My husband loves this bread. Whenever I ask him to suggest a nice tea bread, he says, "What about that orange-pecan stuff?" -Sondra Feldstein, Bondurant, Iowa.

Number Of Ingredients 13

1/4 cup butter, softened
1/4 cup sugar
1 large egg, room temperature, separated
2 teaspoons grated orange zest
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/8 teaspoon baking soda
Dash salt
1/4 cup orange juice
1/3 cup chopped pecans
GLAZE:
1 tablespoon sugar
1 tablespoon orange juice

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Add egg yolk and orange zest; beat until blended. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with orange juice. , In another small bowl, beat egg white until soft peaks form. Fold egg white and pecans into batter. , Pour into a 5-3/4x3x2-in. loaf pan coated with cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine the glaze ingredients in a small microwave-safe bowl. Microwave, uncovered, at 50% power for 1 minute. Stir until sugar is dissolved. Pour over warm bread. Cool for 10 minutes before removing from pan to a wire rack to cool completely.,

2 teaspoons orange zest, grated

cooking spray
1/2 cup powdered sugar
2 teaspoons orange juice
1 1/2 teaspoons toasted pecans

Steps:

  • preheat oven to 350.
  • spray a loaf pan with cooking spray.
  • combine flour and the next 5 ingredients in a large bowl.
  • make a well in center.
  • combine sugar and the next 7 ingredients and whisk into the dry ingredients.
  • pour into the loaf pan.
  • bake 45 minutes until a toothpick inserted in center comes out clean.
  • cool on a wire rack.
  • mix oj and powdered sugar and drizzle over loaf, garnish with toasted pecans.

1/4 cup butter or 1/4 cup margarine
3/4 cup sugar
2 eggs, beaten
2 teaspoons grated orange rind
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup orange juice
1/2 cup chopped pecans
2 1/2 teaspoons orange juice
1/2 cup sifted powdered sugar

Steps:

  • Cream butter; gradually add 3/4 cup sugar, beating well. Add the beaten eggs and grated orange rind; mix well. Combine flour, baking powder and salt; add to creamed mixture alternately with 3/4 cup orange juice, beginning and ending with flour mixture. Mix well after each addition. Stir in pecans. Pour batter into a greased 9x5x3" loaf pan. Bake at 350 degrees F. for 50 to 55 minutes or until a wooden pick inserted comes out clean. Cool loaf in pan 10 minutes. Remove from pan and cool completely.
  • Combine 2 1/2 teaspoons orange juice and powdered sugar; drizzle over loaf.
  • Wrap and store overnight before serving.

1/3 cup water
1/2 orange, zested
1/8 teaspoon cinnamon
2 cups toasted pecans

Steps:

  • In a deep saucepan, combine the sugar, water, orange zest, and cinnamon and bring to a boil. Add the pecans and simmer, stirring, as the water evaporates. The glaze will be shiny and transparent at first, then turn opaque, and crystallize as the water cooks away.
  • When the nuts are completely coated with sugar crystals, they are done. Spread them out on a sheet pan to cool. (To wash the saucepan, soak it overnight.)

1 tablespoon grated orange rind
2 (6 ounce) tubes Pillsbury Grands refrigerated buttermilk biscuits
1 (8 ounce) package cream cheese, cut into 16 squares
1/2 cup butter, melted
1 cup sifted powdered sugar
2 tablespoons orange juice

Steps:

  • Preheat oven to 350ºF.
  • Lightly grease a Bundt pan.
  • Combine first 3 ingredients in a small bowl and set aside.
  • Separate biscuit dough into individual biscuits and gently separate the biscuits in half.
  • Place a cream cheese square between the two halves, pinch sides to seal each back together.
  • Dip in melted butter, and dredge in reserved sugar mixture.

1 1/2 cups unbleached flour or 1 1/2 cups all-purpose flour
1 cup sugar
1/2 cup whole wheat flour
4 teaspoons finely grated orange peel
1 teaspoon baking powder
1 teaspoon baking soda
1 cup nonfat sour cream (8 oz.)
1/2 cup unsweetened applesauce
1/4 cup orange juice
3 egg whites
2 tablespoons orange juice
3/4 cup powdered sugar

Steps:

  • TO MAKE THE BREAD: Preheat oven to 350*. Coat a 9x5" loaf pan with nonstick spray.
  • In a large bowl, stir together the unbleached or all-purpose flour, sugar, whole wheat flour, orange peel, baking powder, and baking soda. Make a well in the center of teh flour mixture.
  • In a medium bowl, whisk together the sour cream, applesauce, orange juice, and egg whites. Scrape into the well in the flour mixture and stir just until moistened.
  • Scrape the batter into the prepared pan. Bake for 55-60 minutes, or until the bread begins to pull away from the sides of the pan. Allow the bread to cool in the pan for 10 minutes. Remove from the pan and set on a rack.
  • TO MAKE THE GLAZE: In a small bowl, stir together the orange juice and powdered sugar until smooth. Drizzle a thin layer of the glaze on the bread while it is still warm. When the galze is dry, add another layer. Repeat until all the glaze is used. Let the bread cool completely before serving.

This is one of my most treasured recipes. Flaky refrig biscuits are filled with cream cheese, dredged in butter, rolled sugar, pecans, orange zest. Baked in a bundt pan, the loaf is inverted and drizzled with a glaze. Pull off a danish and slip into bliss.

1/2 cup pecans, chopped
1 tablespoon orange zest
2 (11 ounce) cans ready-to-bake refrigerated buttermilk flaky biscuits
3 ounces cream cheese
1/2 cup butter, melted
1 cup powdered sugar
2 tablespoons orange juice

Steps:

  • Combine sugar, pecans, orange zest.
  • Separate each biscuit, (there shoud be 20 biscuts - so you will have 40 layers).
  • Cut cream cheese into 20 pieces.
  • Place one piece of cream cheese on each of 20 biscuit halves.
  • Top with remaining biscuits halves and pinch the edges to seal them.
  • Dip filled biscuits in melted butter.
  • Dredge in the sugar mixture. I do have to make extra mixture sometimes.
  • Stand each biscuit on it's edge in a lightly greased 12-cup bundt pan, spacing evenly, but together.
  • Drizzle with remaining butter and sugar mixture.
  • Bake at 350 degrees for 45 minutes, or until golden brown.
  • Immediately invert onto a wire rack.
  • Combine powdered sugar and orange juice, and drizzle over the danish.
  • Serve immediately.
