I needed an easy glaze the hardened quickly (instead of over night like so many) but one that still had good flavor. This dries hard enough to stack the cookies. Note: Make one batch at a time. It's unmanageable in anything larger. Children's water color brushes or those used for painting chocolate molds work well. Make sure to put down wax paper or parchment paper on your work surface and prepare for messy kidlets. Originally found at All Recipes

1 cup confectioners' sugar
1 tablespoon light corn syrup
2 tablespoons water or 2 tablespoons milk
food coloring

1 c powdered sugar
1 Tbsp milk
1 Tbsp corn syrup
1 dash(es) lemon juice
1/2 tsp flavoring of choice
additional milk as needed

Steps:

  • 1. In large bowl mix all ingredients together until well blended. Add your extract to flavor icing - vanilla, lemon, almond, orange, anise etc. Make sure it does not clash with the flavor of your cookie. I use creme bouqet (an emulsion used in bakeries that is a combo of butter, vanilla, citrus and something flowery. Delicious magic!!!) Add your coloring. Gel food color works best for most vibrant color and the liquid color tends to affect the consistency of your icing. Use it if that is what you have, just be mindful when you get to the step that you are adding additional milk. This first batch will seem too thick. It is supposed to. The drop of lemon juice controls the sweetness. It is a chemical thing and does not interfere with the flavoring.
  • 2. The thick batch is to outline the cookies. Fill a piping bag and outline cookies that are completely cooled.
  • 3. Now you will take milk and make your flood icing. I add milk 1/2 teaspoon at a time and run a spatula or butter knife across the bottom of the bowl. You want to see the bottom of the bowl for a few seconds. If 10 seconds pass and you still see the bottom of the bowl, add more milk.
  • 4. Now you fill in or flood your outlined cookie with the thinner icing. I use a demitasse spoon and a toothpick and push it into the edges. You can use a squeeze bottle whatever works.
  • 5. I let the cookies dry overnight. The glaze dries completely and the cookies are stackable. It is delicious. it is softer and has a nicer mouth feel than royal icing.

1 cup water
5 tablespoons light corn syrup
1 tablespoon pure vanilla extract
Food coloring, as desired (see suggested colors below)

Steps:

  • Put the sugar in an electric mixer fitted with the paddle attachment. With the mixer on the lowest speed, slowly add the water, the corn syrup and vanilla extract. When the sugar is sufficiently moistened (it won't fly out of the mixer), raise the speed to high, and beat for 2 minutes until completely smooth and glossy.
  • Divide and color, as desired. Store at room temperature, covered with plastic wrap directly on the surface of the icing, to prevent forming a skin.
  • For cupcakes: Dip the surface of the cupcakes into the icing, allowing excess to drip into bowl. Clean any excess from the sides. Alternately, use a knife or a spreader to apply. Whisk as needed to keep icing glossy and smooth while using.
  • For Light Blue Icing: Combine 2 to 3 drops of blue food coloring to 1 cup of Basic Glaze Icing.
  • For Deep Yellow Icing: Combine 4 to 5 drops of yellow food coloring to 1 cup of Basic Glaze Icing.
  • For Purple Icing: Combine 4 drops of red and 5 drops of blue food coloring to 1 cup of Basic Glaze Icing.

  • Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment to about 1/4″ thickness. Stack the pieces (with paper) onto a baking sheet, cover lightly, and refrigerate for at least 1-2 hours and up to 2 days. Chilling is mandatory.
