PEAR AND GINGER-TOPPED WAFFLES



Pear and Ginger-Topped Waffles image

Weekend waffles! Try them with an awesome pear and ginger topping.

1/4 cup sugar
1/2 cup water
1 tablespoon finely chopped crystallized ginger
2 teaspoons cornstarch
2 teaspoons butter or margarine
1 1/2 teaspoons lemon juice
2 medium pears, peeled, sliced (about 1 2/3 cups)
1/2 cup raspberries
2 cups Original Bisquick™ mix
1 1/3 cups milk
2 tablespoons vegetable oil
1 egg

Steps:

  • In 1 1/2-quart saucepan, heat all topping ingredients except pears and raspberries over medium heat, stirring frequently, until mixture thickens and boils. Boil and stir 1 minute. Stir in pears; cook, stirring occasionally, until hot. Stir in raspberries; keep warm.
  • Heat waffle maker. (Waffle makers without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray.) In medium bowl, stir waffle ingredients with wire whisk or fork until blended.
  • For each waffle, pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker.
  • Bake 3 to 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter. Serve waffles with topping.

Number Of Ingredients 13

3 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon freshly grated nutmeg, eyeball it
1/2 teaspoon salt
4 large eggs
2/3 cup packed dark brown sugar
1 cup canned pumpkin puree
1 1/4 cups milk
1/2 cup molasses
1/2 cup (1 stick) melted butter, plus some to butter the iron
Syrup, whipped cream or fresh fruits for topping, to pass at table

Steps:

  • Preheat waffle iron.
  • In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.

GINGER-SPICED PEARS



Ginger-spiced pears image

Make and store preserved fruits for a month or so and serve alongside cold meats and cheeses

Number Of Ingredients 7

500g granulated sugar
500ml white wine vinegar
pared zest (use a vegetable peeler) and juice 1 orange
5cm piece ginger , thinly sliced (no need to peel)
3 bay leaves
1 tsp black peppercorn
1 ½kg small ripe pear

Steps:

  • Put the sugar, vinegar, orange zest and juice, ginger, bay leaves and peppercorns in a large pan. Bring slowly to the boil, stirring constantly to dissolve the sugar, then boil for 5 mins.
  • Meanwhile, peel, core and halve or quarter the pears, depending on size. Add the pears to the pan and poach gently for 10-15 mins until they are just tender. Remove with a slotted spoon and pack into warm sterilised Kilner jars with rubber seals (see tip below).
  • Boil the vinegar mixture hard to reduce by a third, then pour over the pears, including the spices. The pears need to be completely covered with the liquid. Fit the rubber seal and clamp the jar tightly closed. Reserve any leftover syrup for topping up the jars later, as the pears will absorb the syrup over time. Store for up to 2 months.

2 cups flour
1 tablespoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt

3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
3/4 cup brown sugar
1 1/2 cups buttermilk
1/4 cup molasses
2 eggs, beaten

Steps:

  • Heat waffle iron and spray with cooking spray.
  • In a mixing bowl, sift together flour, brown sugar, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  • In another mixing bowl, combine eggs, buttermilk, and molasses. Beat in melted butter.
  • Add dry ingredients with wet ingredients just until moistened and lump free.
  • Pour enough batter to fill two-thirds of the waffle iron.
  • Cook until crisp and golden brown.
  • Set aside.
  • Repeat with remaining batter, spraying with cooking spray as needed.

7 tablespoons butter, divided
3 ripe Bartlett pears, cored and thinly sliced
1 tablespoon white sugar
1 cup whole wheat flour
1 cup all-purpose flour
1 ½ teaspoons ground cinnamon
1 ½ teaspoons baking soda
1 ½ teaspoons ground ginger
½ teaspoon salt
3 eggs, lightly beaten
¾ cup molasses
½ cup buttermilk
¼ cup milk
¾ cup vanilla yogurt

Steps:

  • Melt 5 tablespoons butter in a saucepan over low heat; remove from burner and set aside.
  • Melt remaining 2 tablespoons butter in a very large skillet over medium heat; add pears and cook, turning occasionally, until mostly tender, about 6 minutes. Sprinkle sugar over pears and cook until browned and tender, about 3 minutes. Cover skillet and keep warm over low heat.
  • Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, ginger, and salt in a large bowl; make a well in the center. Mix melted butter, eggs, molasses, buttermilk, and milk in a separate bowl. Pour butter mixture into the well of the flour mixture and stir just until batter is moistened and slightly lumpy.
  • Preheat and grease a waffle iron according to manufacturer's instructions.
  • Pour batter into preheated waffle iron and cook according to manufacturer's instructions; repeat with remaining batter. Serve each waffle with pears and 1 tablespoon vanilla yogurt.
