Simple salmon cooked under the oven's broiler with a homemade teriyaki glaze. I really like how well teriyaki flavor pairs with salmon but store-bought teriyaki sauce is so thin and doesn't stay on but runs underneath the fish. I came up with this homemade version that is more of a glaze that stays on the fish.

1 ¼ cups water, divided
2 tablespoons cornstarch
¼ cup soy sauce
¼ cup brown sugar
½ teaspoon sesame oil
1 clove garlic, minced
1 ½ pounds salmon fillets
1 medium green onion, thinly sliced
2 teaspoons toasted sesame seeds

Steps:

  • Combine 1/4 cup cold water and cornstarch in a small bowl with a lid. Seal and shake until cornstarch has dissolved. Set aside.
  • Combine remaining 1 cup water, soy sauce, brown sugar, sesame oil, and garlic in a saucepan and bring to a boil over medium-high heat. Reduce heat to a simmer and stir in the cornstarch mixture. Simmer until sauce has thickened, about 5 minutes. Remove from heat. Measure out 1/2 cup of teriyaki glaze and set aside.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low. Place salmon on a foil-lined baking sheet. Brush on all sides with teriyaki glaze.
  • Broil salmon for 12 minutes. Turn broiler to high. Brush reserved glaze over the top. Broil on high until salmon flakes easily with a fork, about 3 minutes. Serve garnished with green onion and sesame seeds.

1 side, skin-on, sockeye salmon, 1 1/2 to 2 pounds, pin bones removed
1/3 cup dark brown sugar
2 tablespoons lemon zest
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Position a rack in the oven 3 inches from the broiler. Line a half sheet pan with aluminum foil and place the salmon on the pan.
  • Place the sugar, zest, salt, and pepper into the bowl of a small food processor and process for 1 minute or until well combined. Evenly spread the mixture onto the salmon and allow to sit for 45 minutes, at room temperature.
  • Turn the oven on to the high broiler setting for 2 minutes. After 2 minutes, place the salmon into the oven and broil for 6 to 8 minutes or until the thickest part of the fish reaches an internal temperature of 131 degrees F on an instant-read thermometer. Remove the salmon from the oven and allow to rest, uncovered, for 8 to 10 minutes. Serve immediately.

1 tablespoon toasted sesame oil
1 tablespoon honey
1 tablespoon rice wine vinegar

4 4-ounce salmon fillets
8 ounces fresh asparagus spears (trimmed)
1 teaspoon vegetable oil
Salt
1 tablespoon chopped scallion greens

Steps:

  • In a medium bowl, whisk together the gochujang sauce, sesame oil, honey, rice wine vinegar and ginger.
  • Position an oven rack 6-inches from the heat source and preheat the broiler to high.
  • Put the salmon and asparagus on a foil-lined rimmed baking sheet. Drizzle with the oil and sprinkle lightly with salt.

This is by far, my favorite company meal. We eat this salmon very often. It is so tender and delicious. Everyone I have served it to has always loved it - even children. Don't be afraid of the cayenne pepper - this is not a spicy dish. The original version of this recipe actually called for more cayenne (3/4 tsp.) which you are welcome to try if you like it a bit more spicy. The salmon called for in this recipe is a whole side of a fish - do not cut up until after it is cooked. The skin acts as a moisture protector on the grill and also helps hold the fish together- it can be removed after cooking, if you prefer. Adapted from a similar recipe in Quick Cooking magazine.

  • Pour 1/2 cup of this sauce into a small saucepan- once the fish is in its final 5 minutes of cooking time, heat this until warm and pour over cooked fish.
  • Set aside the remaining unheated sauce to use for basting the fish as you grill.
  • Place the salmon, skin side down, on a large platter and season with lemon pepper seasoning and sea salt to taste.
  • Note: If your lemon-pepper seasoning already contains salt, then don't add the extra salt.
  • Lightly brush grill grates with some oil and heat grill to medium.
  • Carefully slide salmon off of the platter and onto the grill, skin side down,using a large metal spatula to help.
  • Cover grill and cook fish, undisturbed, for 5 minutes exactly.

  • Use up all of the basting sauce (Don't forgot to heat up the 1/2 cup reserved sauce from before).

Fast meal. Divine taste. This recipe is from Giada's Everyday Italian on Food Network. My husband loves salmon and thought this was perfect. The kitchen smelled wonderful while it was cooking. Worthy of company or to treat yourself with little effort. I did substitute dill for the rosemary. I served it with gruyere potato gratin and sugar snap peas.

6 (6 ounce) salmon fillets
2 cloves garlic
3/4 teaspoon chopped fresh thyme
3/4 teaspoon chopped fresh rosemary leaf
1 tablespoon dry white wine
1 tablespoon extra virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons whole grain mustard
nonstick cooking spray
salt & fresh ground pepper
6 lemon wedges

Steps:

  • In a mini food processor, combine garlic, rosemary, thyme, wine, oil, Dijon mustard, and one tablespoon of whole-grain mustard.
  • If you don't have a mini food processor, finely chopping it all by hand works as well.
  • Grind the mustard sauce until combined.
  • Transfer to a small bowl and add the remaining tablespoon of whole-grain mustard.
  • Set sauce aside.
  • Preheat the broiler.
  • Line a baking sheet with foil and spray it nonstick spray.
  • Place salmon fillets on the baking sheet and sprinkle with salt and pepper.
  • Broil for two minutes and then spoon the mustard sauce over the fillets.
  • Continue broiling the fillets until they are cooked through and golden brown, about 5-6 more minutes.
  • Serve with lemon wedges.

1/4 cup packed dark brown sugar
2 tablespoons bourbon
1 teaspoon salt
1/8 teaspoon pepper
4 salmon fillets (6 ounces each)

Steps:

  • In a small saucepan, combine all ingredients but salmon. Bring to a boil. Cook and stir until sugar is dissolved, about 1 minute; set aside., Place salmon on oiled grill rack, skin side down. Grill, covered, over medium heat for 5 minutes. Brush with bourbon mixture. Grill until fish just begins to flake easily with a fork, 8-10 minutes longer.

3/4 cup maple syrup
2 tablespoons ketchup
1 tablespoon brown sugar
1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/8 teaspoon hot pepper sauce
1 salmon fillet (2 pounds)

Steps:

  • In a small bowl, combine the first eight ingredients. Pour 1/2 cup into a large resealable plastic bag; add the salmon. Seal bag and turn to coat; refrigerate for up to 2 hours. Cover and refrigerate remaining marinade. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, skin side down, over medium-hot heat for 2-4 minutes., Transfer to a double thickness of heavy-duty foil (about 17 in. x 21 in.). Spoon some of the reserved marinade over salmon. Fold foil around fillet and seal tightly. Grill 5-6 minutes longer or until fish flakes easily with a fork. Open slowly to allow steam to escape. Brush with remaining marinade.
