GINGER TOFU FRIED RICE



Ginger Tofu Fried Rice image

This vegetarian fried rice incorporates tofu and ginger with some crisp veggies for a tasty "meatless Monday" meal!

1 12- ounce package extra-firm tofu (drained and cut into 1" cubes)
3/4 cup brown rice
1 1/2 cups water
1/4 cup tamari soy sauce
2 tablespoons rice vinegar
2 tablespoons sesame oil
1 teaspoon ground ginger
1/2 teaspoon sugar
1 garlic clove (minced)
1 tablespoon avocado oil
1/2 cup vertically sliced onion
2/3 cup frozen peas
1/2 cup thinly sliced carrot (about 1 large carrot)
1 egg (lightly beaten)
2 tablespoon thinly sliced green onion

Steps:

  • Heat the oven. Preheat oven to 325 degrees.
  • Cook the rice. Add the rice and water to a medium saucepan and bring to a boil. Cover and reduce heat, simmer for 35-40 minutes until rice is tender (check package directions for the ultimate cooking time as I've found it varies depending on the type of brown rice I'm using).
  • Bake the tofu. While the rice is cooking, line a baking sheet with parchment paper; place tofu on a baking sheet and bake for 35 minutes.
  • Make the sauce. Combine soy, vinegar, sesame oil, ginger, sugar and garlic in a small bowl; whisk together. Set aside.
  • Make the stir fry. When both tofu and rice are done, heat the avocado oil in a large skillet over medium-high heat. Add tofu, and cook for 4-5 minutes, browning on all sides. Add peas, onion and carrots, cook for 2 minutes. Add rice and egg, cook for 1 minute, stirring continually. Add tamari mixture and cook for 2 minutes.
  • Serve. Top each serving with 1 tbsp of green onion. Serve immediately.

375g pack medium dried egg noodle
couple dashes toasted sesame oil
2 tbsp groundnut oil
finger-length piece fresh root ginger , grated
300g fresh shiitake mushroom , sliced
8 spring onions , cut into thirds, then thinly sliced into lengthways strips
2 tbsp good-quality oyster sauce
2 tbsp light soy sauce

Steps:

  • Cook the noodles according to pack instructions, then toss with a little sesame oil to stop them sticking.
  • Heat a wok over a high heat, then add the groundnut oil. Once it's smoking, add the ginger, stir-fry for a couple of secs, then add the mushrooms with a splash of water to create steam, and cook for 1 min. Toss through the cooked noodles for 2 mins until hot, then add the spring onions, oyster and soy sauces, and a dash more sesame oil.

Gingery Fried Rice With Bok Choy, Mushrooms and Basil image

An ideal recipe for reducing waste in the kitchen, fried rice is a great way to use up spare tofu, leftover meats or wobbly vegetables. Master Sam Sifton's fried rice technique, and you'll have the tools to repurpose leftovers and surplus vegetables. But if it's a bright, fresh slew of greens and herbs you're after, this recipe supplies a high ratio of vegetables to rice. Everything cooks quickly, so your mise en place truly counts here: Get everything chopped and prepped before you pick up the pan, and dinner can be ready in 20.

Number Of Ingredients 14

4 cups cooked, day-old jasmine rice (or 1 cup uncooked jasmine rice; see Tip)
5 tablespoons canola or vegetable oil
3/4 pound mixed fresh mushrooms, such as shiitake and cremini, thinly sliced, or whole shimeji mushrooms
Kosher salt and black pepper
3/4 pound baby bok choy (about 8 small baby bok choy), trimmed, then sliced crosswise 1/2-inch thick
5 scallions, trimmed, greens and whites thinly sliced (about 1/2 cup)
3 garlic cloves, roughly chopped
1 jalapeño, thinly sliced (optional)
3/4 cup frozen peas
2 to 3 tablespoons finely chopped fresh ginger (from one 2-inch piece)
2 tablespoons soy sauce
2 tablespoons sesame oil
1/8 teaspoon white pepper (optional)
1/2 cup thinly sliced fresh basil

Steps:

  • Take the cooked rice out of the refrigerator, and set it aside at room temperature.
  • In a large wok or nonstick skillet, heat 2 tablespoons canola oil over medium-high. Add the mushrooms, season generously with salt and pepper, and cook, stirring occasionally, until browned and tender, 5 or 6 minutes. Transfer to a large bowl.
  • Wipe out the skillet, if needed, then add 1 tablespoon canola oil and heat over medium-high. Add the bok choy, scallions, garlic and jalapeño, if using. Season with salt and pepper and stir-fry, stirring frequently, until aromatic and barely crisp-tender, 2 to 3 minutes. Transfer to the bowl with the mushrooms.
  • Add the remaining 2 tablespoons canola oil to the skillet and heat over medium-high. Add the rice and cook, stirring occasionally, until toasted and toothsome, 4 to 5 minutes. Add the frozen peas, ginger, soy sauce, sesame oil and white pepper (if using), and stir until rice is evenly coated in soy sauce mixture, and no uncoated rice grains remain, 1 to 2 minutes.
  • Stir in the mushroom and bok choy mixture and the basil until basil is wilted, 1 to 2 minutes. Season to taste with salt and pepper then divide among bowls; serve hot.

6 ounces shiitake mushrooms, stems removed, caps thinly sliced
1/3 cup sugar
1/2 cup plus 5 teaspoons soy sauce
1/2 cup plus 5 teaspoons unseasoned rice vinegar
1 1/2 cups short-grain brown or white sushi rice
Kosher salt
2 tablespoons dried wakame (seaweed)
5 teaspoons spicy black bean paste
1 tablespoon honey
1 1/2 teaspoons toasted sesame oil
1 (14-ounce) package firm tofu, drained, patted dry, cut into 3/4-inch pieces
3 scallions, thinly sliced on a diagonal
1/4 cup coarsely chopped unsalted, roasted, skin-on peanuts
Tobiko (for serving; optional)

Steps:

  • Bring mushrooms, sugar, 1/2 cup soy sauce, 1/2 cup vinegar, and 1 cup water to a simmer in a small saucepan over medium-high heat and cook, stirring occasionally, until sugar is dissolved, about 5 minutes. Transfer mushrooms to a medium bowl with a slotted spoon. Let brine cool, then pour over mushrooms. Cover and chill at least 1 hour.
  • Meanwhile, rinse rice until water runs clear (this removes surface starch and keeps rice from getting gummy). Combine rice and 2 cups water in a medium saucepan, season with salt, and let sit 30 minutes.
  • Bring rice to a boil. Reduce heat to low, cover, and cook until tender, 30-35 minutes (you can also use a rice cooker). Remove from heat and let sit, covered, 15 minutes; fluff with a fork. Keep warm.
  • Soak wakame in 1/2 cup cold water in a small bowl until softened, 6-8 minutes. Drain and mix in a clean small bowl with black bean paste, honey, oil, remaining 5 tsp. soy sauce, and remaining 5 tsp. vinegar. Add tofu to spicy black bean shoyu, season with salt, and gently toss. Let sit 10 minutes to let flavors meld. Taste and season with more salt if needed.
  • Divide rice among bowls and spoon tofu mixture on top of rice. Arrange drained pickled shiitake mushrooms, scallions, peanuts, and some tobiko, if using, around tofu mixture.
  • Mushrooms can be pickled 5 days ahead. Keep chilled.

SHREDDED TOFU AND SHIITAKE STIR-FRY



Shredded Tofu and Shiitake Stir-Fry image

Shredding tofu on a box grater before stir-frying gives it a fluffy, light texture, and the smaller pieces readily absorb the complex, earthy mushroom flavor of the sauce. Unlike with many tofu dishes, you're not looking to sear the tofu here, just to warm it up in the sauce. The caramelized flavor is supplied by the shiitake mushrooms, which should be cooked until they are well browned and crisp-edged. If you can't find fresh lemongrass, you can leave it out.

1 (15-ounce) package firm tofu, drained
2 tablespoons soy sauce
1 tablespoon Chinese Shaoxing or dry sherry
Juice of 1/2 lime, plus lime wedges for serving
2 teaspoons toasted sesame oil
2 tablespoons peanut or grapeseed oil
7 ounces shiitake mushrooms, stems removed and caps thinly sliced (4 cups)
1/4 cup sliced scallion
1 stalk lemongrass, trimmed, outer leaves removed, inner core finely chopped (optional)
1 (1-inch) knob of ginger root, grated
1 large garlic clove, grated
1 small red chile, seeded and finely chopped
Salt, as needed
1/2 cup shelled edamame (defrosted if using frozen)
1/4 cup chopped soft herbs, such as cilantro, chives or basil

Steps:

  • Using the coarse holes of a box grater, shred the tofu. Spread tofu out on a clean kitchen towel to drain while you prepare the sauce and mushrooms.
  • In a small bowl, whisk together soy sauce, Shaoxing, lime juice and sesame oil.
  • Heat a large skillet over medium-high heat until it's very hot, then add the peanut oil; it should thin out on contact. Once the oil is hot, add the mushrooms and cook, tossing occasionally, until most of the mushroom liquid has evaporated and mushrooms are browned and slightly crisp, 8 to 12 minutes. Stir in the scallion, lemongrass, ginger, garlic, chile and a pinch of salt. Cook until softened, about 2 minutes.
  • Carefully transfer the tofu from the towel into the skillet. Toss in the edamame and the soy sauce mixture. Cook until mixture is heated through. Season with salt as needed. Remove from heat and stir in herbs. Serve with lime wedges.
