THAI PRAWN, GINGER & SPRING ONION STIR-FRY



Thai prawn, ginger & spring onion stir-fry image

This stir-fry has a welcome spicy kick. Once you've made the paste, it takes only 10 minutes to cook

200g raw, peeled tiger prawns from a sustainable source
1 green Thai chilli, chopped
3 garlic cloves, 1 crushed and 2 finely sliced
1 bunch coriander, leaves and stalks separated
1 tbsp caster sugar
juice 1 lime
3 tbsp fish sauce
2 tbsp groundnut oil
3cm piece ginger, finely sliced, then shredded
8 spring onions, finely sliced
1 red pepper, thinly sliced
85g water chestnuts, sliced
100g beansprouts
1 tbsp soy sauce
egg or rice noodles, to serve
lime wedges, to serve

Steps:

  • Put the prawns in a bowl. Put the chilli, garlic, coriander stalks (snip these up using scissors first) and caster sugar in a spice grinder or small food processor and whizz together. Add half of the lime juice and the fish sauce, then pour this over the prawns.
  • Heat 1 tbsp oil in a wok, add the ginger and spring onions and fry for 1 min. Add the red pepper and fry for 1 min, until the pepper starts to soften. Add the water chestnuts and bean sprouts, and toss together until the bean sprouts start to wilt. Add the soy sauce and a really good grind of black pepper, then tip the lot into a serving dish.
  • Heat the remaining oil in the wok and add the prawns, lifting them out of their juices. Toss for 1-2 mins until they turn pink, add the marinade and swirl the wok quickly, then tip the lot onto the veg. Snip over the coriander leaves and sprinkle on the remaining lime. Serves over noodles with extra lime for squeezing over.

1 lb shrimp, 16/20-count peeled and deveined
2 teaspoons sesame oil
1 tablespoon Gourmet Gardens™ Garlic Paste
1 tablespoon Gourmet Gardens™ Ginger Paste
5 tablespoons sweet chili sauce
2 teaspoons soy sauce
2 teaspoons rice wine vinegar
1 tablespoon Gourmet Gardens™ Ginger Paste
2 tablespoons canola oil, divided
1 teaspoon sesame oil, divided
½ teaspoon red pepper flakes
kosher salt, to taste
½ yellow onion, thinly sliced
1 head broccoli, cut into small florets, including leaves
1 red bell pepper, seeded and thinly sliced
2 scallions, cut into 1-inch (2 1/2 cm) pieces
8 oz mushroom, such as cremini or shiitake, stemmed, thinly sliced
1 medium carrot, peeled and thinly sliced
½ head baby bok choy, bottom removed and larger leaves halved lengthwise
kosher salt, to taste
2 tablespoons salted peanut, chopped
2 scallions, thinly sliced

Steps:

  • In a medium bowl, toss the shrimp with sesame oil and the Gourmet Gardens™ Garlic and Ginger Pastes. Let marinate for 10 minutes.
  • Make the sweet ginger chili sauce: In a small bowl, whisk together the chili sauce, soy sauce, vinegar and the Gourmet Garden™ Ginger Paste. Set aside.
  • In a wok or large skillet, heat 1 tablespoon canola oil and ½ teaspoon sesame oil over medium-high heat. Add the shrimp to the pan in a single layer and season with salt and the red pepper flakes. Cook the shrimp for about 2 minutes per side, until just cooked through. Transfer to a plate and set aside.
  • Add the remaining tablespoon of canola oil and ½ teaspoon sesame oil to the pan and reduce the heat to medium. Add the onion and sauté for about 3 minutes, until softened. Add the broccoli and cook for about 5 minutes, until starting to soften. Add the bell pepper and scallions and continue to cook until the peppers start to soften, about 3 minutes. Add the mushrooms and cook until soft, about 3 minutes more. Add the bok choy and carrots and cook until the bok choy is wilted, 2-3 minutes. Season with the salt.
  • Return the shrimp to the pan and add the sweet ginger chili sauce, tossing to combine.
  • Divide the stir fry between 2 bowls and garnish with the peanuts and thinly sliced scallions. Serve immediately.

This is from the local Western Australia newspaper. After making this we made some changes - the original recipe called for a 1/4 cup each of mint and coriander (cilantro) leaves. We have also added some cornflour and changed the direction a little. The preparation time allows for peeling prawns.

2 tablespoons vegetable oil
1 kg prawns (raw large peeled down to the last joint and deviened, I prefer to totally peel)
1 tablespoon garlic (minced or crushed)
2 tablespoons fresh ginger (finely chopped or grated)
1 red chile (chopped with or without seeds to your taste)
1 cup chicken stock
2 tablespoons light soy sauce
4 spring onions (scallions cut into 4 cm lenghts)
1 teaspoon cornflour (corn starch)
1 tablespoon water
1/8 cup basil leaves (roughly chopped)
1/8 cup oregano leaves (roughly chopped)
steamed rice, to serve

Steps:

  • Heat a wok to very hot and add the vegetable oil.
  • Blend water and cornflour.
  • Add the prawns, garlic, ginger and chilli and stir-fry until the prawns change colour.
  • Remove with slotted spoon and set to one side.
  • Add the stock and bring to the boil, add the soy sauce and the blended cornflour/water mix, stir until thickens.
  • Add the spring onions and the prawns and heat through.
  • Fold through the herbs and serve with steamed rice.

2 tablespoons oil
1 kg raw king prawns, peeled, deveined & butterflied, tails left intact
3 -4 garlic cloves, finely chopped
5 cm piece fresh ginger, cut into matchsticks
2 -3 small red chilies, seeded & finely chopped
6 cilantro roots, finely chopped, plus a few leaves to garnish
8 spring onions, cut into short lengths
1/2 red capsicum
2 tablespoons lemon juice
1/2 cup white wine (4fl oz)
2 teaspoons crushed palm sugar
2 teaspoons fish sauce

Steps:

  • Heat the wok until very hot, add the oil and swirl to coat.
  • Stir-fry the prawns, garlic, ginger, chilli and cilantro root in two batches for 1-2 minutes over high heat, or until the prawns turn pink. Remove all the prawns from the wok and set aside.
  • Add the spring onion and capsicum to the wok and cook over high heat for 2-3 minutes, then add the lemon juice, wine & palm sugar.
  • Cook until the liquid has reduced by two thirds, add the prawns, sprinkle with fish sauce and toss to heat through.
  • Garnish with the coriander (cilantro) leaves and serve.

10 sea scallops, halved

chopped fresh chives for garnish
salt and pepper to taste

Steps:

  • Bring the wine, vegetable stock, ginger, and garlic to boil in a skillet. Mix in the carrot and leek, and reduce heat to low. Simmer 5 minutes. Mix in scallops and prawns. Stir in the butter cubes. Continue cooking until butter is melted and scallops and prawns are opaque. Sprinkle with chives, and season with salt and pepper to serve.

100g folded rice noodles (sen lek)
zest and juice 1 small orange
1½-2 tbsp red curry paste
1-2 tsp fish sauce
2 tsp light brown soft sugar
1 tbsp sunflower oil
25g ginger, scraped and shredded
2 large garlic cloves, sliced
1 red pepper, deseeded and sliced
85g sugar snap peas, halved lengthways
140g beansprouts
175g pack raw king prawns
handful chopped basil
handful chopped coriander

Steps:

  • Put the noodles in a bowl and pour over boiling water to cover them. Set aside to soak for 10 mins. Stir together the orange juice and zest, curry paste, fish sauce, sugar and 3 tbsp water to make a sauce.
  • Heat the oil in a large wok and add half the ginger and the garlic. Cook, stirring, for 1 min. Add the pepper and stir-fry for 3 mins more. Toss in the sugar snaps, cook briefly, then pour in the curry sauce. Add the beansprouts and prawns, and continue cooking until the prawns just turn pink. Drain the noodles, then toss these into the pan with the herbs and remaining ginger. Mix until the noodles are well coated in the sauce, then serve.
