CONFECTIONERS' SUGAR GLAZE
This versatile glaze is shared by our Test Kitchen. You can make the basic powdered sugar glaze and tint it with food coloring if desired. For chocolate lovers, skip the food coloring and stir in some baking cocoa.

PERFECT SUGAR COOKIE GLAZE
I needed an easy glaze the hardened quickly (instead of over night like so many) but one that still had good flavor. This dries hard enough to stack the cookies. Note: Make one batch at a time. It's unmanageable in anything larger. Children's water color brushes or those used for painting chocolate molds work well. Make sure to put down wax paper or parchment paper on your work surface and prepare for messy kidlets. Originally found at All Recipes

Steps:
- Stir sugar, corn syrup, vanilla and the milk together.
- Stir in food coloring a few drops at a time until you reach the color desired.
- This glaze must be stirred each time you use it or dries with a mottled look.
- Yield: 1/2 c glaze.

Steps:
- 1. In large bowl mix all ingredients together until well blended. Add your extract to flavor icing - vanilla, lemon, almond, orange, anise etc. Make sure it does not clash with the flavor of your cookie. I use creme bouqet (an emulsion used in bakeries that is a combo of butter, vanilla, citrus and something flowery. Delicious magic!!!) Add your coloring. Gel food color works best for most vibrant color and the liquid color tends to affect the consistency of your icing. Use it if that is what you have, just be mindful when you get to the step that you are adding additional milk. This first batch will seem too thick. It is supposed to. The drop of lemon juice controls the sweetness. It is a chemical thing and does not interfere with the flavoring.
- 2. The thick batch is to outline the cookies. Fill a piping bag and outline cookies that are completely cooled.
- 3. Now you will take milk and make your flood icing. I add milk 1/2 teaspoon at a time and run a spatula or butter knife across the bottom of the bowl. You want to see the bottom of the bowl for a few seconds. If 10 seconds pass and you still see the bottom of the bowl, add more milk.
- 4. Now you fill in or flood your outlined cookie with the thinner icing. I use a demitasse spoon and a toothpick and push it into the edges. You can use a squeeze bottle whatever works.
- 5. I let the cookies dry overnight. The glaze dries completely and the cookies are stackable. It is delicious. it is softer and has a nicer mouth feel than royal icing.
COOKIE GLAZE
Steps:
- Mix the confectioners sugar with 2 tablespoons of water until it forms a thin smooth glaze. Spoon the glaze onto each cookie then decorate with the sprinkles.

BASIC GLAZE ICING
Steps:
- Put the sugar in an electric mixer fitted with the paddle attachment. With the mixer on the lowest speed, slowly add the water, the corn syrup and vanilla extract. When the sugar is sufficiently moistened (it won't fly out of the mixer), raise the speed to high, and beat for 2 minutes until completely smooth and glossy.
- Divide and color, as desired. Store at room temperature, covered with plastic wrap directly on the surface of the icing, to prevent forming a skin.
- For cupcakes: Dip the surface of the cupcakes into the icing, allowing excess to drip into bowl. Clean any excess from the sides. Alternately, use a knife or a spreader to apply. Whisk as needed to keep icing glossy and smooth while using.
- For Light Blue Icing: Combine 2 to 3 drops of blue food coloring to 1 cup of Basic Glaze Icing.
- For Deep Yellow Icing: Combine 4 to 5 drops of yellow food coloring to 1 cup of Basic Glaze Icing.
- For Purple Icing: Combine 4 drops of red and 5 drops of blue food coloring to 1 cup of Basic Glaze Icing.

Steps:
- In a medium bowl, sift confectioners sugar and then combine with light corn syrup, milk or water, and clear extract flavoring. Stir until smooth and the icing has reached your desired consistency.
- For flooding and dipping, use a consistency that sticks well to your spoon and icing 'drops' off slowly.
- For a light glaze that is somewhat transparent, use a consistency that runs off slowly from your spoon but also leaves a good clear coating on the spoon.
- Cover with plastic wrap and refrigerate for up to 3 days.

HOW TO MAKE ICING WITH ICING SUGAR AND WATER
The EASIEST tutorial on how to make icing with just icing sugar and water! With just 3 simple ingredients, this smooth & glossy icing is perfect for decorating sugar cookies, brownies, bundt cakes, and quick breads in a pinch! Makes 1/2 cup icing, enough to ice about 12 sugar cookies.

Steps:
- Combine powdered sugar, water, and vanilla extract in a medium-sized bowl. Mix until smooth.
- Add more water or powdered sugar until it reaches your desired consistency. If using a piping bag, about 2 tablespoons of water is best (you want the icing to be about the consistency of pancake batter). If dipping or drizzling the icing, 3 tablespoons of water will likely be needed. See notes below for storing and freezing notes.
- Drying time: Depending on the temperature and humidity of your house, drying time will vary. For a thin glaze (dipped), I typically find that it takes 6-8 hours on the counter (uncovered) to fully harden. After about 3 hours, the outside is "set" but the inside will still be soft. You can place a fan nearby to help speed up the drying time.

- Make sure you have allotted enough time (and enough counter space!) to make these cookies. The cookie dough needs to chill, the cookies need to cool completely, and the icing needs 24 hours to completely harden. If enjoying right away and hardened icing isn’t a concern, you’ll only need about 4 hours to make these.
- In a large bowl using a handheld or stand mixer fitted with the paddle attachment, beat the butter until creamed and smooth – about 1 minute. Add the sugar and beat on high speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides and bottom of the bowl as needed. Add the egg, vanilla, and almond extract and beat on high until fully combine, about 2 minutes. Scrape down the sides and bottom of the bowl as needed.
- Whisk the flour, baking powder, and salt together in a medium bowl. Turn the mixer down to low and add about half of the flour mixture, beating until just barely combined. Add the rest of the flour and continue mixing until just combined. If the dough still seems too soft, you can add 1 Tablespoon more flour until it is a better consistency for rolling.
- Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment to about 1/4″ thickness. Stack the pieces (with paper) onto a baking sheet, cover lightly, and refrigerate for at least 1-2 hours and up to 2 days. Chilling is mandatory.

- You will use this same recipe for both glazing and piping. Thickened, you can pipe outlines, and as you thin it, you can use it for “flooding” cookies. Make sure to let them dry overnight to fully harden for stacking.
