SPICY LIME MELON SALAD

- Puree 1/2 cup cilantro, 1/2 small seeded serrano chile, the juice of 2 limes, 1/4 cup olive oil and a pinch of kosher salt. Toss with 4 cups cubed assorted melons, one 15-ounce can hearts of palm (drained, rinsed and sliced 1/2 inch thick) and 2 sliced scallions; season with salt and pepper.

- Three hours before serving: make the dressing. Put the garlic and coriander in a food processor with 1 tsp salt and the sugar, then pulse to a pulp. Add the chilli, ginger and citrus juices and pulse until smooth. Cover and chill.
- Two hours before serving: cut the watermelon into segments, remove the skin and seed the flesh. Cut into lozenges about 3cm wide.
- Mix the melon and prawns and add the spring onions, lemongrass, ginger, lime zest and lime leaves. Chill.
- To serve: toss the dressing and herbs into the salad and scatter with chilli and peanuts.

GINGER LIME MELON BALLS
I was looking for an easy, cool, summer fruit appetizer for my August wedding reception. My family made all the food for 100 guests by ourselves, so I needed something easy yet memorable. I found this recipe on a "melon web-site", AICR. It was so simple and after doing a tasting of 3 different recipes, this one was the clear favorite. If you've never used crystallized ginger, you should be able to find it in the bulk food section with dried fruits. It is NOT fresh ginger, it's like a soft, sugared, candy. You can't mince it too fine because it gets pretty sticky as you cut it. You can use any kind of ripe melon in season, but I like honeydew and cantaloupe best. Perfect for a picnic, summer brunch or a DIY wedding reception! Enjoy!

Steps:
- In small saucepan, combine juice, water, ginger and zest. Set pan over medium-high heat and bring to boil. Boil 5-7 minutes, stirring occasionally, until mixture reduces to 2 tablespoons.
- Strain mixture though fine sieve to remove zest. (I'm not sure this step is really needed).
- Place melon in bowl, toss with ginger-lime mixture. Let sit for 15 minutes. You can drain the sauce or serve it with the melon.
- Garnish with mint (optional).

GINGER LIME SALAD DRESSING
From Crazy Sista Cookbook by Lulu Buffet. This is a great dressing, it keeps well, and is also yummy over blackened grouper or on a grilled shrimp salad. Can also be used as a great marinade for grilling chicken or fish. Cook time is chill time.

- Combine all ingredients in a glass jar or plastic container.
- Shake well until dressing is combined.
- Refrigerate until ready to use.
