For the tasty, tender wings, marinate overnight and bring them to room temperature before cooking. Char them on the barbecue for an extra smoky hit.

24 chicken wings
Ginger and honey marinade
5 spring onions
1 fresh red chilli
5 tablespoons runny honey
2 tablespoons soy sauce
2 cm piece of ginger
5 sprigs of fresh thyme

Steps:

  • Trim and finely slice the spring onions and chilli, placing them into a bowl with the honey and soy sauce. Peel, then grate in the ginger, and pick in the thyme leaves. Mix well.
  • Place the chicken sings in a single layer in a wide, shallow, non-reactive dish. Pour or brush over the marinade, cover and place in the fridge to marinate for 24 hours.
  • Cook the wings on a hot barbecue or griddle pan for 15 to 20 minutes, or until dark and the juices run clear, turning often. If cooking on a griddle, finish the wings in the oven at 180ºC/350ºF/gas 4 for 10 to 15 minutes to make sure they're cooked through.

A recipe I got from a work mate back in the early 80's. Very simple and very tasty. I usually double the quantity as this is really only for 2 people.

8 chicken wings
2 tablespoons honey
1/2 lemon
2 tablespoons sherry wine
2 tablespoons soy sauce
salt
pepper, freshly ground
1 garlic clove, crushed
1 teaspoon ground ginger

Steps:

  • Juice the lemon half. Mix together all the ingredients except for chicken wings.
  • Place chicken wings into a shallow roasting dish and pour on half the marinade. Allow to stand (in fridge) for approximately 20 minutes.
  • Prepare a moderate oven (180C) and cook chicken wings for about 15 minutes. Brush on the remaining marinade and return wings to the oven to complete cooking, approximately 30-35 minutes in all.
  • Serve with green salad and herb bread.

16 free-range chicken wings
1/4 cup honey
2 tablespoons tamari soy sauce
4 spring onions, thinly sliced
1 tablespoon toasted sesame seeds (optional)
2 tablespoons ginger
1 tablespoon lime juice
2 garlic cloves, minced
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 F and line a baking tray with parchment paper.
  • Mix all the ingredients together except the chicken.
  • Add the chicken, coat well with marinade and cover in an airtight container. Refrigerate 24 hours for best results. Bring to room temperature before cooking.
  • Place chicken wings on a baking pan lined with parchment paper and bake at 400 F for 20 - 30 minutes turning once until nice and dark.
  • Barbecue option ~ cook chicken wings at 350 F for 20 - 30 minutes or until nice and dark turning often. To serve sprinkle with toasted sesame seeds and spring onions.

6 tablespoons olive oil
5 pounds chicken breast, cut into strips
Salt and pepper
1 bok choy, cut into julienne strips
1 small daikon, cut into julienne strips
1/2 Chinese cabbage, cut into julienne strips
2 carrots, cut into julienne strips
2 tablespoons peeled and minced fresh ginger
1 teaspoon minced garlic
3 tablespoons honey
1 cup chicken stock
1 teaspoon cornstarch
2 tablespoons cold water
1/2 pound fried vermicelli egg noodles
1/2 cup minced fresh cilantro leaves
6 mint leaves, minced
1/3 cup pickled ginger

Steps:

  • Heat 2 tablespoons olive oil in a large heavy skillet over medium-high heat. Season the chicken with salt and pepper. When the oil is hot, add the chicken strips and saute until chicken is just cooked through, about 4 to 5 minutes, depending on the size of the strips. Remove the chicken from the pan and set aside.
  • Add 2 more tablespoons of olive oil to the skillet and heat over medium-high heat. Add the julienned vegetables and cook until crisp tender, about 2 to 3 minutes. Season with salt and pepper, to taste. Remove the vegetables from the pan and set aside.
  • Add 2 more tablespoons of olive oil to the skillet, reduce the heat to medium, and then add the fresh ginger and garlic. Cook, stirring constantly, until fragrant, about 1 to 2 minutes. Add the honey and chicken stock and let the sauce reduce slightly. Meanwhile, in a small bowl, whisk the cornstarch with 2 tablespoons cold water until dissolved. Add the cornstarch slurry to the sauce and cook for 1 to 2 minutes, or until sauce is thickened.
  • When the sauce has thickened, return the chicken and vegetables to the skillet and cook until just heated through. To serve, arrange the fried noodles as a base on each plate. Spoon the chicken, vegetables, and sauce over the noodles. Garnish with the cilantro, mint, and pickled ginger.

This is different from any other honey-ginger chicken recipe I have seen on here. It has 1/3 cup hot sauce in it...so it has a little KICK! The sweet and the hot work fabulously together and always impress company! This is a favorite of mine ever since my late aunt first cooked it for me 15 years ago. Brown or white rice works well on the side...you need something to help soak up all the yummy sauce!

3 tablespoons Crisco
3 tablespoons butter
1/3 cup flour
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
3 lbs chicken legs-thighs
1/3 cup honey
1/3 cup hot sauce (Louisiana style)
1/3 cup soy sauce

Steps:

  • Heat oven to 425. Melt Crisco and butter in 9x13 pan in oven.
  • Combine flour, salt, ginger, pepper. Dredge chicken pieces in flour mixture.
  • Add chicken to hot pan, skin side down. Bake for 30 minutes.
  • Turn pieces over and bake an additional 15 minutes.
  • Whisk together honey, hot sauce, soy sauce.
  • Drain butter/fat from pan and pour honey mixture over the chicken and bake 15 more minutes, basting often.
  • Serve hot, or refrigerate and serve chilled. (I prefer it hot next too some fluffy rice!).
