Steps:
- Drain the soaked beans and add to a pot. Cover with 2 inches cold water and add the garlic, onions, cumin, and sprinkle with salt and pepper. Leave to a simmer until the beans are tender and the liquid has turned into a thick sauce, 1 1/2 to 2 hours.
- Melt the butter in a skillet and pour in the beans. Mash the beans (leave some texture) and cook over a medium heat, 3 or 4 minutes.

Steps:
- Combine water, pinto beans, and garlic into a large pot and cover; Cook over low heat for 5 1/2 hours; stir salt into beans and continue cooking until beans are very soft, about 30 minutes more.
- Heat canola oil in a skillet over high heat. Spoon the beans into the skillet without draining excess water; mash beans using a potato masher until they begin to lose their shape, about 3 minutes.

SUE AND GLORIA'S BAKED BEANS

- Preheat oven to 350 degrees F.
- In large bowl, mix together beans, pineapple, molasses, BBQ sauce, mustard, 1/4 of the bacon, and 1/4 of the onions. Add some salt and pepper, to taste. Pour beans in 9- by 13-inch casserole dish and sprinkle remaining crushed onions and bacon on top. Cook in oven for 1 hour or until beans brown and bubble. Serve warm.
HOMEMADE REFRIED BEANS RECIPE

- Chop the onion. Finely chop the garlic.
- In a medium-sized pan, heat the oil to medium and add the chopped onion. Cook until the onion becomes transparent.
- Add the chopped garlic and cook for 1 minute. Do not allow the garlic to brown which will give it a bitter taste.
- Add the cooked beans with a little bit of the cooking water plus the salt and pepper.
- Cook for 2 minutes before mashing.
- Mash the beans to the consistency you prefer.
- Cook for 5 minutes stirring continually.
- Turn off the heat and allow the beans to rest for 3 minutes before serving.

REFRIED BEANS

- In a medium saucepan you will want to turn on medium heat. Then add your oil and let it get warm. Toss in your onions and salt.
- Cook your onions until they are softened and become translucent, this takes around 5 minutes.
- Add in your garlic, cumin, and chili powder. Stir constantly for about 30 seconds, you want it to begin to smell fragrant.
- Now pour your drained beans in along with vegetable stock. Stir and cook covered for 5 minutes on medium-low heat.
- Reduce your heat to low and remove your lid. Grab a potato masher or blender and mix up the beans. I generally mix only half the bans up as I like a thicker texture. But mix to your desired texture.
- You will want to cook the beans for 2-3 more minutes stirring often.
- Once done remove beans from the heat, and stir in the lime juice. Add salt to taste if ou would prefer.
- If your refried beans seem dry you can add a splash of broth or even water. Cover and stir occassionally until you are ready to serve.

- Heat medium skillet over medium heat. When hot, add neutral oil and swirl to coat bottom of skillet entirely.
- When oil is hot and shimmering, add chopped onion, minced garlic, and kosher salt. Stir well and cook, stirring constantly, until vegetables are soft and begin to brown, approximately 3 to 4 minutes.
- Add 1 ½ cups black beans to skillet. Use back of wooden spoon or potato masher to mash beans completely, until no whole or partial beans remain. Add remaining 1 ½ cups black beans and mash to preferred consistency.
- Cook mashed beans, stirring constantly, until starches begin to coat bottom of skillet and turn golden brown, approximately 3 minutes.
- Slowly pour in bean liquid or water and stir to incorporate. Bring mixture to simmer over medium heat and cook, stirring and scraping bottom of skillet, until liquid is fully incorporated and beans are heated-through, approximately 2 minutes. Note: beans may look soupy but will thicken as they cool. Be sure to use the entire ¾ cup of liquid to prevent beans from drying out.
- Serve as desired with chips, tacos, or other entrée.

- In a saucepan over medium heat add water or broth.
- Add onion powder, garlic powder, cumin, coriander, salt and pepper and stir to combine.
- Add beans and stir well.
- Bring mixture to a boil.
- After mixture boils reduce heat to low and continue cooking for 5-7 minutes.
- During cooking, use a potato masher or fork to "mash" the beans.
- The more beans you "mash" the less chunky your mixture will be.
- Continue cooking and mashing until you have reached your desired thickness and consistency.
- Add chopped fresh cilantro and lime juice and stir to combine.
- Let the mixture rest for 5 minutes covered (if you leave it uncovered the beans will continue to thicken).
- Serve warm with tacos!

My friend Gloria is from mexico and makes refried beans just like you get in a good Mexican restaurant. I begged her for the recipe, and I'll share it with you. Cook time includes 2 hr. soaking time.

Steps:
- Combine beans, water, and onion in a large dutch oven.
- Bring to a boil, cover, and remove from heat for 2 hours (or soak beans in cold water overnight) Return to heat, bring to a boil, and simmer slowly until beans are very tender, about 3 hours.
- Coarsely mash beans with a potato masher, and add bacon drippings; mix well.
- Continue cooking, stirring frequently, until beans are thickened and fat is absorbed.
- Salt to taste.

- 1. Brown the bacon over medium high heat until halfway cooked.
- 2. Add the butter, onions & garlic. Cook until bacon is slightly crispy & onions are limp. Put this mixture into food processor. Use 1/4-1/3 cup of water to clean tasty bits from bottom of pan using a spatual for scraping. Pour this into food processor.
- 3. To the food processor add half of the beans & the seasonings. Puree very well.
- 4. Put beans into a pot.
- 5. Place remaining beans into processor & puree slightly if you want a lumpier bean mixture or puree well if you want totally smooth refried beans.
- 6. Put remaining beans into pot & stir well.
- 7. Adjust seasonings as needed & add salt if needed.
- 8. Heat on low until desired temperature is reached.
- 9. Use refried beans to eat with rice, to make burritos, or for a simple, but healthful side dish.
HOW TO MAKE CANNED REFRIED BEANS TASTE BETTER
Steps:
- Melt butter in a skillet.
- Add onion and saute until translucent. Add garlic and cook until fragrant over low heat.
- Add refried beans, break up and combine with butter, onion, and garlic.
- Add half and half, stir.
- Add sour cream
- Season with salt, pepper and cumin to taste (I used 1 teaspoon of each).
- Add cheese.
GLORIA'S BLACK BEAN SOUP

- Place the beans in a nonreactive pan. Cover with the 3 quarts of water, add the bay leaves, and bring to a boil. Reduce the heat and simmer the beans for 2 1/2 to 3 hours, stirring frequently and adding more water if necessary to keep them well covered.
- Meanwhile, heat the olive oil in a sauté pan or skillet. Sauté the bell peppers, shallots, and onions over medium heat until the onions are translucent, about 15 minutes.
- Add the garlic, cumin, dried and fresh oregano, and sauté for an additional 2 minutes. Remove from the heat and let cool slightly. Transfer to a blender and purée until smooth.
- When the beans are almost tender, add the puréed mixture, sugar, and salt to the beans and cook until just tender, 20 to 30 minutes. Adjust the seasonings, garnish with the red onion and sour cream, and serve.
