Gluten Free French Bread image

This french bread is amazing!! It tastes so similar to the wheat containing french bread. Plus it freezes wonderfully!!! It's crusty on the outside, and soft and tender within. It is fabulous alone, or made as little brushetta', using 'Joanne's Creamy Brushetta' recipe(#108383).You can make it from start to finish in about one hour!!

2 cups rice flour (white)
1 cup tapioca flour
3 teaspoons xanthan gum
1 1/2 teaspoons salt
2 teaspoons egg substitute (optional)
2 tablespoons sugar
1 1/2 cups lukewarm water
2 tablespoons fast rise yeast
2 tablespoons butter or 2 tablespoons margarine, melted
3 egg whites, beaten slightly
1 teaspoon vinegar
melted butter, for brushing (optional)

Steps:

  • In the bowl of a heavy-duty mixer, place flours, xanthan gum, salt, and egg replacer (if used).Blend with mixer on low.
  • In a small bowl dissolve the sugar in the water, and add yeast.
  • Wait until the mixture foams slightly, then blend into the dry ingredients.
  • Add the butter, egg whites, and vinegar.Beat on high for 3 minutes.
  • To form loaves, spoon dough onto greased and cornmeal-dusted cookie sheets in two long French-loaf shapes or spoon into special French-bread pans.
  • Slash diagonally every few inches.If desired, brush with melted butter.
  • Cover the dough and let rise in a warm place until doubled in bulk, 20 to 25 minutes.
  • Preheat oven to 400 degrees. Bake for 40 to 45 minutes.
  • Remove from pan to cool.

Gluten Free French Bread image

These classic loaves of gluten free French bread are just as crusty outside, soft and tender inside, as you remember. They're even quick and easy enough to make on a weeknight!

Number Of Ingredients 11

1 3/4 cups all purpose gluten free flour blend ((I used Better Batter))
3/4 teaspoon xanthan gum (omit if your blend already contains it)
1/4 cup tapioca starch/flour (plus more for sprinkling)
2 teaspoons instant yeast
1/2 teaspoon kosher salt
3/4 cup warm water ((about 95°F))
1 egg white (at room temperature)
1 tablespoon honey
1 teaspoon apple cider vinegar
1 tablespoon unsalted butter (at room temperature)
Cooking oil spray

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, place the flour, xanthan gum, tapioca starch/flour, and yeast, and whisk to combine well. Add the salt, and whisk again to combine.
  • Create a well in the center of the dry ingredients and add the water, egg white, honey, vinegar, and butter, and mix to combine.
  • Beat the mixture with the paddle attachment with the stand mixer on medium speed for about a minute. The dough will clump.
  • Increase the speed to medium-high and continue to beat until the dough begins to stick to the sides of the mixing bowl and looks "whipped" in texture. Transfer the dough to a container with a lid that seals tightly, cover, and refrigerate for at least 30 minutes and up to 3 days.
  • When you're ready to shape the dough, turn the chilled dough out onto a flat surface lightly sprinkled with tapioca starch. Dust the top of the dough lightly with more tapioca starch, and turn it over a few times and knead it gently to smooth the dough.
  • Using a large knife or bench scraper, divide the dough into 2 equal portions.
  • Working with one piece of dough at a time, dusting very lightly with more flour as necessary to prevent sticking, shape the bread into a cylinder, pinching together any breaks in the dough to seal them.
  • Position the palms of both hands right next to one another on the top of the cylinder of dough. Roll the dough first away from your body and then back toward it as you move your hands in a half moon motion away from one another, toward the edges of the dough.
  • The shape should be thicker in the center, tapered toward the ends. See the video for a visual of shaping the dough.
  • Place the shaped rolls a couple inches apart on a parchment lined baking sheet. Cover with lightly greased plastic wrap and place in a warm, draft-free environment and allow to rise until risen to about 150% of its original size.
  • Rising will take longer in a dry, cool environment, and less time in a warm, humid environment. Do not place it in a heated oven, to any temperature, to rise, or you risk killing the yeast.
  • As the bread dough is nearing the end of its rise, preheat your oven to 475°F and position the top rack a bit higher than the center of the oven. When the rise is complete, uncover the baking sheet.
  • Using a small, sharp knife or a lame held at a 45° angle to the dough, slash each roll on top 3 times at evenly spaced spots on the dough about 1/4-inch deep. Spray the tops and sides of each roll liberally with cooking oil spray.
  • Place the baking sheet on the top oven rack, toss a few ice cubes on the floor of the oven, and quickly close the oven door.
  • Bake for 18 minutes, and rotate the baking sheet one half turn. Continue to bake for about another 5 minutes or until lightly golden brown all over and an instant read thermometer inserted into the thickest part of the roll read about 190°F.
  • For a softer crust, wrap the hot rolls in a tea towel as they cool. Allow to cool for at least 10 minutes before serving.

12 slices gluten-free cinnamon-raisin bread, such as Canyon Bakehouse
1 1/2 cups milk or dairy-free milk
1/2 cup maple sugar
1 tablespoon pure vanilla extract
4 large eggs
Confectioners' sugar, for sprinkling, optional
Fresh berries, for topping

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease an 8-inch square baking dish with cooking spray or butter.
  • Place the bread, in overlapping layers, in the prepared dish in 2 even rows.
  • In a large bowl, whisk together the dairy-free milk, sugar, vanilla and eggs. Pour evenly over the bread, pressing on the slices to help soak up the liquid.
  • Place the baking dish in a larger pan and pour in enough warm water to reach halfway up the sides of the dish. Bake until golden brown and the custard is set, about 50 minutes. Sift over confectioners' sugar, if using. Cut into 9 pieces and serve with berries.

From Cooking Free by Carol Fenster. This turned out great, even in a regular bread pan. Crunchy on the outside and soft on the inside. Carol says: "Put this in a cold oven for a crisp crust and nice texture. If this doesn't work in your oven, let the bread rise until level with top of pan; then bake in preheated 425° F oven for 25-30 minutes. Use a pan specially designed for French bread." It is critical to cool bread completely before slicing and is easier to slice with electric knife. This is a quicker bread because you don't have to let it rise before baking.

1 tablespoon sugar or 1 tablespoon honey
2 tablespoons active dry yeast
1 1/4 cups warm water (110 F)
2 cups gluten-free flour (see Gluten Free Flour Blend)
1 cup potato starch or 1 cup arrowroot
1 teaspoon xanthan gum
1 teaspoon guar gum
1/4 cup powdered milk (cow, rice or soy)
1 1/2 teaspoons salt
1 tablespoon Earth Balance margarine or 1 tablespoon butter
3 large egg whites
1 teaspoon vinegar
1 egg white, beaten for wash (optional)

Steps:

  • In bowl, dissolve sugar and yeast in warm water and set aside for 5 minutes, or until yeast foams.
  • Grease French bread pan or line with parchment paper.
  • In bowl of a Bosch or Kitchen Aid mixer, combine ingredients, except the egg wash, then add the yeast mixture.
  • Beat on low speed to blend; beat on high speed for 2minutes, stirring down sides with spatula. Dough will be soft.
  • Divide dough in half on the prepared pan. Smooth each half into 12-inch-long logs with wet spatula.
  • Brush with egg wash for glossier crust, if desired. Make 3 diagonal slashes (1/8 inch deep) in each loaf so steam can escape during baking.
  • Place immediately on the middle rack of a COLD oven. Set the temperature at 425° F and bake for 30-35 minutes, until nicely browned.
  • Remove bread from pan; cool completely on wire rack before slicing with electric knife. Makes 2 loaves.

A delicious french toast recipe designed for use with gluten-free breads. It is lactose and casein free if you use ghee, or completely dairy-free if you use a dairy-free margarine (such as "Becel Vegan"). Serve with maple syrup and fresh fruit. I made this with Food For Life's Brown Rice Bread but you can use it with any store-bought or homemade GF bread. Bon appetit!

4 slices gluten free bread
2 medium eggs
2 tablespoons orange juice
1/4 cup rice milk (plain or vanilla) or 1/4 cup soymilk (plain or vanilla)
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon vanilla extract
2 tablespoons ghee or 2 tablespoons margarine
2 teaspoons honey

Steps:

  • Whisk together all ingredients except ghee/butter/margarine and bread in a pie pan or small baking dish until thoroughly blended.
  • Heat ghee, butter or margarine in non-stick pan or griddle over medium-high heat.
  • If you're using a dense bread, such as those from Food for Life, Soak for 3-5 minutes on each side.
  • If you're using a homemade bread or a softer or more crumbly bread, soak for only 1-2 minutes on each side.
  • Using a fork or tongs, remove each slice of bread from the liquid and allow excess liquid to drip off.
  • Place in hot ghee/butter/margarine and cook on each side until browned.
  • Serve immediately with maple syrup, jam and/or fresh fruit.
