OVEN FRITTATA WITH POTATOES
Potatoes and leeks are pan fried with a bit of bacon and then baked with a creamy egg custard for a hearty, gluten-free meal perfect for brunch or breakfast.

Steps:
- Preheat oven to 425 degrees F.
- In an oven-safe skillet or cast iron pan, pan-fry the bacon over medium heat until crisp-tender, turning bacon after about 5 minutes on the first side.
- Once the bacon is crisp, remove bacon and place on a plate lined with a paper towel. Drain off all but 1 tablespoon bacon grease.
- Add potatoes to bacon grease and lightly season with salt and pepper (if using canola oil instead of bacon grease, the potatoes may need a bit more salt). Pan fry for 5 minutes, stirring frequently. Add in leeks/onions and continue to pan fry for another 5 minutes or until potatoes are fork-tender.
- Remove the skillet from the heat. Crumble cooked bacon evenly over potatoes.
- Whisk together eggs, milk, salt, pepper, a dash of nutmeg, and Parmesan Cheese. Pour egg mixture over potatoes and bacon.
- Bake for 10-15 minutes, or until eggs are set.
- Serve immdeidately or after cooling slightly.

- Place bacon in 10-inch nonstick skillet over medium-high heat.
- Cook, stirring occasionally, until browned, 5 minutes.
- Add potatoes and onion; cover.
- Cook, stirring occasionally, until tender, 6-7 minutes.
- Beat eggs, 1/2 cup water, 1/2 t salt and 1/4 t pepper; stir in broccoli and 1/2 cup cheese.
- Add to skillet, cover.
- Over medium heat, cook until set, 8-10 minutes.
- Remove from heat.
- Sprinkle with remaining cheese; cover.
- Let stand until cheese is melted, 2-3 minutes.
CHEESY BACON AND HASH BROWN FRITTATA

- Preheat the broiler to high and position a rack in the top third of the oven.
- Put the bacon in a 12-inch nonstick ovenproof skillet and place over medium heat. Cook, stirring often with a rubber spatula, until the bacon is crispy and golden brown, about 10 minutes. Remove the bacon to a plate with a slotted spoon and remove all but 2 tablespoons of the bacon fat from the skillet. Add the red onion to the skillet along with the hash browns. Stir in 1/2 teaspoon salt and spread the mixture evenly over the bottom of the skillet. Cook, undisturbed, until the potatoes are beginning to brown and get crispy, about 3 minutes. Stir the potato mixture with a rubber spatula. Re-spread the mixture evenly on the bottom of the skillet and cook, undisturbed, to brown a bit more, another 2 minutes. Add the kale and another 1/2 teaspoon salt and cook until the kale is wilted, another 2 minutes. Stir in the reserved bacon.
- Meanwhile, whisk together the eggs, heavy cream and remaining 3/4 teaspoon salt in a medium bowl. Add the grated cheeses. Add the egg mixture to the skillet and stir to combine. Cook, stirring occasionally with a rubber spatula, until the mixture looks like loose scrambled eggs, about 2 minutes. Cook, undisturbed, to set the bottom, about 1 minute longer. Place the skillet under the broiler until the top is golden brown and the eggs are set, 3 to 4 minutes. Allow to cool for 5 minutes before slicing into wedges and serving.

- Position an oven rack in upper shelf of oven and preheat broiler.
- Whisk eggs, 3 tablespoons of cheese, milk, lemon zest, 1 teaspoon salt, and pepper to taste together in a bowl. Set aside.
- Heat olive oil in an 8-inch nonstick skillet over medium heat. Add asparagus and bacon and saute until asparagus is tender but still slightly crisp, about 4 minutes. Reduce heat to low, pour in egg mixture and stir gently to distribute. Cover and cook until eggs begin to set and bottom lightly browns, about 9 minutes.
- Uncover pan, sprinkle frittata with remaining tablespoon of cheese, and broil until eggs are set and lightly browned on top, about 1 minute. Remove from broiler and let sit for 5 minutes. Slip frittata out of pan onto a cutting board, slice into wedges. Serve warm or at room temperature with herb salad.
