Since we are originally from Texas, we naturally love sweet potatoes, but this sweet potato cake deserves to be a tradition in any home, whether you're from the South, East, North or West. 1 cup butter, softened
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
2 cups cold mashed sweet potatoes
GLAZE:
1 cup confectioners' sugar
1 teaspoon grated orange zest
3 to 5 teaspoons orange juice

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, cinnamon, baking soda, salt and nutmeg; add to creamed mixture alternately with sweet potatoes. Beat just until combined (batter will be stiff). , Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., For glaze, in a small bowl, combine the confectioners' sugar, orange zest and enough juice to achieve desired consistency. Drizzle over cake.

Old Fashioned Sweet Potato Bundt Cake is delicious and comforting. Features real mashed sweet potatoes and a cinnamon sugar glaze.

3 1/2 cups mashed sweet potatoes* ((about 4 large))
2 1/2 cups granulated sugar (500 grams)
2/3 cup 2% milk
2/3 cup vegetable oil
4 large eggs
3 1/2 cups all-purpose flour (455 grams)
2 teaspoon baking soda
1 1/2 teaspoon salt
1 teaspoon nutmeg
2 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon baking powder
2 cups powdered sugar
1 1/2 teaspoons cinnamon
4-5 tablespoons heavy cream ((or more to get the consistency you'd like))
walnuts for topping (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease a 12 cup bundt pan with shortening, then dust with flour. Or you can use Baker's Joy spray.
  • In a large mixing bowl, mash sweet potatoes in 2 tablespoons of liquid.
  • Add sugar, milk, oil, and eggs to mashed sweet potatoes and mix well.
  • Add flour, baking soda, salt, nutmeg, cinnamon and allspice, and baking powder. Mix well.
  • Pour evenly into the prepared bundt pan. Bake for about 1 hour. The exact time will depend on the type of pan you have. Test the cake with a toothpick or an internal thermometer. The cake should be about 200º Fahrenheit.
  • Cool for 15 minutes in the pan. Turn out onto a wire rack to cool completely.
  • To make the icing, combine the powdered sugar and cinnamon in a small bowl. Add 3 tablespoons of heavy cream. Mix until it is smooth. Add more heavy cream, one tablespoon at a time, until the glaze is thin enough to spread or drizzle.
  • Drizzle the cinnamon icing on the bundt cake. Sprinkle with walnuts if you'd like.
  • Store in an airtight container at room temperature.

3 egg whites
1 large carrot, shredded
2/3 cup low-fat buttermilk
1/2 cup carrot juice
1 cup powdered sugar
2 tablespoons orange juice
2 teaspoons orange zest, grated

Steps:

  • FOR THE CAKE ~ Preheat oven to 450 degrees F.
  • Prick yams with a fork in several places, then place on baking sheet & bake until tender, about 45 minutes, then remove from oven to cool.
  • When cool enough to handle, peel yams & mash.
  • Reduce oven temperature to 350 degrees F, then, with cooking spray, generously coat inside of a 9"x13" baking dish & set aside.
  • In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, cinnamon, salt, nutmeg, allspice & cloves, then set aside.
  • In another large mixing bowl, with an electric mixer, beat together mashed yams, granulated sugar, brown sugar & vegetable oil until light & fluffy.
  • Beat in egg whites until well combined, then fold in the shredded carrot.
  • In a small bowl, stir together buttermilk & carrot juice, then alternately fold this mixture AND the flour mixture into yam mixture, beginning & ending with flour mixture.
  • Spoon batter into prepared pan, smoothing the top, then bake 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in pan on a wire rack.
  • FOR THE GLAZE ~ In a medium bowl, stir together powdered sugar, orange juice & orange zest, then drizzle over cooled cake.

2 teaspoons vanilla extract
1/2 orange, zested and juiced
1 cup pureed yams or 1 (15-ounce can) yams, drained and pureed
3 tablespoons sour cream
2 cups flour plus 2 tablespoons
1 teaspoon baking powder
1/2 teaspoon baking soda
Salt
3 tablespoons unsweetened cocoa
Pinch of cayenne pepper
3 tablespoons hot water

Steps:

  • Preheat the oven to 350 degrees F and grease a 1 1/2-quart glass loaf pan.
  • In a large bowl, using a mixer, cream the butter with sugar at high speed until fluffy and pale yellow, about 5 minutes. Add in the eggs, vanilla, and orange zest. Mix in the yams, sour cream and orange juice.
  • In a medium bowl, sift together the flour, baking powder, baking soda, and 3/4 teaspoon salt. Slowly mix in the dry ingredients to the butter mixture, mixing on low speed until just incorporated. Spoon out 1/3 of the cake batter and place in a small bowl.
  • In a small measuring cup, make a thin paste of the cocoa, cayenne, and hot water, stirring until smooth. Pour into the small bowl of cake batter and stir just until well mixed. Pour half the (non-chocolate) yam batter into the prepared loaf pan. Spoon on the chocolate batter, and then finish by pouring the remaining yam batter on top. Use a butter knife to cut through the cake to create a marbling effect. Bake until the cake is firm and toothpick comes out clean, 55 to 60 minutes. Cool before slicing.

6 tablespoons unsalted butter, room temperature
1 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/3 cup unsweetened cocoa powder
1/2 cup milk
1 large egg
6 ounces bittersweet chocolate
3/4 cup unsalted butter (1-1/2 sticks)

Steps:

  • Heat oven to 375 degrees. Butter 8-inch round cake pan, 1-1/2 inches deep.
  • Prepare chocolate cake: beat butter in mixer bowl until light. Add sugar; beat until smooth. Sift flour, baking powder, and cocoa together. Add half to butter mixture and blend. Mix in milk, then remaining flour mixture. Add egg and mix until smooth, about 3 minutes.
  • Pour batter into prepared pan and bake until top springs back when lightly touched, 30-35 minutes. Let cool completely in pan on wire rack.
  • Prepare chocolate glaze: melt chocolate and butter in top of double boiler over hot water. Remove pan from water and stir until chocolate mixture is warm, not hot.
  • Place wire rack over large piece of waxed paper. Remove cake from pan and place right side up on wire rack. Pour glaze evenly around top edge of cake and spread over top and sides of cake with long, thin knife. Let stand until glaze is set, about 10 minutes.
  • Slide metal spatula under cake and transfer to serving plate. Store in refrigerator but let warm to room temperature before serving.

1 cup sifted all-purpose flour, plus more for baking pans
Coarse salt
5 large eggs, plus 2 large egg yolks
3/4 cup granulated sugar
6 tablespoons ( 3/4 stick) unsalted butter, melted and cooled
2 large eggs, separated
2 cups mascarpone cheese, room temperature
1 cup confectioners' sugar
1/3 cup unsweetened cocoa powder
1 tablespoon orange zest (optional)
3 tablespoons brandy or Grand Marnier

Steps:

  • Make cake: Preheat oven to 450 degrees, with racks in upper and lower thirds. Coat two 10 1/2-by-15 1/2-inch jelly-roll baking pans with cooking spray. Line with parchment paper; coat with cooking spray. Dust with flour, tapping out excess. In a bowl, whisk together flour and teaspoon salt.
  • In a large bowl, using an electric mixer, beat eggs, yolks, and sugar on medium-high, 2 minutes; increase speed to high and beat until pale and thick, 5 minutes. Sift flour mixture over egg mixture; with a large rubber spatula, fold together until almost blended. Pour butter down side of bowl, folding to combine. Divide batter between pans; smooth with a table knife. Immediately transfer pans to oven and bake until cakes are golden brown and springy when pressed, 6 to 7 minutes, rotating pans halfway through. Let cool completely.
  • Make filling: In a large bowl, stir together egg yolks, mascarpone, sugar, cocoa, orange zest (if using), and pinch of salt. In another large bowl, using an electric mixer, beat egg whites and pinch of salt until soft peaks form. With a large rubber spatula, fold one-third whites into mascarpone mixture; fold in remainder.
  • Invert cakes onto a work surface and gently peel off parchment. Using a serrated knife, trim cakes to measure 10 by 15 inches, then cut each crosswise into thirds. Place 1 cake layer, golden side up, on a platter; brush with brandy and spread with 1 cup filling. Repeat with remaining cake, brandy, and filling, ending with a layer of brandy-brushed cake. Refrigerate until set, about 30 minutes.
  • Make Chocolate Glaze. Pour over top of cake and spread so it drips down sides (or spread along sides). Cover and refrigerate 1 hour (or up to 2 days).

  • Preheat the oven to 375°. Rub the yam with the oil and prick all over with a fork 5 or 6 times. Roast the yam on a rimmed baking sheet for 1 hour, until tender. Let cool slightly, then peel the yam and coarsely mash with a fork.
  • Reduce the oven temperature to 350°. Spray a 10-by-5-inch loaf pan with nonstick spray and line with parchment paper, leaving 1-inch overhang on the long sides. In a medium bowl, whisk the flour with the baking soda, the 1/2 teaspoon of salt, the ground ginger, cinnamon and black pepper.
  • In a large bowl, using a hand mixer, beat 1 stick of the butter with the brown sugar at medium-high speed, until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. (The batter will look broken.) Scrape 1 1/4 cups of the mashed yam and the grated ginger into the bowl and beat at medium speed until just combined. At low speed, beat in the dry ingredients in 3 additions, mixing until just combined.
  • Scrape the cake batter into the prepared pan and bake for about 1 hour, until a skewer inserted into the center comes out clean. Transfer to a wire rack and let cool for 30 minutes. Using the parchment paper, lift the yam cake out of the pan and let cool completely on the wire rack.
