OLD FASHIONED GINGERBREAD CAKE



Old Fashioned Gingerbread Cake image

This is the easiest gingerbread cake you'll ever make and the best tasting too. The texture is excellent. A family favourite.

Provided by Crosby's Molasses

Number Of Ingredients 15

2 cups flour
1 ½ teaspoon baking soda
½ teaspoon salt
½ cup sugar
1 teaspoon ginger
1 teaspoon cinnamon
½ cup soft butter
¾ cup Crosby's Fancy Molasses
1 egg
1 cup boiling water
1/2 cup butter
1/2 cup lightly packed brown sugar
3 Tbsp. Crosby's Fancy Molasses
1 cup plus 3 Tbsp. 35% cream (whipping cream)
1 tsp. pure vanilla

Steps:

  • Preheat oven to 350 F
  • Grease and flour an 8"x 8" square pan (or line the pan with parchment paper.) *
  • Sift together dry ingredients in a large bowl.
  • Add the butter, molasses and egg and beat for two minutes or 300 strokes by hand. (This is a very old recipe...)
  • Add the boiling water.
  • Beat for another two minutes and turn into prepared pan.
  • Bake 50-55 minutes, or until cake springs back when lightly touched.

2 pints good quality vanilla ice cream
1 cup chunky peanut butter (recommended: Boo preferred Skippy)
1/4-1/3 cup milk or half-and-half, eyeball it
1/4 cup honey, eyeball it
1/4 teaspoon cinnamon
12 ginger snaps (recommended: Midel brand, Boo liked because they were extra crunchy)

Steps:

  • Place ice cream on the counter top to get soft. (Boo always liked hers mushy.)
  • Place peanut butter, milk or half-and-half and the honey in a small skillet and warm over low heat. Stir until smooth and season the sauce with a little cinnamon. Scoop ice cream into dishes and top with peanut butter sauce and jam the ginger snaps all around the bowl, getting the edges into the ice cream and sauce.

5 tablespoons butter, melted
2/3 cup cold water

Whipped cream

Steps:

  • Combine egg, sugar, molasses, butter and water; mix well. In a large bowl, stir together flour, baking soda, ginger and salt; add molasses mixture. Beat until well mixed. Pour into a greased 8-in. square baking pan. Bake at 350° until cake tests done, 20-25 minutes. Cut into squares; serve warm with whipped cream.

2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
1/2 cup sugar
1/2 cup butter, melted
2 cups flour
1 cup boiling water
2 eggs
powdered sugar (to garnish)
whipped cream (to garnish)
1 cup firmly packed light brown sugar
1/3 cup sugar
1/3 cup melted butter (no substitutes)
3 tablespoons flour
1 teaspoon vanilla
1 dash salt
1/4 teaspoon nutmeg
1 cup boiling water

Steps:

  • In a large bowl, mix molasses, baking soda, cinnamon, ginger and nutmeg.
  • Add sugar, butter, flour and boiling water.
  • Stir in beaten egg yolks.
  • Beat egg whites until stiff and fold into batter.
  • Pour into a greased ring mold or bundt pan.
  • Bake in a 350*F oven for 40 minutes or until done.
  • Cool.
  • Turn gingerbread out onto a cake stand and sift powdered sugar over the top.
  • Serve with hot caramel sauce and whipped cream For sauce; in a medium saucepan, combine sugars to melted butter and stir until sugars are dissolved.
  • Add flour, stirring constantly over medium heat.
  • Add vanilla, salt and nutmeg.
  • Add boiling water.
  • Cook for 10 to 15 minutes, stirring sauce until thickened.
  • Serve over gingerbread, or pool underneath.

1/2 cup pumpkin puree (canned ok)
1 egg
1/2 cup butter
1 1/4 cups light brown sugar

toasted chopped pecans (optional)

Steps:

  • Preheat oven to 350F.
  • Mix together flour and sugar.
  • Use a pastry blender to mix in butter until mixture resembles fine crumbs.
  • In a 9-inch square baking pan, place 1 3/4 cups of the mixture and press evenly along the bottom to form a crust.
  • Add pecans, baking soda, ginger, cinnamon, salt, and cloves to crumb mixture and stir well.
  • Mix in buttermilk, molasses, pumpkin and egg.
  • Pour batter on top of crust in the baking pan.
  • Bake at 350F for 40-50 minutes or until you can insert a toothpick in the center and it is clean when you remove it.
  • To prepare sauce, melt the butter in a saucepan and stir in the brown sugar and corn syrup.

  • Gradually add whipping cream and return to a boil.
  • Remove from heat.
  • To serve, spoon warm sauce over warm gingerbread.
  • If desired, place ice cream on top of gingerbread, spoon sauce over ice cream, and sprinkle with nuts.

3 cups sugar
2 cups heavy cream
1 1/2 sticks cold unsalted butter, cut into small pieces
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger

Steps:

  • Combine molasses, 1/2 cup water, and sugar in a medium saucepan. Heat over medium-high, gently stirring, until sugar has dissolved. Bring to a boil; cook until foaming reduces and bubbles begin to slow, 4 to 5 minutes (about 250 degrees on a thermometer). Remove from heat and carefully whisk in cream, butter, salt, and spices (mixture will splatter), stirring until butter is melted and combined. Let cool completely. Transfer to 6 seven-ounce jars. Sauce can be refrigerated in jars up to 2 weeks; gently reheat before serving.
