GINGER-PEACH DESSERT

Steps:
- Heat oven to 350°F. Place cookies and 1/2 cup pecan pieces in food processor. Cover and process until crushed. Add butter; process until mixed. Press evenly in rectangular pan, 13x9x2 inches. Bake 8 to 10 minutes or until center is set when lightly touched. Cool completely, about 25 minutes.
- Spread frozen yogurt over cooled crust. Freeze 30 minutes.
- Spread whipped topping over frozen yogurt; sprinkle with finely chopped pecans. Freeze about 4 hours or until firm.
- To serve, let stand at room temperature 5 to 10 minutes. Cut dessert into squares. Top each square with 2 or 3 peach slices.

- Combine yogurt, honey and vanilla extract in a medium bowl.
- Freeze for 1 hour.
- Place frozen peaches in food processor or blender and blend until they reach very small chunks.
- Add frozen yogurt to the food processor or blender with the peaches.
- Pulse a few times more times until mixture is incorporated.
- Transfer back to a medium bowl and refreeze for another 1-2 hours depending how hard or soft you want your frozen yogurt. Enjoy an easy, guilt-free treat!

- 1. In a food processor blend peaches and simple syrup. In a bowl mix pureed peaches with Yogurts and splenda. Place in ice cream machine. Freeze bowl ahead of time Turn on machine and mix away for 25min. Last five minutes You can add some small chopped peaches, of You like the chunks. Serve in bowls topped with crushed gingersnaps. Whipped topping optional.

- Place the peaches in a blender; cover and process until pureed. Set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir in sugar. Cook and stir over low heat until gelatin and sugar are dissolved., In a large bowl, combine the yogurt, peach puree and gelatin mixture until blended. Pour into an ungreased 9-in. square dish. Cover and freeze for 3-4 hours or until partially set. , Cut into pieces and place in a large bowl; beat on medium speed until smooth. Transfer to a freezer container. GINGER PEACH FROZEN YOGURT
Steps:
- Prepare yogurt base by whisking yogurt, sugar, corn syrup, and vanilla until smooth.
- Place in an airtight container and chill 8 hours.
- Prepare the ginger peach sauce by placing peaches in a small kettle, grate in the ginger and stir in sugar.
- Cook over medium-high heat until the peaches break down and thicken, about 5 minutes.
- Bring to room temperature and chill in an airtight container alongside yogurt base.
- Once chilled, freeze yogurt base in ice cream maker following the manufacturer's instructions. Mine takes about 20 minutes.
- Remove from the freezer and stir in ginger peach sauce.
- Enjoy right away or place in an airtight container and freeze for 4-6 hours.

PEACH FROZEN YOGURT
Steps:
- Peel the peaches, slice them in half, and remove the pits. Cut the peaches into chunks and cook them with the water in a medium, nonreactive saucepan over medium heat, covered, stirring occasionally, until soft and cooked through, about 10 minutes. Remove from the heat, stir in the sugar, then chill in the refrigerator.
- When the peaches are cool, purée them in a food processor or blender with the yogurt until almost smooth but slightly chunky. Mix in a few drops of lemon juice.
- Freeze the mixture in your ice cream maker according to the manufacturer's instructions.

- Drain peaches reserving 1/2 cup of the juice (for me, it turned out to be all of the left over juice).
- Put peaches in a blender and pulse to chop.
- Add the sugar, yogurt, and juice and blend until smooth.
- Chill in the refrigerator for a half hour to an hour (depends on how patient you are - I did a half hour and it was fine).
- Pour into ice cream maker and churn for 25 to 30 minutes.
- ENJOY!
