1/2 cup dark brown sugar (packed)
8 tablespoons butter (1 stick)
1/2 cup dark rum
1/4 cup dark molasses
3 tablespoons spicy mustard
1 tablespoon cider vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon fresh ground pepper

Steps:

  • Mix all ingredients (just prior to use) in a non-reactive saucepan and bring to a boil.
  • Stir constantly while heating.
  • Reduce heat, stirring and allow to simmer for 5 to 10 minutes.
  • Apply to ham while warm.

1 6- to 8-pound bone-in shank-half ham, or 15- to 17-pound bone-in whole ham, fully cooked
1 tablespoon whole cloves
Sour-cherry thyme glaze (see recipe)
or clementine peppercorn glaze (see recipe)

Steps:

  • Place rack in lower third of oven and preheat to 325 degrees. Trim tough rind from ham, leaving as much fat as possible. Place ham flat-side down and score the rounded side all over with diagonal cuts about 1 1/2 inches apart and 1/4-inch deep, forming a diamond pattern. In center of each diamond insert a single clove.
  • Place ham in a roasting pan and bake until a meat thermometer inserted into thickest part reads 135 degrees, about 15 minutes a pound. One hour before ham is done, remove it from oven and brush all over with glaze.
  • Return ham to oven and continue to bake, glazing ham once or twice more until ham is done. Remove ham from oven, tent with foil and let rest 10 minutes before carving.

Tried several premade recipes and all were too simple or just didn't taste good. Decided to make my own from scratch being I learned how to do things like this while getting my chef certification. Baste onto ham roughly every 10 to 20 minutes for at least the last hour of cooking time. For a more encrusted glaze, start basting the ham sooner.

½ cup lemon-lime soda (such as Sprite®)
⅓ cup orange liqueur
¼ teaspoon freshly ground cloves
⅛ teaspoon ground allspice
1 pinch salt and ground black pepper to taste

Steps:

  • Stir brown sugar, lemon-lime soda, orange liqueur, cloves, allspice, salt, and black pepper together in a saucepan; bring to a simmer and cook until glaze is reduced by 1/4, about 10 minutes.
  • Strain through a fine-mesh sieve into another saucepan. Bring mixture to a simmer again and cook until glaze is about the consistency of maple syrup, about 10 minutes more.

The sweet, slightly fiery and herbaceous crust on this salty haunch practically calls out for a garnish of caramelized pineapple, if not a spray of maraschino cherries. Others may reverse course and apply mustard. Either way, it is good to serve with a nutty wild rice or potatoes au grain, something with backbone.

1 7-to-8-pound bone-in ham
Whole cloves
1½ teaspoons dry mustard powder
1 cup brown sugar
¼ cup dry sherry

Steps:

  • Heat oven to 325 degrees. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, to create a diamond pattern across the meat. Stud each diamond with a whole clove.
  • Add a cup or two of water to the bottom of the pan, then bake the ham, uncovered, 25 minutes to the pound if it is ready-to-cook, about half that if it is ready-to-eat.
  • Combine the mustard and the brown sugar in a bowl, then add the sherry to make a thick paste. Spread the mixture over the ham approximately 20 minutes before it is ready to remove from the oven, then bake until crust has formed.

1 8 pound bone-in, fully-cooked ham (shank end or butt end)
1 cup apple cider (apple juice or water)
1 cup marmalade (bitter or sweet)
4 tablespoons unsalted butter
1 tablespoon hot honey (or honey plus ¼ teaspoon crushed red pepper)
3 tablespoons Big O liqueur (bourbon or dark rum)
½ cup dark brown sugar
1 tablespoon Dijon mustard
2 teaspoons ginger paste or 1 teaspoon freshly grated ginger
½ teaspoon ground cloves
¾ teaspoon kosher salt
¼ teaspoon ground black pepper

Steps:

  • Read all notes before beginning.
  • Remove the ham from the fridge 2 hours before cooking.
  • Thirty minutes before cooking , heat oven to 325°F and spray a roasting pan with nonstick spray. Line the pan with foil and spray the foil.
  • To prepare the glaze, combine all glaze ingredients in a medium-size saucepan, set over medium heat, and bring to a boil. Reduce heat to low and simmer about 10 minutes or until the mixture reduces and thickens.
  • Score a diamond pattern, with a sharp knife, in the ham just through the skin & fat layer. Cut the skin/fat layer about ¼-inch deep, with the parallel lines about 2-inches apart.
  • Pour cider into the bottom of the pan and set the ham flat side-down in the middle.
  • Reserve ½ of the glaze; set aside for serving.
  • Brush the glaze over the ham and place the ham on the center rack in the oven. Bake the ham at 325°F for 1½ hours, glazing every 30 minutes.
  • If the ham is browning too quickly, spray a piece of foil with nonstick spray and loosely place it, sprayed side-down, over the ham. The ham should take 10-15 minutes per pound to heat through. Remember the ham is already cooked, it just needs to be cooked through - the internal temperature should register 115°F on an instant read thermometer.
  • Remove the foil, if using.
  • When the ham has reached the desired internal temperature, baste it one more time. If the ham needs additional browning/caramelizing, set the oven to broil and let it brown 1-2 minutes - watch very closely.
  • Remove the pan from the oven and brush it with pan juices. Cover with aluminum foil and allow it to rest 15 minutes before slicing and serving.

1 tablespoon whole cloves
1 can (20 ounces) sliced pineapple
1 cup apricot preserves

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Score the surface of ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. 7-8 lb. bone-in ham, spiral cut
1/2 cup brown sugar
1/4 cup honey
1 tablespoon Dijon mustard
1/4 cup apple cider
1 tablespoon cumin powder
1/2 tablespoon ground cinnamon

Steps:

  • Preheat oven to 275 F. Add 1/2 cup of water to the bottom of a roasting pan and place the rack on top.
  • Place ham flat side down on top of the rack. Score the ham with a knife to make shallow cuts, about 1/4-inch deep. This helps the ham soak in the sweet glaze. Cover the pan with foil to keep the ham from getting overcooked and dry.
  • Bake the ham covered for 2 hours until the internal temperature at the thickest part registers at 135F on a meat thermometer.
  • Increase the oven temperature to 425 F.
  • In a small bowl, combine brown sugar, honey, mustard, apple cider, cumin powder and cinnamon. Whisk until smooth, about 1 minute.
  • Remove the pan from the oven and generously brush half of the glaze over the ham to coat. Return the pan to the oven and bake uncovered for 15 minutes. Then repeat, applying the remaining glaze and baking for another 15 minutes until the ham caramelizes and turns brown.
  • Transfer to a serving platter and pour pan drippings on top. Slice and serve with cranberry sauce.

2 teaspoons whole cloves, divided
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon pepper
1 cup packed brown sugar, divided
1/2 cup minced fresh parsley
3 cups ginger ale
1 cup honey
1 can (16 ounces) pineapple slices, drained

Steps:

  • Remove skin from ham; score the surface, making diamond shapes 1/2 in. deep. Insert a clove in every other diamond; set remaining cloves aside. , Place ham on a rack in a shallow roasting pan. Combine the onion, garlic, oregano, basil and pepper; pat onto ham. Combine 1/2 cup brown sugar and parsley; sprinkle over top of ham. Pour ginger ale around ham. , Bake, uncovered, at 350° for 1-1/2 hours, basting often. , Remove ham from pan; set aside. Drain pan juices, reserving 3 tablespoons. Got this recipe when I was a teenager and spent many a meal eating this at a friends house! I just loved it and have never glazed my hams any other way. I quite often halve the glaze when cooking a small ham and it works just fine.

1/2 cup orange juice
3 cups brown sugar
3 tablespoons flour
2 tablespoons corn syrup
3 teaspoons dry mustard

Steps:

  • Score ham with diamonds, insert whole cloves, bake at 325- 350 for about 1-1 1/2 hours (I add a little water to the bottom of the baking dish).
  • baste often with glaze, watching carefully that the outside does not start to burn. ( I usually bake a little first and then start basting with the glaze).
  • (I usually purchase pre-cooked boneless.) If desired serve with the glaze drizzled on slices, or even put the sauce in a bowl for the table and everyone can help themselves!) Yummy!
