If you have lots of leftover food from Thanksgiving, try this easy turkey panini recipe, made with turkey, thyme, cranberry sauce and melty provolone cheese

3 ounces sourdough bread (2 slices sliced about ½ inch thick)
1 tablespoon mayonnaise
3 ounces turkey breast
2 tablespoons cranberry sauce
1 slice provolone cheese
1 tablespoon fresh thyme

Steps:

  • Heat a panini press or skillet to medium high heat.
  • Spread the mayonnaise on both sides of the bread. Lay the slices down on a clean work surface. Place the sliced turkey breast on top of one slice of bread. Add the fresh thyme leaves, then the cranberry sauce and finally the provolone cheese.
  • Cover the sandwich with the other slice of bread.
  • Transfer the sandwich to a panini press or hot skillet. Press together gently to help the whole sandwich stick together. Cook it until the bread is crisp and golden and the cheese is melted, about 3-4 minutes.
  • Slice the sandwich in half and serve immediately.

3/4 lb deli turkey, thinly sliced

1/4 cup ranch salad dressing
1 small avocado, mashed

Steps:

  • Spread one side of each bread slice with butter. Place 6 bread slices butter sides down; top with turkey, bacon, tomato, cheese and dressing. Top with remaining bread slices, butter sides up.
  • Cover and cook sandwiches in 12 inch skillet over medium heat 4 to 5 minutes, turning once, until bread is crisp and cheese is melted.

2 cups cherry tomatoes, halved
1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 cup store-bought pesto
8 slices pullman white bread
1/4 cup marinara sauce
8 slices sliced mozzarella or provolone
8 thin slices smoked turkey
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
  • Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
  • Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

  • Heat a stovetop ridged grill pan, large nonstick skillet or electric contact grill.
  • Meanwhile, assemble paninis by laying bread on cutting board; coat with non-stick spray, turn over.

Canola oil, to fry
1 pound thick cut bacon, slices cut in 1/2
1/3 cup maple syrup
1 cup all-purpose flour
1 teaspoon cayenne
Salt and freshly ground black pepper
2 cups thinly sliced shallots
1 cup mayonnaise
4 chipotle peppers, chopped
1 tablespoon adobo sauce
1 teaspoon chopped fresh cilantro leaves
1/2 lemon, juiced
1 tablespoon minced garlic
1 roasted skin-on turkey breast, store-bought
6 thick slices marble rye bread
8 to 12 slices smoked Cheddar
Melted butter, to cook sandwiches

Steps:

  • Fill a pot with 2-inches of canola oil and heat it to 375 degrees F. Preheat the oven to 400 degrees F.
  • Arrange the bacon on a sheet tray with a rack. Brush the bacon with even amounts of maple syrup. Bake until crisp, about 18 to 22 minutes. Remove the bacon from the oven to a paper towel lined platter. Set aside.
  • Combine the flour, cayenne, and salt and pepper, to taste, in a medium-sized bowl. Add the sliced shallots and toss the shallots in the flour to coat evenly. Shake off excess flour. Working in 2 batches, fry the shallots until crisp, about 2 to 3 minutes. Remove them to a paper towel lined platter and sprinkle with salt. Set aside.
  • In a small bowl, mix together the mayonnaise, chipotles, adobo sauce, cilantro, lemon and garlic until well combined. Season with salt and pepper, to taste. Set aside.
  • Slice the turkey breast into 1/4-inch slices. Lay the bread out on a large cutting board. Spread chipotle mayonnaise on each slice of bread. Top each slice of bread with a slice of smoked Cheddar and a couple slices of bacon. Sprinkle some crispy shallots on 3 slices of bread. Put a few slices of turkey on top of the onions. Sprinkle some additional shallots on the turkey. Form 3 sandwiches and spread each sandwich with a little melted butter. Put the sandwiches in a large skillet over medium heat. Cook, pressing down the sandwich with a spatula, for 3 to 4 minutes on each side. Remove the sandwiches from the pan and serve.

8 slices whole-grain bread
6 ounces thinly sliced Fontina cheese
8 ounces sliced leftover turkey
1/2 cup leftover cranberry relish
1 cup arugula leaves
Extra-virgin olive oil

Steps:

  • For each sandwich, lay 2 slices bread on a work surface. Lay about 3/4 ounce cheese on one slice of the bread; top with 2 ounces turkey meat, 2 tablespoons relish, about 5-6 arugula leaves and an additional 3/4 ounce cheese. Top with the other bread slice (there should be cheese next to each bread slice). Repeat with remaining ingredients.
  • Brush the top of the sandwich with olive oil; heat a non-stick skillet over medium heat. Put the sandwich, oiled-side down, into the pan, place a small heavy pan, or aluminum foil-wrapped brick on top of the sandwich to press it down. Cook until bread is golden and crisp and cheese is beginning to melt, about 5 minutes. Remove the heavy pan or brick, brush the top of the sandwich with oil and carefully flip it. Put the heavy pan or brick back on top of the sandwich and continue cooking until bottom bread slice is browned and crisp, cheese is melted, and sandwich is heated through, about 5 minutes more. Remove from the pan and cover to keep warm while cooking the remaining sandwiches.
  • To serve, slice each sandwich on the diagonal and serve warm.

I freeze small portions of minced/ pureed chipotle peppers in adobo so that I have them on hand for chipotle recipes and don't waste a whole can when I just need 1-2 peppers. 1/4-1/2 cup mayonnaise
1 -2 tablespoon chipotle chile in adobo, pureed
8 slices cooked bacon
1/2 onion, thinly sliced

1 lb sliced deli turkey or 1 lb chopped cooked turkey
4 slices monterey jack cheese
1/4 cup olive oil (or less)

Steps:

  • Preheat a panini grill (If you co not have a panini grill this can be done in a skillet or on your outdoor grill).
  • Stir together mayonnaise and chipotle chile sauce in a small bowl.
  • Stir half of the chipotle sauce in with the turkey.
  • Spread one side of each slice of sourdough with remaining chipotle sauce. Layer bottom halves with equal amounts turkey, onion, bacon, tomato and cheese. Top with remaining bread slices, forming 4 sandwiches.
  • Gently press sandwiches together with your hand. Brush both outer sides of sandwiches with olive oil; you will probably not use an entire 1/4 cup of olive oil.
