1 tablespoon soy sauce
1 (6 ounce) can frozen orange juice concentrate, thawed
¼ cup orange marmalade
3 tablespoons honey
1 tablespoon balsamic vinegar
1 teaspoon minced garlic
1 (1 pound) pork tenderloin
1 teaspoon cornstarch
2 teaspoons water

Steps:

  • Mix the soy sauce, orange juice concentrate, orange marmalade, honey, balsamic vinegar, and garlic together in a small saucepan over medium heat; bring to a simmer and whisk until smooth. Remove from heat and let cool to room temperature.
  • Place the pork tenderloin into a resealable plastic bag and pour in the marinade. Squeeze the air out of the bag, seal, and turn the bag several times to coat the pork tenderloin with marinade. Refrigerate 1 to 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the pork loin and marinade into a baking dish; cover the dish with aluminum foil and roast until an instant-read thermometer inserted into the thickest part of the meat reads at least 155 degrees F (70 degrees C), about 20 minutes. Remove the cover and continue roasting until the pork has browned, 5 to 10 more minutes.
  • Remove the cover and allow the meat and juices to stand for 10 minutes.
  • To serve, slice the meat and drizzle with pan juices.
  • If you prefer a thicker sauce, whisk cornstarch in water until smooth, whisk into the pan drippings, and place over medium heat. Allow to simmer until thickened, 2 to 3 minutes.

1 tablespoon onion powder
2 teaspoons chili powder
2 teaspoons paprika

Steps:

  • Mix garlic, onion, and chili powders with paprika and salt. Rub mixture all over pork tenderloin.
  • Heat 1 tablespoon olive oil over medium-high heat. Add pork and sear until golden brown on all sides, about 2 minutes per side. Wrap tenderloin in aluminum foil.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill the pork in its foil for 20 minutes.
  • Meanwhile, mix balsamic vinegar, honey, mustard together with the remaining olive oil. Unwrap pork on the grill and liberally brush the glaze on all sides. Continue grilling, brushing on more glaze, until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), about 10 minutes more.

1 tablespoon salt
2 teaspoons freshly grated orange zest
2 teaspoons minced fresh rosemary leaves
2 1/2 pounds pork tenderloins (about 2 large), trimmed
1 large shallot, minced
1/2 cup red wine
1/2 cup low-sodium chicken broth or stock
3 tablespoons cold unsalted butter, cut into small pieces
1 tablespoon balsamic vinegar
1 teaspoon minced fresh rosemary leaves
1 teaspoon freshly grated orange zest
Salt and freshly ground black pepper
2 to 3 tablespoons minced shallot or onion
1/2 cup wine
1/2 cup low-sodium broth or stock
3 tablespoons cold unsalted butter or heavy cream
Vinegar or lemon juice, to taste
Fresh herbs or other aromatics
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix 3 tablespoons olive oil, freshly ground black pepper, salt, orange zest, and minced rosemary in a small bowl. Rub the oil mixture all over the trimmed pork tenderloins and place them in a large baking dish. Cover and let the pork marinate 20 minutes.
  • Heat the remaining 3 tablespoons oil in a large skillet over medium-high heat. Add the pork and sear, cooking until browned on all sides. Remove the pork tenderloins from the skillet and place into an oven-safe dish; cover.   • Add the broth and continue cooking until the sauce has reduced by half. Remove from the heat. Stir in the butter, one piece at a time, until fully incorporated.
  • Stir in the balsamic vinegar, rosemary, orange zest, salt, and pepper, to taste. Let the pork rest for 10 minutes before slicing. Drizzle the pork with the balsamic pan sauce.
  • After searing the pork tenderloins, pour off the majority of the cooking fat leaving any browned bits. Heat the pan over medium-high heat and add the shallots and wine. Continue cooking until most of the wine has cooked off, scraping the bits off the bottom of the pan.
  • Add the broth or stock and continue cooking until the sauce has reduced by half. Remove the pan from the heat. Stir in the butter, 1 tablespoon at a time, until fully incorporated.
  • Add the vinegar, fresh herbs, salt, and pepper, to taste. Spoon the sauce over the pork or meat and serve.

BRINE FOR TENDERLOIN
1/2 c kosher salt
1/2 c sugar
1 qt cool water
ROSEMARY-ORANGE GLAZE
1/4 c frozen orange juice concentrate, thawed
1 tsp brown sugar
4 tsp fresh rosemary, minced
TENDERLOIN
2 - 1 lb (about 2 pounds total), brined
1 recipe of orange-rosemary glaze
pepper
instant read thermometer
gas grill
ORANGE BALSAMIC SAUCE
1 tsp olive oil
2 clove garlic, minced
1/2 tsp fresh rosemary, minced
1/3 c orange marmalade
4 tsp balsamic vinegar

Steps:

  • 1. BRINE THE TENDERLOINS: For 2 tenderloins, in a medium bowl mix kosher salt, sugar with cool water until dissolved. Trim the tenderloins of excess fat and silver skin. Submerge them in the brine and let stand about 45 minutes. Remove the pork from the brine, rinse thoroughly and pat dry.
  • 2. ROSEMARY-ORANGE GLAZE: In a small saucepan, bring the orange juice concentrate, brown sugar and rosemary to a simmer. Simmer until the mixture reduces to about 2 tablespoons. Set aside and cool slightly.
  • 3. TENDERLOINS: Heat a gas grill turning all burners on high until grill is fully heated, 10-15 minutes. Rub the brined tenderloins all over with the glaze and then season with pepper.
  • 4. Put the tenderloins on the hot grill grate. Close the lid and grill for 7 minutes. Turn the tenderloins over, close the lid and grill another 6 minutes. Turn off the heat (keeping lid closed) and continue to grill for another 5 minutes. At this point an instant read thermometer inserted into the middle of the thickest end of the tenderloin should read 145-150 degrees (If not, close the lid and let the tenderloin continue to roast in the residual grill heat). Remove tenderloins from the grill and let rest for 5 minutes before carving. When carving cut across the grain into 1/2 inch slices (Save any juices that run from the tenderloins) and serve immediately with the Orange Balsamic Sauce.
  • 5. ORANGE BALSAMIC SAUCE: Heat the oil in a small saucepan over medium heat. Add the garlic and rosemary and cook until fragrant and sizzling, about 30 seconds. Stir in the marmalade and vinegar. Heat until warm. After slicing the pork, add any juices from the carving board to the sauce before serving. Pass separately when serving the pork tenderloin.

Place skillet with pork in oven. Roast pork until thermometer inserted into center registers 155°F, about 10 minutes.
  • Meanwhile, melt remaining 1 tablespoon butter in heavy medium skillet over medium-high heat. Add onion and rosemary; sauté until onion softens, about 3 minutes. Add broth, cranberry sauce and vinegar and whisk until cranberry sauce melts, about 2 minutes.
  • Transfer pork to work surface. Scrape any juices from large skillet into cranberry mixture. Boil until sauce has reduced enough to coat spoon thickly, about 6 minutes. Season with salt and pepper. Slice pork and serve with sauce.

This is one of our favourite ways to eat pork tenderloin as it is so easy to make, elegant enough for company and delicious. I omit the orange zest as the kids don't care for it. You could also substitute apricot jam for peach and omit the diced dried apricots. I cook mine on the gas barbeque by heating it up to desired temperature, turning one side off and placing the tenderloins on the side that was turned off. I tend to make extra glaze as I pour about 1/2 of it on the tenderloins before cooking. This recipe came from Rose Reisman's Secret for Permanent Weight Loss Cookbook.

1/3 cup orange marmalade
1/4 cup maple syrup
2 tablespoons red wine vinegar

2 pork tenderloin, approximately 1 lb. each
salt and pepper
1 teaspoon extra virgin olive oil

Steps:

  • In a small saucepan, all the orange juice, marmalade, maple syrup, red wine vinegar, and garlic. Whisk together over hight heat. Boil for 5-8 minutes, whisking occasionally until sauce is slightly thickened. Divide glaze in half. Keep half of the glaze warm in the saucepan.
  • Season the tenderloins with salt and pepper. Over high heat, in an ovenproof skillet, heat the extra-virgin olive oil and sear all sides of the tenderloins. Transfer skillet into a preheated 375°F oven After 10 minutes, brush the tenderloins with half of the glaze. Continue to cook until the internal temperature of the pork reaches 160°F Remove the pork from the skillet and tent with foil to rest for at least 5 minutes before slicing. Slice into 1/2 inch medallions and arrange on serve platter, Drizzle with remaining glaze.

Steps:

  • In a saucepan, bring the first 9 ingredients to a boil over medium heat.
  • Decrease heat, and simmer, stirring occasionally, 20 minutes.
  • Remove half of mixture and set aside.
  • *Season pork w/ salt and pepper; brown pork in hot oil in a large nonstick skillet over med-high heat 3 minutes on each side or until golden brown.
  • Place pork in a lightly greased, shallow roasting pan.
  • Bake in a preheated 425° oven for 25 minutes or until a meat thermometer reads 155°, basting occasionally with half the cranberry mixture.
  • Remove from oven; cover pork with foil, and let stand 5 minutes or until thermometer reads 160°.
  • Slice pork, serve with reserved cranberry mixture; garnish, if desired.

BRINE FOR THE TENDERLOINS
1/2 cup(s) kosher salt
1/2 cup(s) sugar
1 quart(s) cool water
ROSEMARY - ORANGE GLAZE
1/4 cup(s) frozen orange juice concentrate, thawed
1 teaspoon(s) brown sugar
4 teaspoon(s) fresh rosemary, minced
ORANGE BALSAMIC SAUCE
1 teaspoon(s) olive oil
2 clove(s) garlic, minced
1/2 teaspoon(s) fresh rosemary, minced
1/3 cup(s) orange marmalade
4 teaspoon(s) balsamic vinegar
TENDERLOINS
2 - pork tenderloins (about 2 pounds total), brined
- orange - rosemary glaze

Steps:

  • Brine for Tenderloins: For 2 tenderloins, in a medium bowl mix kosher salt and sugar with cool water until dissolved. Trim the tenderloins of excess fat and silver skin. Submerge them in the brine and let stand for 45 minutes. After 45 minutes, remove the pork from the brine, rinse thoroughly and pat dry.
  • Rosemary-Orange Glaze: In a small saucepan, bring the OJ concentrate, brown sugar and rosemary to a simmer. Simmer until the mixture reduces to about 2 tablespoons. Set aside and cool slightly.
  • Orange Balsamic Sauce: Heat the oil in a small saucepan over medium heat. Add garlic and rosemary and cook until fragrant and sizzling (about 30 seconds). Stir in marmalade and vinegar. Heat until warm. **NOTE** After slicing the pork, add any juices from the carving board to the sauce before serving. Pass separately when serving the pork tenderloin.
  • Tenderloins: Rub the brined tenderloins all over with the glaze and then season with pepper. Heat gas grill, turning all the burners to high until fully heated, 10-15 minutes. Put the pork on the hot grill grate. Close the lid and grill for 7 minutes. Turn pork over, close lid and grill another 6 minutes. Turn off the heat (keep the lid closed) and continue to cook for another 5 minutes on the residual heat. At this point, an instant read thermometer inserted in the middle of the thickest end of the tenderloin should read 145-150 degrees. If not, close the lid and let the pork continue to roast in the residual grill heat. Remove pork from the grill and let rest for 5 minutes before carving. Cut across the grain into 1/2 inch slices and serve immediately.

1 ( 2 1/2 - 3 ) pound pork tenderloin, i used pork tenderloin end
1/2 tsp pepper
1 tsp cumin, dried
1 - 2 tsp rosemary, dried
1/2 tsp paprika, i use smoked
1/2 - 1 tsp accent flavor enhancer or salt
5 - 6 clove garlic, whole ( mince one for the top of loin)
GLAZE
1/4 c balsamic vinegar
1 Tbsp worcestershire sauce
1 Tbsp soy sauce
1/2 c brown sugar
1 tsp dry mustard
1/2 c water
1 Tbsp corn starch

Steps:

  • 1. Rinse pork loin and dry. Cut about 4 - 5 slits on top of the loin; about 1 1/2 inches deep. Stuff a clove of garlic in each slit.
  • 2. In a small bowl; mix the seasonings and minced garlic. Rub the pork well with the spice mix. It is now ready to go into the slow cooker.
  • 3. Lay the pork loin inside the slow cooker. Pour a small amount of water, just enough to cover the bottom of the crock. Make sure not to wash the seasoning from the meat in the process.
  • 4. Cook on high setting for an hour. Then turn down to low, cook for 3 -4 hours longer. Or cook on low for 5 - 6 hours. My low setting gets pretty hot. ( Mine took a total of 1 hour on high, and 3 hours on low). So, keep checking when basting for doneness. Baste the loin every half hour or so, with the glaze.
  • 5. When meat is finished, remove it from the slow cooker, and let it rest for 5 minutes or so. Slice and plate, and serve with remaining glaze.
  • 6. Making the glaze: Mix all of the ingredients in a small saucepan; over medium heat, stirring frequently so the sauce does not burn. When sauce comes to a simmer..stir until thickened. Remove from heat and set aside.
  • 7. Enjoy! Your house will smell wonderful!

The amount of chili powder is deceiving, I thought it would be very spicy and it was not. Absolutely perfect for company! Serve with buttered noodles, baked apple sauce and you're good to go! Enjoy. NOTE: 6-8 hour marination time required

1 1/2-2 lbs pork tenderloin (*can use a smaller tenderloin)
2 tablespoons olive oil
4 tablespoons balsamic vinegar
1 garlic clove, crushed & minced
1 1/2 tablespoons chili powder (*adds heat, (to taste)
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon

Steps:

  • Trim and rinse pork as needed. Place in a ziplock bag or dish with a tight seal.
  • Whisk together all ingredients until thoroughly blended.
  • Pour marinade over pork. Marinate in refrigerator at least 8 hours or overnight, turning occasionally.
  • Heat grill to medium high. Grill pork until center is pale pink, about *15-17 minutes or to desired doneness. Let rest for 5 minutes, slice & serve immediately.
  • NOTES:
  • May need to adjust cooking time +/- depending on the size & thickness or the tenderloin.
  • The chili powder does not add the heat you may expect. Not sure why, but it won't be spicy as one might anticipate.
