Time 1h

Number Of Ingredients 8

1/4 cup plus 2 tablespoons low-sodium soy sauce

PORK SHOGAYAKI (GINGER PORK)

Pork Shogayaki (Ginger Pork) image

Pork Shogayaki (生姜焼き, ginger pork) is a thinly sliced sautéed pork full of ginger flavour, which makes the sauce so tasty. It is one of the most popular recipes on the lunch menu as well as the bento box (Japanese lunch box). It is very simple to make and excellent for a weekday dinner with a bowl of rice.

Provided by Yumiko

Categories     Main

Time 20m

Number Of Ingredients 12

300 g (10.6oz) pork sliced thinly to 2-3mm (⅛") thick (note 1)
2 tsp sake ((Japanese rice wine))
1 tsp ginger juice ((squeeze juice out of grated ginger))
1 tbsp oil
2 tbsp sake ((Japanese rice wine))
1 tbsp mirin
1 tbsp soy sauce
1 tsp sugar
1 tbsp grated ginger
160 g (5.6oz) shredded cabbage
4 cherry tomatoes
6 broccoli florets

Steps:

  • (this step is optional) Using the tip of a sharp knife, cut the connecting tissue (the tissue separating red meat and fat) embedded in the meat. This will prevent the meat from curing when cooked.
  • Sprinkle 2 teaspoons of sake and 1 teaspoon of ginger juice over the pork slices, coat well and leave for 10 minutes. This will tenderise the meat and removes meaty smell.
  • Mix ginger sauce ingredients in a bowl.
  • Heat oil in a non-stick (preferred) frypan over medium high heat.
  • Place the meat in the frypan without overlapping (cook in batches if required) and cook for about 1-2 minutes or until the bottom side is golden and the edges start to cook.
  • Turn it over and cook further 1-2 minutes. If cooking in batches, transfer the cooked meat onto a plate and cook the remaining meat.
  • Reduce the heat to medium. Return all the cooked meat to the frypan and add the ginger sauce to the pan.
  • Cook for about 15-30 seconds, turning the pork slices over to ensure the meat is coated with the sauce. When the sauce is reduced to about 1-2 tablespoons (note 3), turn the heat off.
  • Place the vegetables on one side of the plate. Place pork slices and pour the sauce in the frypan over the pork.

PORK AND GINGER POT STICKERS

Pork and Ginger Pot Stickers image

Provided by Ming Tsai

Categories     appetizer

Time 1h40m

Number Of Ingredients 17

2 cups chopped napa cabbage
1/2 tablespoon salt
1/2 pound ground pork (Don't get lean pork, the fat is good for juicy and flavorful dumplings)
2 tablespoons minced ginger
1 1/2 tablespoons minced garlic
2 tablespoons thin soy sauce
3 tablespoons sesame oil
1 egg
1 to 2 cups chicken stock or water
4 cups all-purpose flour
1/2 teaspoon salt
1 1/2 to 1 3/4 cups boiling water
1/3 cup thin soy sauce
1/3 cup rice wine vinegar
1/3 cup sliced scallions
1 teaspoon sesame oil
1 tablespoon sambal

Steps:

  • Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dishtowel or cheesecloth and squeeze out any water. The dryer the cabbage the better. In a large bowl thoroughly mix the cabbage with all of the other ingredients, except the chicken stock. Cook a tester to check the seasoning.;
  • GUEST CHEF: MING'S MOM (IRIS LEE TSAI) .
  • In a stainless steel bowl mix flour and salt. Slowly add hot water to flour in 1/4 cup increments. Mix with chopsticks until a ball is formed and the dough is not too hot to handle. On a floured surface, knead dough until it becomes a smooth, elastic ball. Place back in bowl and cover with a damp cloth. Allow to rest for at least 1 hour. Working on a floured surface with floured hands, roll out dough to form a long 'noodle', 1-inch in diameter. Cut 1/2-inch pieces and turn them over so the cut sides are facing up. Flatten with your palm and roll out thin using a rolling pin. The dumpling wrapper should end up about 3 inches in diameter.
  • MAKING THE DUMPLINGS: Place a small mound of filling in the middle of the wrapper. (Be very careful not to touch the edges with the filling as this will impede proper sealing of the dumplings. Nothing is worse than dumplings breaking during cooking.) Fold the wrapper in half to form a half moon shape. Starting on one end fold/pinch the wrapper tightly together. Proceed with this fold/pinch method until the dumpling is completely sealed. There will be approximately 10 to 14 folds per dumpling. Rest the dumplings with the folded edges straight up.
  • COOKING THE DUMPLINGS: In a hot saute pan coated well with oil, place pot stickers flat side down and cook until the bottom is browned. Have pan cover ready and add 1 cup of chicken stock, cover immediately. Be careful, the liquid will splatter! The stock will steam the pot stickers. Check them in 5 minutes as more stock may be needed. The trick here is that once the dumplings are firm and fully cooked the stock will evaporate and the bottoms will crisp-up again.
  • Combine all and serve in a small bowl.
  • PLATING: Serve pot stickers on a large platter lined with lettuce with a bowl of dipping sauce on the side.

EASY GARLIC GINGER GLAZED STICKY PORK

Easy Garlic Ginger Glazed Sticky Pork image

Tender strips of pork glazed with a sticky, sweet, spicy, garlicky, gingery sauce that is as easy as stirring a few things together in a pan, this fast, soul-satisfying meal is easy enough for rookie cooks, but delicious enough to keep sophisticated cooks and eaters happy.

Provided by Rebecca Lindamood

Categories     Main Dish

Time 25m

Number Of Ingredients 9

1 1/2 pounds boneless (center cut pork loin cut into 1/4-inch thick slabs, then 1/4-inch thick strips, about 3 inches long)
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1 tablespoon canola or peanut oil (plus extra if necessary)
5 cloves garlic (peeled and minced or pressed through a garlic press)
2- inch knob of fresh ginger (grated)
1/2 cup mild honey
2 tablespoons to 1/4 cup sriracha or chili garlic sauce
1 tablespoon rice wine vinegar or white wine vinegar

Steps:

  • In a liquid measuring cup or a small mixing bowl, whisk together the mild honey, sriracha, and rice wine vinegar. Set aside.
  • Pour the oil into a heavy-bottomed skillet over medium high heat and swirl to coat. Let it heat until it is shimmering. While the oil heats, sprinkle the pork strips with kosher salt and black pepper then toss with your hands to distribute it evenly. Carefully add the pork to the pan, working in batches to avoid overcrowding the pan. Let the first side brown, flip the pieces with tongs or a spatula, and brown the second side. Transfer the pork to a plate.
  • Return the pan to the heat and add in the garlic and ginger. Stir until fragrant, about 30 seconds.
  • Raise the heat to high and pour in the sauce mixture and bring to a boil, stirring frequently. When the sauce is very bubbly and thickened like warm honey, toss the pork back in and toss constantly to coat everything and reduce the sauce to a thick, sticky glaze on the pork. This can be served immediately over rice, noodles, or as finger food, or can be allowed to cool and be eaten cold.

  • Ginger tea for your daily dose of vitamin C. Ginger tea is a popular beverage for warming up chilly winters. Not only is it warm and comforting, it may help calm an upset stomach.
  • Spread a dash of ginger jam on your biscuits. Share on Pinterest. Pantries are often stocked with fruit jams, but ever try ginger jam? It may not be the healthiest, but it certainly is a healthier option.
  • Replace your maple syrup with a zestier option. The company The Ginger People created their organic ginger syrup as a creative alternative to pancake syrup.
  • Try an anti-inflammatory granola bowl. A bowl of crunchy, fiber-rich granola is always an easy breakfast choice. But adding fragrant, spicy ginger granola to the mix would make it even better!
  • Add ginger juice to your smoothies (or mimosas!) Share on Pinterest. For a spin on this morning beverage, try a gut-awakening ginger juice. Ginger juice is great in a variety of things, like stir-fries and salad dressings.
  • Get a boost of energy with some on-the-go superfood. Low on time? You can still reap the benefits of ginger on the go. Grab a healthy, gluten-free turmeric and ginger Lärabar or meal prep some ginger energy bites, like these delicious dough balls Well Plated calls her “saving grace.”
