Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 13

1 pound ground turkey, preferably white and dark meat
1/2 cup unsweetened almond milk
1/4 cup almond flour
2 tablespoons chopped fresh parsley
1 large egg
1 small onion, finely chopped
1 cup rice cereal crumbs
2 cloves garlic, finely chopped
Kosher salt
One 24-ounce can strained tomatoes
8 fresh basil leaves
1 tablespoon olive oil
One 8-ounce package quinoa spaghetti, cooked until barely al dente

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. In a large bowl, combine the turkey, almond milk, almond flour, parsley, egg, onion, 1/2 cup cereal crumbs, half of the garlic and 1 teaspoon salt. Shape into sixteen 1-inch balls and place on the prepared baking sheet; bake for 15 minutes.
  • Meanwhile, in a large saucepan, bring the tomatoes and basil to a simmer, stirring occasionally; season with salt. Submerge the meatballs in the sauce; bring to a simmer and cook, covered and stirring occasionally, 15 minutes.
  • Meanwhile, heat the olive oil in a small skillet over medium heat. Add the remaining 1/2 cup cereal crumbs, remaining garlic and 1/4 teaspoon salt. Cook until toasted, about 2 minutes.
  • To eat now: Divide the spaghetti and meatballs among 4 shallow bowls and top with the garlic crumb topping.
  • To freeze and eat later: Divide the spaghetti and meatballs evenly between two 6-cup glass baking dishes and top each with the garlic crumb topping. Cover with a tight-fitting lid and freeze up to 1 month. To thaw, place in the fridge overnight. Cover with foil and bake in a 400 degree F oven until heated through, about 20 minutes.

GLUTEN FREE CRUMB TOPPING FOR PIES

Gluten Free Crumb Topping for Pies image

When I make potted pies for my family I always used frozen sheets of puff pastry for the top. Now being gluten free I either use mashed potato or breadcrumb topping. Here's my version of the crumb topping. You can easily vary the amounts to suit your taste or use a different cheese. I usually make breadcrumbs out of GF bread that is becoming stale and freeze them for future use. The pie in the photo I am posting was heated for 30 minutes at 200C....for a longer period of time use a lower temp. The topping can also be placed under the griller to brown over an already cooked pie filling.

GLUTEN FREE VEGAN PUMPKIN CRUMBLE PIE

Gluten Free Vegan Pumpkin Crumble Pie image

Crust made from gingersnap cookies, a soft/custardy pumpkin filling and a crisp crumble on top make three layers of fall heaven. Perfect for any autumn day, or the star of Thanksgiving desserts--this treat will not disappoint. This triple threat is allergy friendly and made without: wheat, gluten, dairy, egg, peanut or tree nuts. It's also vegan! (Soy free option included.)

Provided by Megan Lavin

Categories     Dessert

Time 9h15m

Number Of Ingredients 21

CRUMBLE:
1/2 cup gluten free flour (see above)
3/4 cup gluten free old fashioned rolled oats
1/2 tsp cinnamon
Pinch of salt
3/4 cup brown sugar
6 Tbsp of vegan butter chilled and cubed
CREAMY PUMPKIN FILLING :
2 and 1/2 cups (20 oz) pumpkin puree (not pumpkin pie filling)
1 cup canned coconut milk full fat (found in the Asian isle)
2 tsp vanilla extract
5 Tbsp water
1/3 cup cornstarch
1 cup brown sugar
1 Tbsp pumpkin pie spice
2 tsp cinnamon
1/2 tsp salt
3 Tablespoons ground flax meal
GINGERSNAP CRUST:
1 (8 oz.) package of MI-DEL Ginger Snaps (be sure to read post above!)
1/2 cup (1 stick) vegan butter

Steps:

  • Preheat your oven to 350 degrees F. Spray with a non-stick spray an 8 inch spring form pan and set aside. (A 9" would work too.) Make the crust by placing the gingersnaps in a food processor with the butter and pulsing until it's a fine sand. (Alternatively, you can do this by placing the cookies in a zip top bag and crushing them by using a rolling pin. Once they're crushed, stir them in a bowl with melted butter.) Place the crust inside the greased spring form pan, pressing it evenly and up the sides as much as the crust will go. Set aside. In a large bowl, whisk together the wet ingredients: pumpkin puree, coconut milk, vanilla and water. Next, add the dry ingredients: cornstarch, brown sugar, pumpkin pie spice, cinnamon, salt and ground flax meal. Once everything is incorporated, pour it into the spring form pan on top of the crust. In a small bowl, combine all of the crumble ingredients: gluten free flour, old fashioned rolled oats, cinnamon, salt, brown sugar and vegan butter. Use your hands to combine it thoroughly and set aside. Place the spring form pan on top of a rimmed baking sheet, as some of the grease and oil will melt out. Place them in the oven, middle rack. Bake for 30 minutes. Take out and sprinkle the crumb topping on top. Return to oven and bake for 30-40 minutes more. The center will still jiggle, but it shouldn't be too unstable. Leave to cool until it's at room temperature, then refrigerate until set. It's best to do this overnight, or at a minimum four hours. When ready to serve, you may want to top with CocoWhip, or homemade coconut whipped topping, or serve plain as it's delicious. Keep refrigerated 2-3 days.

GLUTEN FREE FRENCH APPLE PIE

Gluten Free French Apple Pie image

This is the result of combining my variation of recipe #214686 for Gluten free pie crust and the French apple pie filling and topping from the 1990 Betty Crocker cookbook. This is by far the best gluten free pie crust we've had. It's lighter than a wheat flour crust, but even non gluten freers will enjoy it. Prep time includes refrigerating the crust before rolling out, but the filling can be easily prepared during that hour.

Time 2h9m

Yield 1 9-inch pie, 6-8 serving(s)

Number Of Ingredients 19

1 cup rice flour
1/2 cup tapioca flour
1/4 cup potato starch
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons xanthan gum
4 ounces butter (or substitute margarine)
1 large egg, beaten (or substitute with 1/4 cup ice water)
1 teaspoon apple cider vinegar (or substitute with water)
3 tablespoons ice cold water
3/4 cup sugar
1/4 cup flour, gluten-free blend
1/2 teaspoon ground nutmeg (I prefer fresh grated)
1/2 teaspoon cinnamon
1 dash salt
6 cups pared and thinly sliced tart apples (about 6 medium apples)
1 cup flour, gluten-free blend
1/2 cup brown sugar, packed
1/2 cup firm butter (or substitute margarine)

Steps:

  • FOR CRUST: Combine rice flour, tapioca flour, potato starch, salt, cinnamon and xanthan gum in a medium size bowl.
  • Cut in the butter with pastry blender or two forks, until the mixture resembles large crumbs.
  • In a small bowl, whisk together the egg, apple cider vinegar and ice water.
  • Gently stir the egg mixture into the flour, until it forms a ball.
  • On a lightly rice-floured surface, knead the dough for 2-3 minutes. Form into a ball and wrap in plastic wrap. Refrigerate for one hour (or freeze now for later use).
  • After removing from the fridge, knead the dough slightly, if needed.
  • Roll out between two sheets of lightly floured parchment paper (I use an $8 plastic, zippered pie bag from King Arthur Flour) then transfer to 9-inch pie plate.
  • Heat oven to 425°F.
  • FOR FILLING: In large bowl, combine sugar, flour, nutmeg, cinnamon and salt. Add apples and gently stir to coat. Pour into pastry-lined pie plate.
  • FOR TOPPING: In small bowl, combine flour and brown sugar. Cut in butter til mixture is crumbly. Sprinkle over filling.
  • Bake uncovered for 40 minutes, then cover topping with aluminum foil and bake 10 minutes more.

Provided by Ana Ankeny

Categories     Dessert

Time 1h10m

Number Of Ingredients 12

1 unbaked or parbaked pie crust of choice (we suggest our Gluten-Free Pie Crust)
8 medium or 5 large apples, cored, peeled, and sliced ¼-inch-thick (8 cups total)
⅓ cup cane or coconut sugar
3 tablespoons gluten-free flour blend*
2 teaspoons ground cinnamon
1 teaspoon pure vanilla extract
2 tablespoons lemon juice
½ cup gluten-free flour blend*
3 tablespoons cane or coconut sugar
1 tablespoons brown sugar
1 teaspoon ground cinnamon
4 tablespoons butter (salted or unsalted), cold and cut into pieces

Steps:

  • If not already prepared, make the pie crust. Keep the crust unbaked or parbake it for 15-20 minutes for a flakier crust.
  • Preheat the oven to 400℉.
  • To make the filling: In a large mixing bowl, place the sliced apples. Add 1/3 cup sugar, 3 tablespoons flour, the cinnamon, vanilla, and lemon juice. Stir until the apples are evenly coated. Set filling aside at room temperature for 20 to 30 minutes.
  • To make the crumble: In a medium bowl, combine the 1/2 cup flour, cinnamon, sugar, brown sugar, and cold butter. Using a pastry knife, cut the butter into the mixture until it forms a crumble.
  • Transfer the apple slices into the 9-inch pie plate with the unbaked or parbaked crust. Spread the filling out evenly and top with the crumble mixture.
  • Bake for 40 to 50 minutes or until lightly golden brown. Note, if your oven runs hot or if you have parbaked the crust, we suggest using a pie shield or placing a strip of aluminum foil over the edge of the crust to prevent it from getting too dark.
  • Allow pie to cool partially or completely before slicing.

  • Roll out the pie dough on a lightly floured surface or between two pieces of parchment paper into a rectangular shape and transfer to the prepared pan; it is fine to do this in a few pieces. For slab pies I often press some of it in using floured fingertips into the leftover spaces. Chill crust for 15 minutes. Line the crust with aluminum foil and pie weights and bake for 12 minutes or until the crust is just beginning to set and turns light brown around the edges.

Add sugar, cornstarch and lemon juice and use a silicone spatula to combine well. Let sit for 5 to 10 minutes or until fruit juices exude, then fold together well again.

  • Put the brown rice flour, almond flour, potato starch, and cornstarch in the bowl of a stand mixer. Mix until they are thoroughly blended. Add the xanthan gum, guar gum, and salt, and then mix again.
  • Add the cubes of butter and mix until it the dough breaks up into pieces about the size of peas. While the mixer is running on low speed, pour in 6 tablespoons of the ice water. Mix until the dough begins to hold together. If it is still dry and crumbly, add the remaining 2 tablespoons of water, being careful not to make the dough too wet.
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 15 minutes. Take it out and roll out the dough between two pieces of parchment paper to avoid adding any extra flour into the dough. Roll it out as thin as you can. When the rolled dough is bigger than a pie plate, lift the top piece of parchment paper and turn the dough upside down on the top of a pie plate. Drape the pie dough into place, gently.
  • Crimp the edges with your fingers. Poke some shallow holes in the pie crust with a fork, and then chill the pie crust for at least 1 hour.

  • Use a vegetable peeler to remove the skin of the pears. Cut the 6 pears lengthwise. Use a melon baller to remove the core. Cut each half of a pear into 4 slices. Place the pear slices in a bowl; toss with the lemon juice. Add the 1 tsp ginger, 1 tsp cinnamon, ½ cup brown sugar and 2 tsp of vanilla to the pears and mix gently.
  • Place the pear mixture into the thawed pie shell. Take only 2 tablespoons of the butter and cut into small cubes. Dot the butter cubes over the pie filling.

  • Make the flax egg first (1/5 tbsp golden flax seeds (ground) + 3 tbsp cold water) let it gelatinize for 5 minutes. Meanwhile in the bowl of a food processor add the dry ingredients + vegan butter, "pulse" several times until the butter has disappeared into the flour. The mixture should look like a crumbly flour. Then add the apple cider vinegar, the flax egg, and the water, with a few more pulses the dough starts to come together. Form a ball with your hands.
  • Combine the cassava flour, oats, walnuts, maple sugar, cinnamon, nutmeg, vegan butter and a pinch of salt - in the same bowl we made the gluten free pie crust. Pulse a few times until crumbs are formed.
  • Retrieve the pie crust from the oven. Pour the baked apples on top, arrange them a bit so they fit, then sprinkle the apples with the crumble topping.

  • prepare the flax “eggs” and let sit for at least 5 minutes; In the meantime, whisk the almond flour, arrowroot powder, and salt together in a medium bowl until well combined. Add the thickened flax to the bowl and mix with a spatula, eventually switching to your hands to form a dough “ball.” Place the dough between two large sheets of parchment paper, and use a rolling pin to create a thin circle, wide enough to cover the base and sides of your pie tin. Remove one sheet of parchment paper and “flip” the crust into your pie dish; remove the top layer of parchment paper, then press the dough along the base and up the sides of the pie dish. Use a fork to create a few venting holes on the bottom and sides of the dish; Set aside.
  • Whisk the lemon juice, maple syrup, arrowroot powder, cinnamon, ginger, cardamom, nutmeg, and salt together in a large bowl until evenly combined. Thinly slice your apples using either a knife or mandoline (I recommend the latter) – I did not peel my apples, but you can if you’d like. Add the apples to the bowl with the spices and toss until the apples are coated. Transfer this mixture to the pie dish, then use your hands to spread the apples out evenly and make sure they are packed tightly.
  • Whisk the oats, almond flour, arrowroot powder, baking powder, cinnamon, and salt together in a bowl, until evenly distributed. Pour in the maple syrup and nut butter, then use a spatula to mix until a slightly sticky dough ball forms. Use your hands to crumble this ball evenly over the pie, aiming for smaller pieces vs. large clumps.
