1 beef flank steak (1-1/2 pounds)
1 cup rice vinegar
1 cup soy sauce
1/4 cup packed brown sugar
2 tablespoons minced fresh gingerroot
6 garlic cloves, minced
3 teaspoons sesame oil
2 teaspoons Sriracha chili sauce or 1 teaspoon hot pepper sauce
1/2 teaspoon cornstarch
Optional: Sesame seeds and thinly sliced green onions

Steps:

  • Cut beef into 1/4-in.-thick strips. In a large bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add beef; turn to coat. Refrigerate, covered, 2-8 hours. Cover and refrigerate remaining marinade., Preheat air fryer to 400°. Drain beef, discarding marinade in dish. Thread beef onto 12 metal or soaked wooden skewers that fit into air fryer. In batches if necessary, arrange skewers in a single layer on greased tray in air-fryer basket. Cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-5 minutes, turning occasionally and basting frequently using 1/2 cup of reserved marinade. , Meanwhile, to make glaze, bring remaining marinade (about 3/4 cup) to a boil; whisk in 1/2 teaspoon cornstarch. Cook, whisking constantly until thickened, 1-2 minutes. Brush skewers with glaze just before serving. If desired, top with sesame seeds and sliced green onions.

1 lb sirloin steak, cut into 1 inch cubes
1/2 cup vegetable oil
1/2 cup Burgundy wine
2 large garlic cloves, minced
2 tablespoons crystallized ginger, finely chopped
2 tablespoons ketchup
2 tablespoons molasses
1/2 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon pepper
3/4 medium green pepper, cut into 1 inch pieces
8 mushrooms, left whole unless large, halved otherwise
1/2 onion, cut in wedges

Steps:

  • Place the cut up meat in a shallow dish. Combine oil and next 8 ingredients; stirring well. Pour marinade over meat. Cover and marinate in the refrigerator for 8 hours.
  • Remove the meat from the marinade, reserving marinade. Place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer for 5 minutes. Set aside.
  • Alternate meat and veggies on skewers. Grill over medium-hot coals for 10 to 12 minutes or to desired degree of doneness, turning and basting frequently with the reserved and heated marinade.

Marinade Ingredients:
1/3 cup extra virgin olive oil
1/3 cup soy sauce
3 tablespoons red wine vinegar
1/4 cup honey
2 cloves garlic, minced

Kebab Ingredients:
1 1/2 pounds top sirloin steak, cut into 1 1/2-inch cubes
1 large bell pepper

Steps:

  • Marinate the meat: Mix the marinade ingredients together in a bowl and add the meat. Cover and chill in the fridge for at least 30 minutes, preferably several hours or even overnight. (Heck, I've kept the meat marinating for a couple days, still great.)
  • Soak skewers in water: Soak the wood or bamboo skewers in water for at least 30 minutes before grilling. This will help prevent them from completely burning up on the grill.
  • Thread the meat and veggies onto the skewers: Cut the vegetables into chunks roughly the width of the beef pieces. Taking care not to poke yourself, thread the meat and vegetables onto double bamboo skewers. One way to do this safely is to put the piece that you are trying to pierce on a cutting board, and then push the skewers through the piece to the board. Using double skewers will help you turn the kebabs on the grill. If you keep a little space between the pieces, they will grill more evenly. Paint the kebabs with some of the remaining marinade.
  • Grill on high, direct heat: Prepare your grill for high, direct heat. Grill for 8 to 10 minutes, depending on how hot your grill is, and how done you would like your meat, turning occasionally.
  • Let rest: Let the meat rest for 5 minutes before serving.

1 pound beef sirloin steak or round steak 1 1/4 inches thick
2 bunches green onions
Ginger-Spice Marinade:
1/4 cup soy sauce
1/4 cup water
2 tablespoons honey
1/2 teaspoon grated ginger root or 1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1 clove garlic, finely chopped

Steps:

  • Prepare Ginger-Spice Marinade in shallow nonmetal dish or heavy-duty resealable plastic bag. Trim fat and bone from beef. Cut beef into 1 1/2-inch strips cut each strip into 1/4-inch pieces. Add beef to marinade, stirring to coat with marinade. Cover dish or seal bag and refrigerate at least 1 hour but no longer than 24 hours. Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Trim green tops from onions and reserve for another use. Cut onions into 1-inch pieces. Remove beef from marinade reserve marinade. Thread beef and onion pieces alternately on each of four 15-inch metal skewers, leaving space between each. I acquired both my nickname and the idea for this recipe while working at an awful franchised restaurant in my college years. These are great for Summertime cookouts at tailgate partys or just for get-togethers. The sauce is fairly versatile and can be used for an array of different meats and applications (I originally used the sauce for chicken wings). For people such as myself who have acid reflux I have indicated some ingredients that can be left out in order to help curb the heartburn.

1/2 cup KRAFT Zesty Italian Dressing
1 Tbsp. finely chopped or grated fresh gingerroot
1/2 tsp. crushed red pepper
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Skewer meat cubes onto each of 16 small wooden skewers. Place in baking dish. Mix dressing, gingerroot and red pepper in small bowl. Brush half of the dressing mixture on meat. Cover. Refrigerate 1 hour to marinate. Refrigerate remaining dressing mixture.
  • Preheat broiler. Remove skewers from marinade; discard marinade. Place skewers on foil-covered baking sheet. Sprinkle with cheese. Broil skewers, 4 to 6 inches from heat source, 8 to 10 min. or until meat is cooked through, turning skewers after 4 min.
