1 1/2 teaspoons minced garlic
1 teaspoon minced lemongrass
2 tablespoons fresh cilantro, chopped
1/2 cup light brown sugar
1 cup light soy sauce
1 tablespoon sake
1/2 tablespoon rice vinegar
3 tablespoons sweet chili sauce
1 teaspoon sesame oil
sesame seeds (to garnish)
cilantro (to garnish)

Steps:

  • Combine ginger, garlic, lemongrass, cilantro, brown sugar, soy sauce, sake, vinegar, chili sauce and sesame oil.
  • Place salmon fillets in mixture and marinate for 30 minutes.
  • Add oil to a nonstick saute pan over medium-high heat.
  • Add marinated fish and cook until crisp and golden on each side and cooked through.
  • To serve, garnish with sesame seeds and cilantro.

12 oz skinless salmon
1 tablespoon olive oil
4 cloves garlic, minced
2 teaspoons ginger, minced
½ teaspoon red pepper
1 tablespoon olive oil
⅓ cup less sodium soy sauce
⅓ cup honey

Steps:

  • Place salmon in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the salmon. Save the other half for later.
  • Let the salmon marinate in the refrigerator for at least 30 minutes.
  • In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
  • Remove salmon from pan. Pour in remaining marinade and reduce.
  • Serve the salmon with sauce and a side of veggies. We used broccoli.
  • Enjoy!

1/4 cup olive oil, plus more for the skillet
3 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon minced ginger
1 tablespoon maple syrup
1 tablespoon Chinese mustard
1 tablespoon sriracha
2 cloves garlic, minced
4 skin-on salmon fillets
1 bunch scallions, chopped, for topping

Steps:

  • Combine the olive oil, soy sauce, sesame oil, ginger, maple syrup, Chinese mustard, sriracha and garlic in a large bowl. Pour one-third into a small bowl and reserve. Add the salmon fillets to the large bowl. Marinate, covered, in the refrigerator for 30 minutes.
  • Heat a large nonstick skillet over medium-high heat. Add a drizzle of olive oil to coat the skillet. Add the salmon skin-side down and cook until crispy, about 5 minutes. Baste the flesh side with the reserved marinade. Flip and cook until the salmon is cooked through and the flesh side is golden brown, an additional 3 to 4 minutes. Top with the scallions.

4 green onions, thinly sliced
4 (5-ounce) salmon filets
2 tablespoons honey
1 teaspoon soy sauce

1/2 teaspoon sesame seeds

Steps:

  • To make the glaze, whisk together honey, soy sauce, sesame oil, Sriracha, ginger and sesame seeds in a small bowl; set aside. In a medium bowl, whisk together olive oil, soy sauce, rice vinegar, sesame oil, brown sugar, garlic, ginger, sesame seeds and green onions. In a gallon size Ziploc bag or large bowl, combine ginger marinade and salmon filets; marinate for at least 30 minutes to overnight, turning the bag occasionally. Preheat oven to 400 degrees F. Lightly coat a 9×13 baking dish with nonstick spray. Place salmon filets along with the marinade onto prepared baking dish and bake until the fish flakes easily with a fork, about 20 minutes. 2 tbsp light soy sauce
1 tbsp rice wine vinegar
thumb-sized piece of ginger , finely grated
1 garlic clove , finely grated
2 skinless salmon fillets (about 140g each)
1 courgette , ends trimmed and spiralized into thin noodles
1 carrot , peeled, ends trimmed and spiralized into thin noodles
2 bulbs of pak choi (about 200g), leaves separated
1 red chilli , thinly sliced, deseeded if you like
Thai jasmine rice , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Before you prep the veg mix together the soy, vinegar, ginger, garlic and some black pepper in a bowl. Add the salmon fillets, cover and leave to marinate for 10 mins at room temperature or up to 2 hrs in the fridge.
  • Tear two large sheets of baking parchment, big enough to encase the fish and vegetables in and put onto a baking tray.
  • Divide the vegetables between the centre of the paper and top each with a marinated salmon fillet and the sliced chilli. Bring the sides of the parchment up over the salmon and pour half of the remaining marinade over each fillet then scrunch the paper tightly together to seal the fish in a parcel.
  • Roast for 20-25 mins, until the salmon is just cooked through and flakes into large pieces. Serve the fish in the parcel with some rice, if you like.

3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
2 cloves garlic (minced (about 2 teaspoons))
2 teaspoons grated fresh ginger
1 teaspoon honey
1/2 teaspoon garlic-chili paste (sriracha, or 1/4 teaspoon red pepper flakes)
1 pound skin-on salmon fillet* (at room temperature, cut into 3-4 portions)
2 teaspoons extra-virgin olive oil
Chopped green onions (for serving)
Toasted sesame seeds (for serving)

Steps:

  • Place a rack in the center of your oven and preheat to 425 degrees F. Place a large cast-iron skillet or other sturdy, ovenproof skillet on a burner set to high and heat for at least 10 minutes. You want the pan screaming hot or the salmon will stick to it.
  • In a small saucepan, stir together the soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium high, then remove from heat and stir in the honey and chili paste. Remove a few spoonfuls of the cooked glaze in a separate bowl for serving.
  • Drizzle the salmon with the olive oil and brush so that it is evenly coated. Place the salmon skin-side up on the hot skillet. Let cook for about 3 minutes, totally undisturbed, until the salmon forms a nice crust. When the salmon turns opaque on the sides and starts to turn opaque on top, use a flexible spatula to flip the salmon so that it is skin-side down. Brush or spoon the remaining glaze in the saucepan all over the top. Place the skillet immediately into the oven and let cook for 6 minutes (the salmon will appear a little undercooked in the center but will finish cooking as it rests). Remove from the oven and cover with foil. Let rest 4 to 5 minutes. Serve immediately, topped with reserved glaze, chopped green onion, and sesame seeds.

70 g babycorn (halved length-ways)

Steps:

  • Preheat your oven to 220°C/450°F/Gas 7. Mix all the sauce ingredients together (except the vinegar).
  • Pour two thirds of the sauce over the salmon fillets. Marinade in the fridge for 30 minutes.
  • Put in the oven and bake for 15 minutes.
  • Stir fry any vegetables that you are using along with the noodles (boil first if using dried noodles).
  • Add the rice vinegar to the remaining sauce and heat gently.
  • Serve the salmon on top of the noodles with the remaining sauce. Top with sesame seeds, sliced chillies and chopped spring onions (scallions).

Steps:

  • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
  • Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.

  • Make the Sauce; Mix 2 tablespoons of the marinade with the cilantro and mix. Set aside.

¾ cup fresh orange juice
1 orange, zested

Steps:

  • In a medium bowl, whisk together honey and hot water until the honey dissolves. Add the ginger, garlic, orange juice, orange zest, soy sauce, rice vinegar, red pepper flakes, and ½ teaspoon salt, and whisk to combine.
  • Arrange the salmon fillets in a 10-cup FoodSaver Preserve and Marinate Container. Pour most of the marinade over the salmon, reserving about ½ cup. Place the lid on the container. Turn the valve so the arrow points to the Marinate/Open position.
  • On the FoodSaver vacuum sealer, turn the latch to the Operate position and pull the Built-in Handheld Sealer from the appliance. Remove the liquid reservoir from the Handheld Sealer and insert the tip into the port on the container lid.
  • Press the Mode button on the vacuum sealer until the indicator light next to Marinate is illuminated. Press the Handheld button to marinate. The marinating process will start automatically and will take 12 minutes.
  • While the salmon is marinating, preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Use tongs to remove the salmon from the container and place on the prepared baking sheet. Sprinkle the salmon with the remaining ½ teaspoon salt. Discard the salmon marinating liquid.
  • Roast the salmon for 8-10 minutes, or until it flakes easily when nudged with a fork.
  • While the salmon roasts, pour the reserved ½ cup marinade into a small pot and place over medium heat. Bring to a simmer. Continue to simmer until sauce reduces and thickens slightly, about 5-6 minutes. Once it has reduced, remove the pot from the heat.
  • Spoon the sauce over the salmon, then garnish with chopped cilantro. Serve with steamed rice and broccoli.
  • Save any leftover salmon in a Preserve and Marinate Container on the Preserve mode.

ORANGE-GINGER GLAZED SALMON

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)

Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. 4 (6 -8 ounce) salmon fillets (or other firm fish such as tuna, swordfish or halibut)
1/3 cup soy sauce
1/2 lime, juice of
1 teaspoon fresh ginger, finely minced
1 garlic clove, finely minced
4 tablespoons vegetable oil, divided
1 tablespoon rice wine vinegar
1 tablespoon honey
1/8 teaspoon black pepper
1/2 teaspoon hot sauce
1 lb linguine (can use any long pasta)
2 tablespoons vegetable oil
1/2 red bell pepper, thinly sliced
1/4 lb sugar snap pea
1/2 cup carrot, shredded
1 small onion, halved then thinly sliced
3 garlic cloves, finely chopped
1 tablespoon ginger, finely chopped
1/4 cup soy sauce
1/2 cup vegetable broth or 1/2 cup chicken broth

Steps:

  • Ginger-Soy Salmon: Place the salmon in a shallow baking dish or large pie plate. Whisk together all of the remaining ingredients but only 2 tablespoons of the vegetable oil. Pour the mixture over the salmon and turn the salmon to coat. Let marinate in the refrigerator for 20 - 30 minutes, turning once. Note: Can place fish in ziplock bag with marinade and massage to coat evenly.
  • Preheat a large non-stick skillet over medium-high heat and add the remaining 2 tablespoons of vegetable oil. Cook the salmon for 3-4 minutes per side. Serve each piece of salmon atop Asian-Style Noodles.
  • Asian-Style Noodles: Cook the pasta 1 minute shy of the package directions.
  • In the meantime, heat a large skillet or wok over med-high heat. Add the vegetable oil until it starts to smoke. Add the bell peppers and snap peas until they start to brown a little, about 2 minutes. Add the carrots and onion and cook 2 minutes. Reduce the heat to medium and add the garlic and ginger and cook one minute, stirring constantly so the garlic doesn't burn. Add the soy sauce and vegetable broth and let cook another 2 minutes. Add the pasta and cook another 2 minutes. Divide among four plates or shallow bowls, top with Asian-Marinated Salmon.

⅓ cup brown sugar, divided
2 teaspoons lemon pepper, divided
1 teaspoon garlic powder, divided
⅓ cup low sodium soy sauce
1 tablespoon olive oil
1 (1 inch) piece fresh ginger root, minced
⅓ cup orange juice

Steps:

  • Rub salmon with about 1 tablespoon brown sugar. Lightly sprinkle with lemon pepper and garlic powder; rub seasoning into fish.
  • Into a small saucepan set over medium heat, pour soy sauce and olive oil. Stir in ginger and remaining brown sugar, lemon pepper, and garlic powder. Bring to a gentle simmer, stirring constantly until sugar has dissolved. Remove from heat, stir in orange juice.
