- Cream the shortening, sugar, egg, molasses and water. Mix in the flour, salt, ginger, nutmeg, cloves and cinnamon. Cover and chill for 1 hour.

GINGERSNAP COOKIES
I was following my mother's recipe for ginger snaps and realized I had used the wrong ingredients right away, so rather than throwing it out and starting over, I made my own recipe, and they turned out even better. I just had to share my 'mistake' with you all because I can't believe how good these are. They turned out so delicious, moist, and chewy. I hope you enjoy them.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter and 1 cup sugar together with an electric mixer in a large bowl until creamy. Add egg and beat until smooth. Stir molasses into the butter mixture until completely integrated.
- Sift flour, baking soda, ginger, cinnamon, salt, and cloves together in a separate bowl; add to the butter mixture and mix until you have a dough. Divide and shape the dough into 36 balls.
- Put 1/2 cup sugar in a wide, shallow bowl. Roll dough balls in sugar to coat and arrange onto a baking sheet.
- Bake in preheated oven until beginning to crisp around the edges, 13 to 15 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease one cookie sheet.
- Mix together the molasses, brown sugar, water and shortening.
- Sift together the flour, baking soda, salt, allspice, ginger, cloves and cinnamon. Add to sugar mixture and mix well. Cover and refrigerate for 2 hours.

My dad brought this recipe home from the Navy nearly 50 years ago. I have been making them since I could stand on a chair by the stove and stir. The peanut butter in this recipe makes these cookies a little different than similar recipes I've seen here.

Steps:
- If using cookie sheet, prepare pan by coating lightly with butter or margarine.
- In a large heavy saucepan, combine the milk, cocoa, butter and sugar.
- Stirring constantly, bring to a full boil, then boil for 1 minute.
- Remove from heat.
- Stir in vanilla and peanut butter until peanut butter is completely melted.
- Stir in quick oats.
- Quickly* drop by spoonfuls onto waxed paper, or spread in a buttered cookie sheet.
- Allow to cool completely.
- If using cookie sheet, cut into squares to serve.
- *If you don't move quickly, cookies will set up in the pan.
- If cookies do not set, you didn't boil long enough.
- If cookies are dry, you boiled too long.
GRANDMA'S SOFT GINGER COOKIES

- Whisk flour, baking powder, cinnamon, ginger, cloves, and salt together in a bowl.
- Beat brown sugar and butter in a separate bowl with an electric mixer until creamy. Mix in molasses, egg, and candied ginger. Gradually mix in dry ingredients until combined. Chill dough in the refrigerator for 1 hour.

- Cream together butter and brown sugar; beat in egg and vanilla.
- Combine flour, baking soda, cinnamon, ginger and salt. Blend into butter mixture.

- Cover cookie sheets with foil or parchment paper.
- In a bowl, whisk together the flour and salt. Cut in the cold butter.
- Dissolve the yeast in the 1/4 cup warm water. Add the eggs, sour cream and flavoring. Cover and chill for 2 hours, but it can sit longer if necessary. The dough does not need to rise.
- Make colored sugar by mixing sugar with food coloring.
- Preheat the oven to 350.
- Sprinkle some of the colored sugar in whatever color you desire onto wax paper.
- Divide dough into thirds, and return the remainder to the refrigerator.
- Roll the dough out to a 10" x 8" rectangle, then fold the ends in to the center. Resugar the surface and roll out again to an 10x8 inch rectangle. Repeat the rolling and folding process 2 more times (a total of 3).
- Cut rolled out dough into 4" by 1/2" strips, then twist and shape as desired -- candy canes, rosettes, pretzels, rope twists, etc. Place the cookies on the prepared cookie sheets
- Bake immediately, 10 to 12 minutes. Watch carefully as the sugar has a tendency to burn the cookies. When done, remove from the sheets at once.

FOOTHILLS HOUSE SWEET DREAMS COOKIES
Another recipe from Bon Appetit magazine (February 1986). This came from Foothills House, in Calistoga, California. I've never stayed there but from the online reviews, it's a wonderful little country inn with fabulous service and as of 2008 they were still giving these cookies to their guests every night. If I'm ever in that part of California for the night, I'm going to stay there! These are sweetly spiced cinnamon and ginger flavoured chocolate chip cookies rolled in powdered sugar before baking. I'm very glad the owner of the inn shared these with Bon Appetit.

- Preheat the oven to 275˚F (135˚C). Line 2 baking sheets with parchment paper.
- In a medium bowl, sift together the flour, salt, and baker's ammonia.
- In a separate medium bowl, cream together the butter and sugar with an electric hand mixer on low speed until light and fluffy, about 2 minutes.
- Add the vanilla and continue beating until fully combined.
- Add the dry ingredients to the wet ingredients and beat to incorporate.
- Roll about 1 ounce of dough at a time in your hands to make walnut-sized balls. They will be small, about ½ inch (1 ¼ cm) wide.
