GRILLED SOY, GINGER AND LIME TOFU STEAKS WITH CHARRED BABY BOK CHOY

Grilled Soy, Ginger and Lime Tofu Steaks with Charred Baby Bok Choy image

These zesty marinated tofu steaks will become a summertime cookout favorite. Starting with well-dried tofu, adding brown sugar to the marinade and cooking slowly over medium heat helps create a crisp and flavorful crust on the tofu without drying out the center. Topped with extra marinade and sliced scallions and served with charred baby boy choy, this is a deliciously satisfying meal for all.

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 12

One 14-ounce block extra-firm tofu, drained and sliced into eight 1/2-inch-thick steaks
Kosher salt and freshly ground black pepper
1/3 cup low-sodium soy sauce or tamari
1/4 cup fresh cilantro leaves, roughly chopped
1/4 cup lime juice (from about 2 limes)
2 tablespoons light brown sugar
1 tablespoon chopped fresh ginger
2 cloves garlic, minced
2 scallions, whites finely chopped and green tops sliced thin
4 heads baby bok choy, halved lengthwise through the stems
3 tablespoons extra-virgin olive oil, plus more for the grill
2 tablespoons toasted sesame seeds

Steps:

  • Put the tofu steaks on a paper towel-lined rimmed baking sheet and top with more paper towels, pressing gently to remove excess moisture. Remove the paper towels and towel and sprinkle the tofu with salt and pepper on both sides.
  • Stir to combine the soy sauce, cilantro, lime juice, brown sugar, ginger, garlic and scallion whites in a medium bowl. Pour 1/3 cup of the marinade over the tofu steaks, flipping to coat both sides. Reserve the remaining marinade for serving.
  • Put the bok choy on another rimmed baking sheet and brush all sides with olive oil and sprinkle with salt and pepper.
  • Prepare a grill for medium heat and brush the grates of the grill with oil.
  • Put the tofu steaks and bok choy, cut-sides down, on the grill at an angle across the grates. Close the lid of the grill and cook for 5 minutes, then rotate both the tofu and the bok choy 90 degrees and cook another 5 minutes with the lid closed. Flip the tofu steaks and bok choy and cook for another 10 minutes with the lid closed, rotating 90 degrees halfway through to create crosshatch grill marks.
  • Remove the tofu and bok choy to a platter. Spoon the reserved marinade over the tofu and bok choy and sprinkle the tofu steaks with the scallion greens and toasted sesame seeds.

Time 45m

Number Of Ingredients 12

24 ounces Extra Firm Tofu ((680g) (2 blocks of 12 ounces (340g) each))
1/2 Tbsp Sesame Oil (For Frying)
1 Tbsp Sesame Oil
2 Tbsp Soy Sauce
1 Tbsp Tomato Paste
2 Tbsp Maple Syrup
1 Clove Garlic (Crushed)
1/2 tsp Liquid Smoke
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Salt
1/4 tsp Ground Black Pepper

Steps:

  • Press the tofu. Put the tofu on to press for 30 minutes. Ideally use a tofu press but if you don't have one then place the tofu onto a plate with another plate on top of it and then stack something heavy on top like heavy books or a heavy pot.
  • Prepare the marinade sauce. While the tofu is pressing add sesame oil, soy sauce, tomato paste, maple syrup, crushed garlic, liquid smoke, garlic powder, onion powder, salt and ground black pepper to a measuring jug and whisk together until well mixed.
  • Marinate the tofu steaks. When the tofu is finished pressing, slice it into four rectangular steaks. Place the steaks into a shallow tray and brush all sides with the marinade sauce and leave to marinate for 15 minutes.
  • Heat a grill pan on medium heat. When hot, brush it with sesame oil.
  • Grill the tofu steaks. Add two tofu steaks to the hot grill pan and let them cook for 3 minutes. They should stick to the pan when they first go in, this is fine. After 3 minutes they should release easily from the pan. Flip them over and cook on the other side for 3 minutes. They should now have nice straight grill lines on them.
  • Brush with marinade sauce. When the tofu steaks are cooked, use some leftover marinade sauce to brush the steaks on both sides and then remove them from the pan.
  • Repeat with the next two tofu steaks.
  • Serve with veggies, salad or chips or topped with vegan peppercorn sauce.

GRILLED OR ROASTED TOFU SATAY

Grilled or Roasted Tofu Satay image

Provided by Food Network

Categories     appetizer

Yield Serves 6

Number Of Ingredients 14

2 tablespoons tamari soy sauce
2 tablespoons Asian sesame oil
2 tablespoons sherry
2 pounds extra-firm tofu, sliced 1 inch thick and patted very dry, then cut into 1-inch cubes and patted again
1 red bell pepper, cut into 1-inch squares
3/4 cup canned coconut milk (see Tip)
1/2 cup natural-style peanut butter, smooth or chunky
2 garlic cloves, minced
1 1/2 teaspoons curry powder
1 1/2 tablespoons brown sugar
1 tablespoon lime juice
1 tablespoon canola oil
1 1/2 tablespoons tamari soy sauce
Dash cayenne pepper

Steps:

  • Combine the marinade ingredients in a large bowl. Add the dry tofu and red pepper and toss gently with a rubber spatula to coat evenly. Let marinate 30 minutes or up to 8 hours. Refrigerate if longer than 1 hour.
  • Prepare the grill or preheat the oven to 450 degrees.
  • To make the sauce, place all the sauce ingredients in a food processor and blend until smooth. Pour into a decorative serving bowl.
  • Remove about 1/3 cup of the sauce and drizzle it over the tofu. Use the rubber spatula to toss the tofu gently with the sauce. If you are grilling the satay, thread the tofu and red peppers on skewers. (Bamboo skewers must be soaked for 30 minutes.) If you are roasting the tofu in the oven, place it in 1 layer in a large, shallow baking dish such as a 9 x 13-inch lasagna pan. Use 2 pans if one pan isn't large enough.
  • Cook the tofu on the hot grill at least 20 minutes, turning it occasionally, or roast in the oven for 25 minutes. The tofu is done when it is a deep golden brown. Let the tofu cool to room temperature before serving. Serve alongside a bowl of sauce for dipping.
  • Tip: Canned coconut milk sometimes separates so that there is a thick, pasty mass at the top of the can and thin liquid on the bottom. Also, if the can has been kept in a cool cupboard, the milk will appear solid rather than liquid. In either case, stir the coconut milk before measuring it. Once heated, the coconut milk will thin out.

GRILLED SESAME TOFU

Grilled sesame tofu image

Tofu soaks up the flavors of the marinade and then grills up to be nicely browned on the outside and creamy inside. This recipe requires draining time of 1-2 hours and a 24 hour marinating time. From the Chicago Trib

Categories     Lunch/Snacks

Time 42m

Yield 4 serving(s)

Number Of Ingredients 12

2 (14 ounce) packages extra firm tofu
1/2 cup soy sauce
1/2 cup red wine
1/2 cup unseasoned rice vinegar
1/2 cup sesame oil
1/4 cup extra virgin olive oil
2 tablespoons hot chili oil, to taste
1 tablespoon minced garlic
salt
1/2 cup sesame seeds, preferably black
8 green onions, including green tops
vegetable oil, for brushing

Steps:

  • Drain tofu; slice each block horizontally in half, arrange in a single layer on a baking sheet or tray lined with several thicknesses of paper toweling.
  • Cover with more paper toweling and a second baking sheet or cutting board; top with a heavy weight (such as bricks or canned foods); let stand 1-2 hours to remove excess moisture.
  • Combine soy sauce, wine, vinegar, sesame oil, olive oil, chili oil, garlic and salt to taste in a non-reactive bowl; mix well and set aside.
  • Cut each piece of drained tofu into 4 rectangles; arrange in a shallow non-reactive container, pour marinade over tofu.
  • Cover; refrigerate, turning occasionally, for at least 24 hours or up to 6 days.
  • Return to room temperature before cooking.
  • Prepare grill for moderate direct-heat cooking.
  • Place 8 bamboo skewers in a shallow container and cover with water; set aside to soak, about 30 minutes.
  • Place sesame seeds over medium heat in a small skillet; toast, shaking pan or stirring frequently, until fragrant, about 5 minutes, and pour onto a plate to cool.
  • Remove tofu from marinade, reserving marinade.
  • Cut each onion into 3 pieces of equal length; working with one onion at a time, beginning with root end, thread 3 onion pieces lengthwise onto soaked skewers, alternating them with 2 pieces of tofu; thread onion pieces in order to simulate look of a whole onion.
  • Or, you can just skip the onions and thread tofu onto skewers.
  • Lightly brush grill rack with oil.
  • Place skewered tofu on rack; cook, turning frequently and brushing with marinade, until lightly browned on all sides, 12-15 minutes.
  • To serve, sprinkle tofu with toasted sesame seeds; arrange on warmed plates.
