Oatmeal Flax Waffles, Good for You & Gluten Free image

Toasty and delicious Oatmeal Flax Waffles will make your weekend. Even better this Oatmeal Flax Waffle recipe is gluten-free and, with a quick adaptation, could be vegan.

1 cup oat flour (see note above)
½ cup ground flax
2 teaspoons baking powder
½ teaspoon salt
¾ cup buttermilk (vegan alternative: soy or almond milk)
5 tablespoons butter, melted (vegan alternative: coconut oil)
2 large eggs (vegan alternative: 1/4 cup coconut yogurt)
2 tablespoons honey
1 teaspoon vanilla

Steps:

  • Combine dry ingredients, oat flour, baking powder, and salt, in a large bowl and whisk to remove any lumps. In a second bowl, whisk wet ingredients: buttermilk, melted butter, eggs, honey, and vanilla.
  • Add wet ingredients to the dry ingredients and fold together until just mixed, but lumpy. Rest better for about 10 minutes while the oat flour soaks up some of that moisture. Preheat waffle iron.
  • Batter will rise, stir batter quickly, just once or twice to knock it down to a more liquid state. Spray waffle iron with non-stick spray. Ladle batter onto hot waffle iron, to fill the center cavity, but not overflow, then close the lid. (Gypsy Note: Every waffle iron is different, I know my waffles are done when they stop steaming. My waffle maker has a little green light indicator that tells me when it thinks they're done. It's not always right. I look for even golden colour and crisp, firm waffle divots.)
  • When done, transfer to a cooling rack or baking sheet. Repeat the process until you've used up all your batter.

I already have a waffle recipe posted that we really enjoyed. However, since posting that recipe, I have discovered some additional allergies and can no longer use the baking mix. This is an adaptation of that recipe that I've come up with and these are a pretty good copy cat of recipe #149870. This recipe will serve 4 people (3 waffles each) when made in a standard waffle iron that makes 4 waffles at a time.

Number Of Ingredients 7

2 eggs, separated
2 cups gluten-free flour
1/2 teaspoon salt
3 teaspoons baking powder
2 tablespoons ground flax seeds
1 1/2 cups buttermilk
4 tablespoons butter, melted and cooled

Steps:

  • Separate the eggs and beat the egg whites until soft peaks form.
  • Combine flour, salt, baking soda, and ground flax seed in a medium bowl.
  • In a small bowl, combine the egg yolks, buttermilk and cooled butter.
  • Add liquids to dry ingredients and stir just until combined.
  • Fold in egg whites.
  • Bake in your waffle iron (time will vary depending on your waffle iron).
  • Serve immediately.
  • Leftovers freeze well between sheets of wax paper.

Gluten Free Waffles image

My husband, who is not Gluten Intolerant, and I have these every Saturday morning. He likes these better than ones made with "real" flour! This recipe is easily halved or multiplied, as needed. These are also excellent to use as sandwich bread, sloppy joe open-face bread, (better if you omit the sugar and use regular milk instead of buttermilk); strawberry shortcake, etc. Refrigerate any leftovers and warm about 15-20 seconds in microwave before filling with sandwich stuff.

1 cup brown rice or 1 cup rice flour
1/2 cup potato starch (NOT Potato Flour)
1/4 cup tapioca flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup oil
2 eggs (or not...see notes)
1 1/2 cups buttermilk (regular milk works, too)
1 teaspoon sugar

Steps:

  • Mix all ingredients together with a whisk, and pour into waffle iron, in batches.
  • Add a bit more milk if too thick or a bit of rice flour if too runny.
  • Can be made without eggs, if necessary; just add a little more liquid to make up for them.
