak with Honey Onions image

2 tablespoons cracked peppercorns
1 1/2 teaspoons dried thyme leaves
1 teaspoon ground cumin
1 teaspoon garlic salt
1 tablespoon olive or vegetable oil
6 beef t-bone or rib eye steaks, 3/4 to 1 inch thick (about 3 pounds)
3 medium onions, cut into 1/2-inch slices
2 tablespoons honey

Steps:

  • Heat coals or gas grill for direct heat. Mix all Pepper Rub ingredients. Lightly brush half of the oil on both sides of beef. Press rub mixture onto both sides of beef. Let stand 15 minutes.
  • Lightly brush remaining oil on onion slices. Cover and grill beef and onions 4 to 5 inches from medium-high heat 10 to 12 minutes, turning once, until beef is medium doneness.
  • Brush honey on onions. Serve onions with beef.

3 tablespoons black peppercorns
3 tablespoons Sichuan peppercorns
2 tablespoons dried papaya seeds, optional
4 (8-ounce) beef strip loins, at room temperature
1 tablespoon vegetable oil
Kosher salt
2 bunches green onions, roots removed
1 tablespoon vegetable oil, plus more for greasing the grill grate
Kosher salt and freshly ground black pepper

Steps:

  • For the spice mix:
  • Place the black peppercorns into a mortar and pestle and grind. Add in the Sichuan peppercorns and papaya seeds, if using, and grind. Transfer the spice mix to a container.
  • For the steak:
  • Preheat the oven to 400 degrees F. Heat a cast iron pan or skillet over high heat.
  • Press the Sichuan peppercorn spice mix into all of the sides of the steaks, coating entirely and ensuring the spices adhere to the meat. Add the vegetable oil to the cast iron pan, and heat. Season the steaks with salt, to taste.
  • Once the pan is smoking hot, add the steaks. Sear the steaks for 2 minutes or until golden. Do not move. Turn the steaks over, and transfer the pan to the preheated oven for 5 minutes, or until desired degree of doneness. Remove the pan from the oven, turn the steaks over, and set them aside. Allow the meat to rest for 10 minutes so the juices redistribute, before serving.
  • For the onions:
  • Heat a grill over medium-high heat and lightly grease the grates with oil.
  • Toss the green onions in the vegetable oil, and season them with salt and pepper to taste.
  • Grill the green onions for 1 minute. Flip the onions over, and continue cooking for 1 minute, or until onions have softened and are slightly charred.

1 clove garlic, minced
1 Tbsp. chili powder
1 beef sirloin steak (1 lb.), 1 inch thick
1 each red and yellow pepper, each cut lengthwise into quarters
1 red onion, cut crosswise into 4 slices
1/3 cup BULL'S-EYE Original Barbecue Sauce

Steps:

  • Heat greased grill to medium-high heat.
  • Mix garlic and chili powder until blended; rub evenly onto both sides of steak.
  • Grill steak and vegetables 12 to 14 min. or until steak is medium doneness (160ºF) and vegetables are tender, turning steak after 7 min., turning vegetables occasionally and brushing all with barbecue sauce for the last 5 min.
  • Remove steak and vegetables from grill. Let steak stand 5 min. before slicing to serve with the vegetables.

1/2 lb sirloin steak, cut into 2x1/2-inch strips
2 tablespoons light soy sauce or 2 tablespoons tamari
1 -2 cup cooked rice (to serve)

Steps:

  • Heat sesame oil in wok.
  • When wok is smoking, add onion, green pepper, ginger, and garlic. Stir-fry 3 minutes.
  • Add meat and stir-fry 1 minute.
  • Add soy sauce and stir-fry 3 minutes. Remove to a plate.
  • Do not wash wok; use it to stir-fry cooked rice until heated through.
  • Serve pepper steak over stir-fried rice.
