SPICED GLAZED DUCK



Spiced Glazed Duck image

Smoky, sweet, and just a bit spicy, this roast duck is a great celebratory dish for the holidays. What I love most about it is the crisp mahogany skin, which takes really well to the star anise and coriander seed I use in the glaze.

5 pounds whole duck
Kosher salt
Freshly ground black pepper
4 pods star anise, divided
2 teaspoons extra-virgin olive oil, divided
1 medium yellow or white onion
2 cloves garlic
2 red bell peppers
1 tablespoon coriander seed
1/4 cup sherry vinegar
1 tablespoon honey
2 sprigs rosemary
2 sprigs thyme
1 pasilla chile
3 1/2 cups orange juice, divided

Steps:

  • Prep and roast duck: Preheat oven to 375 degrees F. Turn the duck breast side up and use a sharp knife to clip the wing tips; set them aside, along with the neck, for later. Season the inside with salt and pepper and add one star anise. Turn the duck over. Place kitchen twine under the tail of the bird, then tie the drumsticks together. Swing the twine around the edge of the drumsticks and flip over. Take the skin and lay it flat over the backbone, and tie it snugly like you would tie your shoes. Trim the loose ends and lay the duck on a roasting rack, breast-side up. (Optional: Store in refrigerator overnight to dry, which will ensure crisper skin when roasting.) Drizzle 1 teaspoon of oil over the bird and rub it into the skin evenly. Generously season with salt and pepper, then roast in the oven for 40 minutes. After 40 minutes, pour out the rendered duck fat (reserving it for later use) and return duck to the oven for another 20 minutes.
  • Glaze: Pat neck and wing-tips dry; cut into 2-inch pieces. Add 1 teaspoon oil to a medium sauté pan and heat until smoking. Season duck pieces with salt and pepper and place in the hot pan. After a few minutes, when the sound of the sizzle gets louder, turn heat down to medium and flip duck pieces. Continue to cook over medium heat while preparing the vegetables.
  • Dice onion and garlic; remove stems, seeds, and inner membranes from peppers and dice. Add to the pan, season with salt and pepper, and cook 5 minutes. Add three pods of star anise, coriander, sherry vinegar, honey, rosemary, and thyme. Slice pasilla pepper and add to the pan. Continue cooking until vinegar has almost evaporated. Add orange juice, bring to a simmer, and reduce until liquid is almost dry, 5-10 minutes. Add 2 more cups of orange juice and continue to reduce, about 10 more minutes. When the glaze has reduced to 1-1½ cups, pass through a strainer and use the back of a spoon to push out all of the liquid from the solids; remove and discard the duck pieces. Set the glaze aside.Blend the remaining solids as a condiment to serve with with the duck.
  • Roast and baste duck: After an hour of cooking, remove the duck from the oven, drain the fat (reserving for later use if you wish), and place in a roasting pan. Cut away the kitchen twine and discard. Spoon half of the glaze evenly over the bird and return to oven, 5-10 minutes. Baste with remaining glaze and roast until the internal temperature reaches 145 degrees F, 5 more minutes. Baste with hot pan juices.
  • Carve the duck: Using a sharp chef's knife, begin by cutting off the legs, then remove both breasts whole. Slice the breast meat against the grain on a cutting board, then arrange the duck on a serving platter. Finish with a drizzle of the glaze and serve with remaining glaze and blended glaze solids.

1 cup dry white wine
1 cup apricot jam
1 bay leaf
2 cinnamon sticks, broken in half
1 1/3 cups kumquats, stemmed, quartered, seeded
2 teaspoons Grand Marnier
3 cups arugula
2 6-ounce smoked duck breasts, each cut into 15 thin slices

Steps:

  • Combine first 4 ingredients in saucepan over medium-high heat. Bring to boil; add kumquats. Simmer until kumquats are tender and liquid is syrupy, about 15 minutes. Remove from heat; stir in Grand Marnier. Season with salt and pepper. (Can be made 1 week ahead. Cool, cover, and chill. Rewarm over low heat before continuing.) Strain glaze into small bowl. Discard cinnamon and bay leaf; reserve candied kumquats and glaze separately.
  • Divide arugula among plates. Top each with 5 duck slices; brush with glaze. Place 1 kumquat quarter on each duck slice.

  • In a shallow dish, combine the wine with 1 teaspoon of the olive oil and 1/2 teaspoon each of the grainy mustard and rosemary. Add the duck breasts and turn to coat. Cover and refrigerate for 30 minutes.
  • Meanwhile, bring a medium saucepan of water to a boil. Add the kumquat slices and simmer over moderately high heat until tender, about 5 minutes. Drain the kumquat slices. In the same saucepan, combine the sugar and water and bring to a boil stirring to dissolve the sugar. Add the kumquat slices and simmer over moderate heat for 8 minutes. Transfer the kumquats along with the sugar syrup to a heatproof bowl.
  • In a large skillet, heat the remaining 1 tablespoon of olive oil. Remove the duck breasts from the marinade; reserve the marinade. Season the duck breasts with salt and pepper and cook over moderately high heat until browned on the bottom, about 3 minutes. Turn the duck breasts, reduce the heat to moderate and cook until browned on the bottom and medium rare, 2 to 3 minutes longer. Transfer the duck breasts to warmed plates.
  • Add the shallots, jalapeño and remaining 1/2 teaspoon of rosemary to the skillet and cook over moderately low heat until softened, about 4 minutes. Add the reserved duck marinade and simmer over moderately high heat until syrupy, about 3 minutes. Add the kumquats and their syrup and bring to a simmer. Blend in the Dijon mustard and remaining 1 teaspoon of grainy mustard and remove from the heat. Season with salt and pepper. Pour the kumquat sauce over the duck breasts and serve.

  • If the ducks have the head and neck attached, chop them off as close to the body as possible. Chop off the wing tips. (The wing tips and neck can be used to make duck stock, although you won’t need it for this recipe.)
  • Weigh each duck separately, then times the weight in kg by .005 – this is the amount of salt, in grams, you will need (if using pounds, use ½tsp per pound of duck). Weigh out the correct amount of salt, then sprinkle it over the duck, using more on the meaty parts (breast, legs and thighs) and less on the wings and back. Sprinkle some of the salt in the cavity of the bird. Put the ducks in a container, cover with cling film and refrigerate for at least eight hours.
  • Grate 10g (⅓oz) of the peeled ginger, preferably using a Japanese ceramic oroshigane (grater with fine teeth), or use a fine rasp-type grater. Put the grated ginger in a small saucepan and add the honey or maple syrup and the rose wine. Sprinkle in the five-spice powder (if you add it all at once, it tends to clump up). Bring to a simmer, then cool to tepid.
  • Rinse the kumquats and drain them in a colander. Divide the remaining peeled ginger into four even portions and lightly crush each piece with the side of a cleaver. Put one piece of ginger into the cavity of each duck, then add a cinnamon stick and one star anise. Stuff four kumquats into each duck cavity, then add one more piece of ginger and another cinnamon stick and star anise. Add more kumquats, packing them in so they are almost spilling out. You might not need all of them.
