With spicy ginger and three kinds of fruit, this dessert has plenty of flavor, but saves time with prepared pie filling and ready-made cookies.

3/4 cup quick-cooking oats
3/4 cup crushed gingersnap cookies
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup butter or margarine, cut into small pieces
1 cup frozen unsweetened blueberries
1 cup frozen unsweetened raspberries
1/2 teaspoon ground ginger
1 can (21 oz) apple pie filling

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. In large bowl, combine all topping ingredients except butter. With pastry blender or fork, cut in butter until crumbly.
  • In large bowl, mix all fruit mixture ingredients; pour into baking dish. Sprinkle topping evenly over fruit.
  • Bake 35 to 40 minutes or until fruit mixture is bubbly and topping is golden brown. If necessary, cover with foil during last 15 to 20 minutes of baking to prevent excessive browning.

6 granny smith apples, peeled, cored, and cut into bite-sized chunks
2 cups berries (blueberries, strawberries, cranberries, or raspberries)
3/4 cup sugar
2 tablespoons flour
1 -2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cup old fashioned oats
2 tablespoons packed light brown sugar
2 tablespoons flour
3 tablespoons butter or 3 tablespoons margarine, softened

Steps:

  • Preheat the oven to 375°.
  • In a mixing bowl, combine the apples, berries, sugar, flour, cinnamon, and nutmeg; toss until well incorporated.
  • Spoon mixture into an ungreased 9-inch square baking dish.
  • To make the topping: in a small bowl, combine oats, brown sugar, and flour.
  • Add butter and stir until moist and crumbly.
  • Sprinkle topping over apple mixture.
  • Bake for 50-60 minutes or until filling is bubbly and topping is golden brown.
  • Serve warm or at room temperature.

2 cups frozen cherries (may use pitted fresh, sweet or tart)
1/2 cup brown sugar
1 teaspoon quick-cooking tapioca (not whole pearl)
1 1/2 cups rolled oats (or grape-nuts cereal)
1/4 cup unbleached white flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1 egg white
1 tablespoon vegetable oil (canola or other)
1 teaspoon pure vanilla extract
2 tablespoons orange juice (or unsweetened apple)

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, mix together the fruit layer ingredients. Pour the fruit evenly into a non-reactive 10 inch pie pan or 9 inch square baking dish and set aside.
  • In a large bowl, combine the oats, flour, brown sugar, and cinnamon.
  • In a seperate bowl, whisk together the egg white, oil, vanilla, and fruit juice and then stir into the dry ingredients until thoroughly combined.
  • Carefully spread the topping over the fruit (be sure to cover the fruit entirely).
  • Cover and bake for 20 minutes, then uncover and continue to bake for another 20 to 30 minutes, until the fruit is soft and bubbly and the topping is crisp and golden.

300 g frozen unsweetened raspberries or 300 g fresh raspberries
1/3 cup granulated sugar
2 tablespoons flour
1 -2 teaspoon cinnamon
1 cup quick-cooking rolled oats
1/4 cup brown sugar, packed
1 teaspoon cinnamon
1/4 cup margarine, softened

Steps:

  • In 2L (8 Cup) baking dish, combine apples and raspberries.
  • In small bowl, combine sugar, flour, cinnamon. Add to fruit and toss to mix.
  • For topping, combine rolled oats, sugar and cinnamon. With a pastry blender, cut in margarine until crumbly.
  • Sprinkle over fruit.
  • Bake at 350F for 55 min or microwave on high 15 minutes or until bubbling. Serve warm or cold.

Steps:

1/2 cup white sugar
1 cup quick-cooking oats
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter, MELTED
2 cups apples, chopped
1 cup blackberry
1 teaspoon lemon juice
1/2 teaspoon vanilla
1/2 cup white sugar
2 teaspoons ground cinnamon
2 tablespoons butter, each tablespoon cut into quarters

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease a 7x11-inch glass baking dish with cooking spray.
  • For the filling - In a large Ziploc bag put in cut up apples, lemon juice, vanilla, mix white sugar and cinnamon together then add to bag - agitated gently to mix all ingredients.
  • For the crisp - In a large bowl, combine brown & white sugar, oats, flour, salt, baking soda. Pour in the melted butter. Mix until crumbly.
  • Place half of crumb mixture in pan, lightly press into pan.
  • Spread the apples cinnamon filling evenly over crumb mixture.
  • Spread the blackberries evenly on top of the apples.
  • Sprinkle with remaining crumb mixture on top of the fruit.
  • Place butter quarters evenly spaced on top of crumb mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until golden brown.
  • Let cool, serve with vanilla ice cream for an unbeatable combination.
  • Lastly - Add other fruit as the mood strikes - berries (black, Marion, Boysen, rasp), pears (skinned), peaches (skinned) or mix and match. Fruit total volume should be 3 to 3½ cups.
