My parents were immigrants from Czechoslovakia and my mother would pull out this rye bread recipe when guests came over for dinner. Every time I bake it, I get nostalgic for those days. -Millie Feather, Baroda, Michigan

Yield 2 loaves (10 slices each).

Number Of Ingredients 8

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°), divided
1/4 cup packed brown sugar
1 tablespoon caraway seeds
1 tablespoon canola oil
2 teaspoons salt
2-1/2 cups rye flour
2-3/4 to 3-1/4 cups all-purpose flour, divided

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add brown sugar, caraway, oil, salt and remaining water; mix well. Stir in rye flour and 1 cup all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half. Shape each half into a ball; place in 2 greased 8-in. round baking pans or ovenproof skillets. Flatten balls to a 6-in. diameter. Cover and let rise until nearly doubled, about 30 minutes. Bake at 375° for 25-30 minutes or until golden brown.

This is from Judith Fertig's book 200 Fast & Easy Artisan Breads. I have never made it, but am posting it by request. The master recipe is already dairy free, and you can use an egg substitute if you need to. It is the assortment of flours & other ingredients that is supposed to give you a finished product that resembles a rye bread. The recipe notes that the dough is unique, at first it will resemble a very wet batter. After an hour it will thicken to the consistency of brownie batter. After 2 hours it rises to about 1 inch from the top of the bowl & looks like cornbread batter or golden mashed potatoes. The raw dough doesn't taste like a yeast bread dough. I will create a gluten-free recipe book in my shared cookbooks that will include all of the gluten-free recipes from this book. If you don't have a baking stone, you can still make artisan breads, just make sure your oven has preheated for at least 30 minutes & add the 2 cups of water to a broiler pan

2 cups brown rice flour (stone ground)
2 cups tapioca flour (or potato starch)
2 cups chickpea flour
1 cup cornstarch (or corn flour)
2 tablespoons xanthan gum
2 tablespoons instant yeast (or bread machine yeast)
2 tablespoons caraway seeds
1 tablespoon salt (fine table, or kosher)
6 eggs (or equivalent substitute)
1/2 cup cocoa powder (unsweetened)
2 cups lukewarm water (mix 1 cup hot tap water & 1 cup cold tap water to get lukewarm temp of about 100 F )
6 tablespoons light molasses (fancy grade)
1/3 cup vegetable oil
2 teaspoons cider vinegar

Steps:

  • Measure flours and cornstarch into 16 cup bowl, whisk to combine well.
  • Whisk in xanthan gum, yeast caraway seeds & salt.
  • Lightly beat eggs in a separate bowl, add cocoa, water, molasses, oil & vinegar to the eggs. Whisk to combine.
  • Add wet ingredients to flour mixture, and whisk until a smooth, very loose, batter-like dough forms.
  • Cover bowl with plastic wrap (or a shower cap) & let rise at room temperature for 2 hours or until the dough has nearly risen to the top of the bowl & has a thick, golden, mashed potato-like appearance.
  • Use immediately, or refrigerate for up to 3 days before baking.
  • For 1/2 a recipe of dough grease a 9 x 5 loaf pan, or scoop about 1/3 cup of batter into each of 12 greased muffin cups, cover with a teatowel & let rest at room temp for 40 minutes.
  • For artisan baking, preheat oven to 350°. Heat baking stone on middle rack & broiler pan on lower rack for about 30 minutes while preheating oven.
  • Pour 2 cups hot water into broiler pan. Place loaf pan or muffin pan on hot stone. If making 2 loaves, place pans at least 3" apart on baking stone.
  • Bake rolls for 22 - 25 minutes, loaves for 27 - 30 minutes, till crust is medium dark brown. Instant read thermometer inserted in center should read at least 190° F, or 90°C
  • Cool in pans on wire rack for 10 minutes. Remove from pans & let cool on rack.

1 cup blanched almond flour
3/4 cup flax seed meal
1/2 teaspoon celtic sea salt
1/2 teaspoon baking soda
3/4 teaspoon cream of tartar
3 eggs
2 tablespoons olive oil
1/4 cup water
1 teaspoon agave nectar
1 -2 tablespoon caraway seed

Steps:

  • In a large bowl almond flour, flax, salt, baking soda and cream of tartar.
  • In a smaller bowl combine eggs, oil, water and agave.
  • Stir wet ingredients into dry, then mix in caraway seeds.
  • Allow batter to sit for 1-2 minutes to thicken.
  • Grease a 6 x 3.5 x 2.5 inch loaf pan and pour/scoop batter inches.
  • Bake at 350°F for 30-35 minutes.
  • Cool and serve.

2 cups bread flour
1 cup rye flour
2 tablespoons oil
1 -2 tablespoon brown sugar
1 cup water
1 1/2 teaspoons salt
2 tablespoons caraway seeds
2 1/4 teaspoons instant yeast

Steps:

  • Blend all ingredients together, knead for 7-10minutes, by hand or machine. Your dough should be smooth and a bit sticky,as that is the nature of rye bread dough.
  • Place in a lightly oiled bowl, cover with a damp cloth or lightly oiled (I use cooking spray) cling film. Let rise until doubled, about an hour, maybe longer depending on the room temperature
  • Gently deflate, and form as you like. Free form or in a bread pan. I bake it free form, on a sheet pan lined with parchment paper.
  • Preheat the oven to 375, and let the bread rise until it is almost doubled.
  • Slash with a sharp exacto , a lame or a serrated knife. Every method works, but I prefer an exacto.
  • Spritz with water and place in the hot oven.
  • Bake for 15 minutes, turn the pan for even browning and bake for 15 minutes more, or until the internal temperature is 190 or sounds hollow when tapped.
  • * Or you can throw all the ingredients in a bread machine set on the dough cycle, let rise in the machine and then continue with above instructions.

1 cup rice flour
1 cup cornflour
1 cup salt
4 teaspoons cream of tartar
2 tablespoons vegetable oil
2 cups water
food coloring

Steps:

  • Mix base ingredients in a large measuring pitcher.
  • Heat one cup of the resulting white mixture in a small saucepan. and add some food colouring (a few drops at a time) to reach the desired colour.
  • Stirring constantly with a wooden spoon, cook over low heat for about 5 minutes. Consistency will be very runny at first but once it starts to thicken mixture will firm up quite fast.
  • Remove from heat and knead to remove lumps (if any).
  • Repeat with rest of mixture. 1 cup of the mixture will yield approximately 1 small canister of Gluten-free Play Dough (like the standard sets with a few colours you buy in the store).
  • Given prep/cooking time is for one colour.

1 cup buttermilk (at room temperature)
1 package active dry yeast
1/4 cup water
1 cup sugar
3/4 teaspoon salt
1 teaspoon orange zest
1 teaspoon caraway seed
1 cup all-bran cereal
1 cup rye flour
1 1/2 cups all-purpose flour
1 tablespoon milk

Steps:

  • Mix yeast in warm water in large bowl until thoroughly dissolved.
  • Add sugar, salt, orange peel, caraway seed, and buttermilk, mix well.
  • Mix in all bran cereal and rye flour.
  • Slowly stir in in all-purpose flour, save a small amount of flour to knead with.
  • Cover and let stand for 15 minutes.
  • Knead dough on lightly floured surface for about 5 minutes until dough is smooth and elastic.
  • Put dough in a greased bowl (turn once to grease top of dough).
  • Cover and let dough rise in warm place until double (approx 1 1/2 hours).
  • Punch dough, knead slightly and form a smooth round ball.
  • Place on greased baking sheet, flatten slightly and cut a large X on the top using a sharp knife.
  • Cover and raise until double (approx 45 minutes).
  • Brush bread with milk.
  • Bake at 350F for 35 minutes or until golden brown and bread sounds hollow when tapped.
  • Remove from baking sheet and cool bread on wire rack.

To bake: Preheat the oven with a dutch oven or covered casserole pot to 220c/400f. Turn out your dough onto a baking parchment and score. Slide the dough into your pot and cover with the lid. Turn the heat down to 180c/360f and bake for 35 minutes, covered. Remove the lid and bake for an additional 5 minutes to brown.
