- Place rack in lower third of oven and preheat to 325 degrees. Trim tough rind from ham, leaving as much fat as possible. Place ham flat-side down and score the rounded side all over with diagonal cuts about 1 1/2 inches apart and 1/4-inch deep, forming a diamond pattern. In center of each diamond insert a single clove.
- Place ham in a roasting pan and bake until a meat thermometer inserted into thickest part reads 135 degrees, about 15 minutes a pound. One hour before ham is done, remove it from oven and brush all over with glaze.
- Return ham to oven and continue to bake, glazing ham once or twice more until ham is done. Remove ham from oven, tent with foil and let rest 10 minutes before carving.
HOLIDAY HAM GLAZE
Tried several premade recipes and all were too simple or just didn't taste good. Decided to make my own from scratch being I learned how to do things like this while getting my chef certification. Baste onto ham roughly every 10 to 20 minutes for at least the last hour of cooking time. For a more encrusted glaze, start basting the ham sooner.

- Stir brown sugar, lemon-lime soda, orange liqueur, cloves, allspice, salt, and black pepper together in a saucepan; bring to a simmer and cook until glaze is reduced by 1/4, about 10 minutes.
- Strain through a fine-mesh sieve into another saucepan. Bring mixture to a simmer again and cook until glaze is about the consistency of maple syrup, about 10 minutes more.

GLAZED HOLIDAY HAM
This is the ham that led directly to whatever childhood memory caused someone to combine ham and pineapple on a pizza. The sweet, slightly fiery and herbaceous crust on this salty haunch practically calls out for a garnish of caramelized pineapple, if not a spray of maraschino cherries. Others may reverse course and apply mustard. Either way, it is good to serve with a nutty wild rice or potatoes au grain, something with backbone.

- Heat oven to 325 degrees. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, to create a diamond pattern across the meat. Stud each diamond with a whole clove.
- Add a cup or two of water to the bottom of the pan, then bake the ham, uncovered, 25 minutes to the pound if it is ready-to-cook, about half that if it is ready-to-eat.

MARMALADE GLAZED HAM - HOLIDAY HAM
This marmalade glazed ham is the perfect centrepiece for any holiday gathering. This glazed ham is full of flavor and easy to prep. A traditional dish that's always a crowd pleaser!

- Read all notes before beginning.
- Remove the ham from the fridge 2 hours before cooking.
- Thirty minutes before cooking , heat oven to 325°F and spray a roasting pan with nonstick spray. Line the pan with foil and spray the foil.
- To prepare the glaze, combine all glaze ingredients in a medium-size saucepan, set over medium heat, and bring to a boil. Reduce heat to low and simmer about 10 minutes or until the mixture reduces and thickens.
- Score a diamond pattern, with a sharp knife, in the ham just through the skin & fat layer. Cut the skin/fat layer about ¼-inch deep, with the parallel lines about 2-inches apart.
- Pour cider into the bottom of the pan and set the ham flat side-down in the middle.
- Reserve ½ of the glaze; set aside for serving.
- Brush the glaze over the ham and place the ham on the center rack in the oven. Bake the ham at 325°F for 1½ hours, glazing every 30 minutes.
- If the ham is browning too quickly, spray a piece of foil with nonstick spray and loosely place it, sprayed side-down, over the ham. The ham should take 10-15 minutes per pound to heat through. Remember the ham is already cooked, it just needs to be cooked through - the internal temperature should register 115°F on an instant read thermometer.
- Remove the foil, if using.
- When the ham has reached the desired internal temperature, baste it one more time. If the ham needs additional browning/caramelizing, set the oven to broil and let it brown 1-2 minutes - watch very closely.
- Remove the pan from the oven and brush it with pan juices. Cover with aluminum foil and allow it to rest 15 minutes before slicing and serving.

- Preheat oven to 275 F. Add 1/2 cup of water to the bottom of a roasting pan and place the rack on top.
- Place ham flat side down on top of the rack. Score the ham with a knife to make shallow cuts, about 1/4-inch deep. This helps the ham soak in the sweet glaze. Cover the pan with foil to keep the ham from getting overcooked and dry.
- Bake the ham covered for 2 hours until the internal temperature at the thickest part registers at 135F on a meat thermometer.
- Increase the oven temperature to 425 F.
- In a small bowl, combine brown sugar, honey, mustard, apple cider, cumin powder and cinnamon. Whisk until smooth, about 1 minute.
- Remove the pan from the oven and generously brush half of the glaze over the ham to coat. Return the pan to the oven and bake uncovered for 15 minutes. Then repeat, applying the remaining glaze and baking for another 15 minutes until the ham caramelizes and turns brown.
- Transfer to a serving platter and pour pan drippings on top. Slice and serve with cranberry sauce.

Got this recipe when I was a teenager and spent many a meal eating this at a friends house! I just loved it and have never glazed my hams any other way. I quite often halve the glaze when cooking a small ham and it works just fine.

- Score ham with diamonds, insert whole cloves, bake at 325- 350 for about 1-1 1/2 hours (I add a little water to the bottom of the baking dish).
- baste often with glaze, watching carefully that the outside does not start to burn. ( I usually bake a little first and then start basting with the glaze).
- (I usually purchase pre-cooked boneless.) If desired serve with the glaze drizzled on slices, or even put the sauce in a bowl for the table and everyone can help themselves!) Yummy!
