Serve your guests with these fig-walnut gingerbread bars that are made using Betty Crocker® cookie mix - a tasty holiday dessert.

1 pouch (1 lb 1.5 oz) Betty Crocker™ gingerbread cookie mix
1/2 cup butter, softened
1 egg
1 jar (11.5 oz) fig preserves
1/2 cup chopped dried Calimyrna figs
2 tablespoons packed brown sugar
1/2 cup chopped walnuts, toasted
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Line 8-inch square pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large bowl, stir cookie mix, butter and egg until soft dough forms. Reserve 2/3 cup dough. Press remaining dough in bottom of pan. Bake 15 minutes.
  • In small bowl, mix preserves, chopped figs and brown sugar. Spread over partially baked cookie crust. Stir walnuts into reserved dough; crumble over filling.
  • Bake 30 to 32 minutes or until golden. Cool completely in pan on cooling rack, about 2 hours. Use foil to lift out of pan. Cut into 4 rows by 4 rows. Sprinkle bars with powdered sugar.

1 cup unsalted butter, softened
1 cup packed brown sugar
3 large eggs, room temperature
1 cup molasses
2-1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground ginger
1-1/2 teaspoons aniseed, crushed
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup buttermilk
1 tablespoon lemon juice
Confectioners' sugar, optional
SAUCE:
12 ounces Calimyrna dried figs, cut into eighths
1 cup finely chopped walnuts
2 tablespoons walnut or canola oil
1 tablespoon aniseed, crushed
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1-3/4 cups water
1 cup sugar
2 tablespoons lemon juice
1/4 teaspoon salt

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in molasses (mixture will appear curdled)., In a small bowl, combine the flour, baking soda, ginger, aniseed, salt, cinnamon, allspice and cloves. Add to the creamed mixture alternately with buttermilk and lemon juice, beating well after each addition., Pour batter into a greased and floured 10-in. fluted tube pan. Bake at 350° until a toothpick inserted in the center comes out clean, 40-50 minutes., Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired., For sauce, in a large skillet, cook figs and walnuts in oil over medium heat for 4 minutes. Stir in the spices; cook until aromatic, 1-2 minutes longer., Stir in the water, sugar, lemon juice and salt. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 8-12 minutes, stirring occasionally. Cool to room temperature. Serve with gingerbread.

This was my favorite dessert when I was a little girl. I can remember clearly the smell of the gingerbread cooking in the oven--even now the smell bring goose bumps. Having two brothers I had to compete vigorously for my share of seconds. If I lost, my mother would always give me her piece when the the boys weren't looking. I don't have it any longer, but I remember finding this recipe many years later on a little scrap of paper in the pages of my mother's favorite cookbook.

2 cups sifted flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon ground cloves
1/2 cup wheat germ
2 eggs
1 cup buttermilk
3/4 cup molasses
1/3 cup vegetable oil
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1 cup boiling water
2 tablespoons butter
1 teaspoon grated fresh lemon rind
3 tablespoons lemon juice

Steps:

  • Gingerbread: Grease 9x9x2" baking pan.
  • Preheat oven to 350 degrees F.
  • Sift flour, sugar, baking soda, salt, cinnamon, ginger, and cloves into a large bowl.
  • Stir in the wheat germ.
  • Beat eggs in a medium size bowl until frothy.
  • Stir in buttermilk, molasses and oil, mixing well.
  • Stir liquid ingredients into dry ingredients, mixing well.
  • Pour into prepared pan.
  • Bake in oven for 35 minutes or until top springs back when pressed.
  • Cool in pan on wire rack.
  • Cut into squares.
  • Serve warm with Lemon Sauce.
  • Lemon Sauce: Combine sugar, cornstarch and salt in a small saucepan, mixing well.
  • Stir in boiling water and bring to boil again, stirring constantly.
  • Lower heat and simmer, stirring, until sauce is thickened and clear.
  • Stir in butter, lemon rind and juice.
  • Pour over warm Gingerbread.

8 eggs
5 cups molasses

2 tablespoons ground ginger

1 teaspoon salt
3 cups water
RAISIN SAUCE:
2-1/2 cups packed brown sugar
1/2 cup plus 2 tablespoons sugar
1/2 cup plus 2 tablespoons all-purpose flour
1 teaspoon salt
8 cups water
3 cups golden raisins
1/2 cup plus 2 tablespoons butter

Steps:

  • In a very large bowl, cream the shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in molasses. Combine flour, cinnamon, baking powder, ginger, baking soda and salt; add to creamed mixture alternately with water. Mix well., Transfer to four greased 13-in. x 9-in. baking pans. Bake at 350° for 30-40 minutes or until a toothpick comes out clean. Cool on wire racks., For sauce, in a Dutch oven, combine the sugars, flour and salt. Gradually stir in water. Bring to a boil, stirring constantly. Reduce heat; add raisins. Simmer for 10 minutes or until raisins are plump, stirring occasionally., Remove from the heat. Stir in butter until melted. Serve warm with gingerbread.

A delightful discovery I made in my Company's Coming 'Lunches' cookbook. The original recipe includes a lemon sauce, but we prefer brown sugar sauce with a generous dollop of whipped cream rather. Or a scoop of vanilla ice cream. Mmm, and the smell... **Update Aug '09: Forget brown sugar sauce! Make a double recipe as a sheet cake (bake for only 20 minutes @ 325) with a double recipe of Recipe#127144! I don't know why I haven't updated this sooner -- I've been making it this way for at least the last 2 years already!!

  • For cake: Beat egg in mixing bowl until frothy. Beat in cooking oil and molasses.
  • Add sugar, ginger, cloves, cinnamon and salt. Beat slowly to combine.
  • Dissolve baking soda in boiling water and add to batter. Slowly mix in flour.
  • Turn into greased 8x8 or 9x9 pan. Bake at 350°F for about 35-40 minutes or until an inserted toothpick comes out clean.
  • Serve warm with brown sugar sauce. (Freezes well).
  • For sauce: Mix brown sugar, flour and salt together well in medium saucepan. (This enables water to be mixed in with no lumps).
  • Stir in water and vanilla. Heat, stirring, over medium heat until sauce boils and thickens (makes about 2 1/2 cups). Serve warm.
