Steps:
- Mix dry ingredients together. Quickly add olive oil and water. Stir until all ingredients are incorporated. Beat vigorously for three minutes (preferably with a stand mixer ).
- Scrape batter into a greased loaf or baguette pan. Try to Mound the top a bit.
- Let rise in a warm place for 40-50 minutes or until a little more than double in size.
- Preheat oven to 400° and bake bread for 40-50 minutes. DO NOT use a convection oven which will cause the crust to brown too quickly.
- When the bread is done, it should sound hollow when tapped on the sides. Or if you want to get a little more technical, the internal temperature should reach between 205° and 215°.
- When done, immediately remove from pan and let cool on rack at least 10 minutes before slicing.
- After that, your only challenge is to refrain from eating the whole thing (with butter of course), because seriously, it's that good.
EVERYDAY GLUTEN FREE BREAD
Real deal gluten free bread recipe. So easy to make. Soft, chewy texture with the perfect crust. Dairy + egg free.

Steps:
- In a small bowl, whisk together warm water, yeast, and honey. Set aside in a warm place for 10 minutes, until the surface is foamy and slightly bubbly.
- In another large bowl, whisk together sorghum, buckwheat, tapioca, brown rice flour, + salt. Set aside.
- Once yeast water is foamy, whisk in psyllium husk and wait about 1 minute. Then pour wet mixture into dry flour mixture along with olive oil and stir with a wooden spoon until it comes together then knead by hand until dough is smooth and elastic and pulls off the sides of the bowl nicely. Dust with a bit of extra sorghum flour if it feels too sticky. Form into a ball, cover with clean kitchen towel, and set aside in a warm place for one hour.
- After an hour, the dough will have almost doubled in size. Punch it down and knead again on a lightly floured surface, shaping it into a smooth ball. Transfer dough ball to a tea towel-lined soup bowl dusted with flour (about 6 inches in diameter), fold towel over and place in a warm place for another hour. Dough will noticeably increase in size.
- Thirty minutes into the second dough rise, preheat oven to 450'F. Place large Dutch oven with lid into oven to preheat. (*see note if you do not have a Dutch oven)
- Once dough has risen for an hour, turn it out onto a piece of parchment paper. Dust the top with sorghum flour, wiping off excess with your hand. Use a sharp knife or razor to score the top of your loaf.
- Carefully remove preheated Dutch oven from hot oven. Lift loaf with the edges of the parchment paper and place into Dutch oven. Cover and bake for 20 minutes. Remove lid and then bake for another 30-35 minutes, until bottom is brown and loaf sounds hard and hollow when tapped with a wooden spoon.
- Cool on a rack for 4 hours or overnight before slicing. Cooling sets the crumb. Slicing bread before it is cool can affect the texture. It's worth the wait, I promise.
BEST BANANA BREAD - NO EGG, NO MILK, GLUTEN FREE
This is very easy to make, contains no egg or milk. I use gluten free all purpose flour and it comes out totally fabulous! The recipe is adjusted from 'My favourite Banana Bread Recipe - it has No Eggs' I found on the web! The recipe is only enough for a petite loaf pan (about 5x3 inches). Double the recipe for a standard size pan.

- Lightly grease an petite loaf pan.

GLUTEN, DAIRY & EGG FREE BANANA MUFFINS (BREAD)
I've had trouble finding recipes for my daughter since new allergies are presenting. This is something I put together. We use Lactade milk, so to make it dairy free use a rice milk or equivelant.

Steps:
- In a medium bowl sift together all dry ingredients except nuts and set aside.
- In a large bowl mash the banana. Add the sugar, Crisco, flaxmeal egg replacer, milk (or sub) and vanilla. Mix well.
- Mix dry ingredients into large bowl with wet ingredients and mix well. Fold in nuts.
- Spoon into greased mini muffin tins and bake 10-12 minutes. Cool on wire rack.
- Mini muffin tins are the only way I've tried so far but I'm sure this could be bread or regular sized muffins as well.
- Flaxmeal Egg Replacer:.
- In a small container mix 1/2 cup cold water with 2 teaspoons ground flaxmeal and shake well.
- GF flour mix:.
- 2 cups rice flour.
- 2/3 cup potato starch.
- 1/3 cup tapioca starch.
- 3 teaspoons xanthan gum.

Steps:
- Preheat oven to 350°F
- Grease a 9x5" loaf pan.
- Mix flours, baking powder and salt in large bowl.
- Add honey, applesauce and water. Mix well.
- It should be like a cake batter - add a little water if it's dry.
- Pour batter into the prepared pan, and bake for 1 hour or until lightly browned. Allow to cool in pan for a minute or two, then remove to cool completely on a wire rack.
APRICOT AND ALMOND BREAD (GLUTEN, DAIRY AND EGG FREE)
This is one of my kids real favourites. I'll often throw in more apricots and almonds than the recipe calls for. This is a large loaf and can be reduced in size by multiplying all ingredients by 2/3 and reducing the cooking time by 10 minutes.

- BREADMAKER METHOD.
- Sift and combine the all the dry ingredients except egg replacer powder.
- In a separate bowl, whisk the egg replacer powder (or eggs) with about 1/2 a cup of the water, until frothy. Add remaining wet ingredients, withholding about 1/4 - 1/2 cup water, and combine.
- Add the wet ingredients to the dry and mix together. Add extra water slowly, around 1 tablespoon at a time, until batter is the correct consistency - thicker than a cake batter, but not as thick as cookie dough. Spoon into the pan.
- Set the breadmaker to the setting recommended by the instructions specific to your model. If there are no such instructions try either the 'Basic' setting or the 'Rapid' setting. If your breadmaker is programmable, set it to skip the second kneading, as this is not necessary for GF breads. Another option, for breadmakers with a 'Bake Only' setting, is use the 'Dough' setting and then the 'Bake Only'.
- Add fruit and nuts when the "add-ins" beep sounds or at the very end of mixing.
- If your your breadmaker does a reasonable job of mixing, it is possible to add the wet ingredients to the pan and than add the combined dry ingredients (or vice-versa, depending on the model). If using this method, about 5 minutes into mixing you will need to check that all the flour has been mixed in thoroughly and, if not, scrape the sides and base and stir with a rubber spatula. At this time check the consistency and add extra water, 1 tablespoon at a time, if necessary. If the mixture is too wet, try adding a little extra flour.
- Again, add fruit and nuts when the "add-ins" beep sounds or at the very end of mixing.
- Remove the bread from the machine as soon as it is cooked and don't leave in the machine during the 'Keep Warm' cycle. Turn out from pan after a few minutes and cool on a wire rack.
- *If your breadmaker has a removable blade, you can also try this : Mix the batter until smooth, mix in fruit and nuts, remove the blade from the pan, place the dough in the pan and cook normally. This way you avoid the big hole in the bottom of the bread and also avoid the second kneading.
- HAND METHOD 1.

- Dissolve 1 tablespoon of the sugar in 1/2 a cup of the luke warm water. Add the yeast and set aside to proof for 10 minutes.( The mixture should become frothy.)
- Sift and combine the dry ingredients except egg replacer powder.
- In a separate bowl, whisk the egg replacer (or eggs) with about 1/2 a cup of the water until frothy. Add remaining wet ingredients (withholding a little water as explained above). Add proofed yeast.
- Add wet ingredients to dry and mix slowly. When combined beat on high until batter is smooth, adding more water slowly if required.
- Add fruit and nuts at the very end of mixing.
- Spoon into a loaf pan. Cover with plastic wrap and place in a warm, draught free position to rise for about 1 hour. (If you can't find a warm position, a very low oven can be used.)
- Remove plastic wrap, and bake at 190°C (375°F) 50-60 minutes. (A skewer placed into the centre of the bread should come out clean.) Remove from pan and cool on a wire rack.

BEST GLUTEN /DAIRY/ EGG FREE BANANA BREAD
This is a modification of my favorite regular banana bread from my "Home Baking" cookbook. I made it gluten free and Dairy free so my nephew could eat it and it turned out GREAT! My kids, who don't usually like my G.F. food actually told me this was the best banana bread they had ever eaten, even before they knew it was G.F. I used my own mixture of G.F. flour which I will put in a note at the end of the recipe or you can make up your own. Happy eating!

- Pre-heat oven to 375.
- spray bread pan with a cooking spray or coat with oil.
- combine dry ingredients in a bowl.
- In a blender, blend the wet ingredients.
- In a large bowl, using an electrical mixer, alternate the wet and dry ingredients mixing thoroughly (The dough will be very thick).
- Scoop into bread pan, mini-loaf pan or muffin pan, and bake at 375 for 35-40 minute for a regular loaf, 25-30 for mini-loafs or 15-20 minute for muffins.
- Note: You can add 1 cup sweetened coconut, chocolate chips or nuts for added variety.
- Flour mixture: 1 cup Sweet Sorghum, 1 cup Brown Rice, 1/2 cup Coconut flour, 1/2 cup tapioca starch, 3 Tbs. Buckwheat flour.
