GINGER VEGGIE STIR-FRY

I just whipped this up one day when I felt like a stir-fry but did not have all the ingredients called for in some of the stir-fry recipes on this site. I used certain veggies I had on hand, but any seasonal veggies may be used. It has a mild ginger flavor that can be enhanced according to taste, and is filling yet light on the tummy! Tofu may be added. Serve over a bed of steamed jasmine rice.

1 tablespoon cornstarch
1 ½ cloves garlic, crushed
2 teaspoons chopped fresh ginger root, divided
¼ cup vegetable oil, divided
1 small head broccoli, cut into florets
½ cup snow peas
¾ cup julienned carrots
½ cup halved green beans
2 tablespoons soy sauce
2 ½ tablespoons water
¼ cup chopped onion
½ tablespoon salt

Steps:

  • In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat.
  • Heat remaining 2 tablespoons oil in a large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 teaspoon ginger. Cook until vegetables are tender but still crisp.

1/3 cup low-sodium soy sauce
2 tablespoons honey
2 tablespoons plum preserves
2 tablespoons chicken stock
1 tablespoon cornstarch
1 tablespoon grated ginger
1 tablespoon sriracha
3 cloves garlic, minced
3 scallions, sliced thin, plus more for garnish
2 tablespoons peanut oil
1 pound boneless, skinless chicken thighs, cut into bite-size pieces
1 yellow onion, cut into chunks
1 head broccoli, cut into small florets
1 head cauliflower, cut into small florets
Cooked rice, for serving
Sesame seeds, for garnish

Steps:

  • Place the soy sauce, honey, plum preserves, chicken stock, cornstarch, ginger, sriracha, garlic and scallions in a mason jar. Secure the lid and shake until everything is combined. Set aside.
  • Heat the peanut oil in a large skillet over a medium-high heat. When the oil is hot, add the chicken and cook for 2 minutes, then remove and set aside. Add the onions, broccoli and cauliflower and cook until the veggies have softened but still have a bite, 4 to 5 minutes.
  • Return the chicken to the skillet and pour over the sauce. Stir everything together and cook until the sauce is very thick, 1 to 2 minutes. Add a little water if needed to make it more saucy.
  • Serve the stir-fry over cooked rice. Garnish with some sliced scallions and sesame seeds. Enjoy.

1 pound skinless, boneless chicken breasts, sliced 1/4 inch thick
1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon soy sauce, plus more for serving
3/4 cup low-sodium chicken broth
2 teaspoons rice wine vinegar
3 tablespoons vegetable oil
4 cloves garlic, sliced
2 tablespoons minced peeled fresh ginger
8 ounces snow peas, trimmed
1 bunch broccolini, trimmed and halved lengthwise if thick
4 scallions, thinly sliced
2 1/2 cups cooked white rice or quinoa, for serving
Toasted sesame seeds, for topping

Steps:

  • Toss the chicken with 1 tablespoon cornstarch and 1 teaspoon soy sauce in a medium bowl; let sit 5 minutes. In a separate bowl, stir together the chicken broth, remaining 2 teaspoons each cornstarch and soy sauce and the vinegar until smooth; set aside.
  • Heat 2 tablespoons vegetable oil in a large nonstick skillet over high heat. Add the chicken and cook, stirring once or twice, until golden, about 3 minutes. Transfer to a plate.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the garlic and ginger and cook, stirring, until lightly browned, 30 seconds. Add the snow peas, broccolini and half of the scallions; cook, stirring, until the vegetables start softening, about 2 minutes. Stir the chicken broth mixture and pour it into the skillet. Return the chicken to the skillet and cook, stirring, until the sauce thickens and coats the chicken and vegetables, 1 to 2 minutes.
  • Divide the rice or quinoa among bowls and top with the stir-fry and remaining scallions. Sprinkle with toasted sesame seeds and serve with more soy sauce.

3 tbsp vegetable or rapeseed oil
3 chicken breast fillets (chopped into bite-size chunks)
2 tbsp cornflour/cornstarch
1 medium egg
10 tbsp plain/all-purpose flour
½ tsp salt
½ tsp pepper
½ tsp garlic salt
2 tsp paprika
3 plums (sliced)
1 red bell pepper (sliced)
1 green bell pepper (sliced)
1 yellow bell pepper (sliced)
2 cloves of garlic (peeled and minced)
2 tbsp tomato puree/paste
1 tbsp Chinese rice vinegar (white wine vinegar will work too)
3 tbsp light brown sugar
2 tbsp sweet chilli sauce
2 tbsp dark soy sauce
1 tsp chili flakes
¾ cup pineapple juice
Boiled rice
Shredded spring onions (scallions)
Chilli flakes

Steps:

  • Heat the oil in a wok or large frying pan until very hot.
  • Whilst the oil is heating, place chicken in a bowl and sprinkle on the cornflour. Mix together with a fork or your hands until the chicken is coated.
  • Now break the egg into the bowl with the chicken, and use a fork to mix everything together thoroughly. There should be no egg pooling at the bottom of the bowl. If there is, discard it.
  • Next, sprinkle on the flour, followed by salt, pepper, garlic salt and paprika. Mix everything together with your hands. The chicken should be well-coated, but will also be sticky.
  • Add the chicken to the wok and cook on a high heat for 6-7 minutes, turning two or three times during cooking, until well browned. You may need to cook in two batches (I find I can do it in one batch so long as there are no more than 3 chicken breasts).
  • Once golden brown, add the plum slices, peppers and garlic. Cook, with the chicken for 2 minutes, stirring often, until the plum starts to soften.
  • Now add all of the sauce ingredients to the wok, stir and bubble on a high heat until the sauce reduces by about a third (should take 2-3 minutes).
  • Turn off the heat and divide between four bowls. Serve with boiled rice and top with spring onions and chilli flakes.

This no-cook jam captures the joy of biting into a cold, crisp plum, and the technique it employs is ideal for capturing the freshness of firm ripe summer fruit. This jam, which can be stored in the refrigerator or freezer, making it what's commonly known as a refrigerator or freezer jam, is also packed with ginger and lemon, so you'll get a bouquet of flavors in every spoonful.

3 pounds ripe but firm plums, pitted and cut into 1-inch pieces (about 5 cups)
1 cup superfine sugar
2 tablespoons scrubbed, grated fresh ginger
2 tablespoons lemon zest (from 4 lemons)
2 tablespoons lemon juice, plus more to taste
1/4 teaspoon calcium powder, if needed (see Tip)
4 1/2 teaspoons powdered pectin (see Tip)
1/2 teaspoon kosher salt (Diamond Crystal)

Steps:

  • Using a potato masher or fork, gently crush the plums in a large bowl to release some pulp and juices while keeping the fruit chunky. Toss with the sugar, then add the ginger and lemon zest and juice. Stir until the sugar dissolves. Measure the volume of your fruit mixture; you should have about 6 cups.
  • If your package of pectin comes with calcium powder, stir 1/4 teaspoon of the calcium powder into 1/4 cup water to dissolve. Set aside. Place the 4 1/2 teaspoons pectin in a stand blender, or have it measured and ready if using an immersion blender. Bring 1 cup water to a boil, then pour it into the stand blender and blend. (If using an immersion blender, add the pectin to the saucepan and blend.) The mixture should become very smooth and look like a soft gel. Stir the pectin mixture into the fruit until evenly combined, then stir in 4 teaspoons of the calcium water, if using. The jam should thicken and be softly set. Add the salt, stir and taste. Adjust after tasting with more teaspoons of lemon juice, if necessary, for a good balance of sweet and tart.
  • Transfer to clean airtight containers, cover and chill in the refrigerator for at least 24 hours and up to 2 weeks before serving. Or, store in the freezer for up to 3 months; defrost completely in the refrigerator before serving.

PLUM GLAZED CHICKEN STIR FRY

I don't usually make many recipes from Cook's Illustrated because they require too many ingredients and are to expensive for my budget. This recipe is definitely going into my rotation. I left out the leafy greens and just served the chicken over rice.

3 tablespoons vegetable oil
1 medium head bok choy, stems sliced thin, greens chopped
1 tablespoon ginger, grated
4 teaspoons chili-garlic sauce
salt and pepper
1/4 cup plum sauce
2 teaspoons soy sauce
2 teaspoons rice vinegar
1 1/2 lbs boneless skinless chicken breasts, cut crosswise into 1/4 inch slices
2 scallions, sliced thin

Steps:

  • Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat until shimmering.
  • Add bok choy stems and cook until tender, about 3 minutes.
  • Add bok choy greens and cook until just wilted, about 2 minutes.
  • Add ginger, 2 teaspoons chili-garlic sauce and 1/4 teaspoon salt and cook until fragrant, about 30 seconds.
  • Transfer bok choy mixture to colander, tent with foil, and let drain.
  • Whisk plum sauce, soy sauce, vinegar and remaining chili- garlic sauce in a small bowl.
  • Pat chicken dry with paper towels and season with salt and pepper.
  • Heat 1 tablespoon oil in an empty skillet over medium- high heat until just smoking.
  • Cook half the chicken until no longer pink, about 3 minutes; transfer to a plate. Repeat with remaining oil and chicken.
  • Return first batch of chicken with juices to the skillet.
  • Stir in plum sauce mixture and scallions and cook until thickened, about 1 minute.
  • Transfer bok choy to a platter and top with chicken. Serve with noodles or rice.

1 large onion
1 green bell pepper, cut in thin strips
3 large black plums, sliced
1/2 cup plum jam
2 tablespoons lemon juice

1/2 teaspoon dry mustard
1/2 teaspoon ground ginger
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • In a wok or large skillet, heat oil until hot. Add pork and stir-fry over high heat until cooked through, 5-6 minutes. Remove to a plate.
  • Add onion and green pepper to drippings in wok and stir-fry just until crisp-tender; about 3 minutes.
  • Stir in plums, jam, lemon juice, brown sugar, mustard and ginger.
  • Heat to boiling, stirring constantly.
  • Mix cornstarch and water until blended. Stir into sauce and cook, stirring, until sauce boils and thickens.

My hubby and I have been watching our carb intake at the moment and are trying not to eat starchy carbs in the evening, so I served as is, but it would pair well with steamed Jasmine rice.

2 tablespoons peanut oil, divided use
600 g pork fillets, sliced in thin strips
1 brown onion, sliced thickly
3 garlic cloves, crushed
1 teaspoon fresh grated gingerroot
1 small red pepper, sliced
1 small yellow pepper, sliced
200 g asparagus, trimmed
100 g sugar snap peas, trimmed
200 g bean sprouts
2 tablespoons light soy sauce
1/2 cup plum sauce, I use sharwood's plum sauce with a hint of ginger
1 tablespoon hoisin sauce, I use blue dragon brand

Steps:

  • Heat 1 Tablespoon oil in a wok and stir-fry pork, in batches, until browned, remove from wok and set to one side.
  • Heat remaining oil in wok, add onion, garlic and ginger, stir-fry 1 Minute.
  • Add red and yellow peppers stir-fry 1 minute, add soy sauce, return pork to pan, stir-fry until peppers start to soften.
  • Add asparagus, peas, sprouts, plum and hoi sin sauces, stir-fry until remaining veg are just tender, you still want a nice crunch.
  • Cooking time will be longer if not using a wok.
  • To Serve: Either serve as is for low carb or serve over jasmine rice.

The night we made it we had several dishes on the go and I was prepping for them as well so times are estimated to if you were only cooking this dish UPDATE - o'kay making this once again I have added other vegies tonight which were some julienned carrot, broccoli and cauliflower flowerettes and snow peas and served on top of some hokien noodles - just a variation. ANOTHER UPDATE - we tried this tonight Have now tried with beef, rump strips (possibly could be better to beat out and cut into strips though we think. depending on the quality of your rump) and added 3/4 teaspoons chinese five spice to step 2 but would suggest 1/2 teaspoon) but still thoroughly enjoyed and we are smacking our lips still 2 hours later.

1 kg chicken breast (cut into strips)
4 garlic cloves

150 g cashew nuts (unsalted and roasted)

Steps:

  • Heat a wok over high heat until hot and add 1 tablespoons oil and swirl to coat.
  • Mix oyster sauce, plum sauce, dry sherry and chilli sauce to mix.
  • Add a 1/4 of the chicken and stir fry for 2 to 3 minutes or until browned and transfer to a bowl.
  • Repeat till all chicken is cooked, adding more oil as needed.
  • Add 2 teaspoons oil to wok and swirl to coat and add the garlic, ginger, onions and chilli and stir fry for 30 seconds and add choy sum and stir fry for 1 minute or until bright green.
  • Return the chicken to the wok and add the sauce mix and stir fry for a minute or until combined.
  • Stir through cashews and basil.
  • Serve with steamed rice or fried rice.

This is a yummy stir fry of chicken with plum and chili sauces, if you want to make this even quicker you could just buy a big bag of mixed asain stir fry veg to add, I had vegetables I needed to use up, I think that is the beauty of a stir fry they are so versatile and you can add any veg you like. I served this as is, it is enough for 3 generous portions or 4 smaller ones, if you want to make it a definite hearty meal for 4 just add about 300-400g noodles, my hubby and I are watching our carb intake at the moment so I do not serve a lot of meals with rice or noodles.

700 g chicken breasts, sliced thinly
1 onion, sliced thinly
3 garlic cloves, crushed

200 g green cabbage, shredded (I used and asian cabbage.)
2 small carrots, cut into matchsticks

3 tablespoons sweet chili sauce
3 tablespoons plum sauce
2 green onions, sliced thinly

Steps:

  • Heat some oil in a wok stir fry chicken in batches until browned all over, adding oil as needed, set to one side, wipe wok clean.
  • Add about 1 tablespoon more of oil add onion, garlic, ginger and chili to wok stir fry until onion softens, add soy sauce, stir fry 1 minute.
  • Add broccoli and return chicken to pan, stir fry 2 minutes, add both sauces, cabbage, carrots and mushrooms, stir fry a few minutes more.
  • Finally add snow peas and sprouts, stir fry until vegetables are tender and chicken is cooked through.
  • To Serve: Place in bowls or on plates and garnish with green onions.
