ROASTED BROCCOLI AND CARROTS WITH CARROT TOP PESTO
Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl, toss the broccoli, carrots and garlic with the olive oil, sesame seeds and some salt and pepper until fully combined. Transfer to an ungreased baking sheet. Roast until lightly brown and just tender, about 25 minutes. Drizzle with the Carrot Top Pesto.
- Place the leaves and stems from the carrot tops in a food processor with the parsley leaves, roasted cashews and garlic. Puree and then slowly drizzle in the extra-virgin olive oil while the machine is running. Add the grated Parmesan and kosher salt to taste. Puree until combined.

- Prep oven: Preheat the oven to 400 degrees (200 C)
- Prep vegetables: Wash broccoli and carrots. Cut stems from broccoli and separate florets into smaller, bite-size pieces. Cut stems from carrots and slice diagonally into 1-2 inch (3-5 cm) pieces.
- Roast vegetables: Arrange the carrots and broccoli on a baking sheet and drizzle with olive oil, tossing the vegetables to completely cover with oil and sprinkle with sliced garlic, salt, and pepper. Place sheet pan in the oven and roast for 25 minutes, stirring halfway through to roast vegetables on all sides.

- Cut the carrots in 3 pieces, then each piece in half.
- I would cut the chunky end into 4 if it was very big.
- Place in a baking tray and roll in the 2 tablespoons of oil.
- Cover and bake for 40 minutes in a moderate oven.
- Remove the cover and sprinkle over the sesame oil and season with salt and pepper to taste.
- Return uncovered to the oven for 10 minutes.
- Serve sprinkled with the toasted sesame seeds.

STEAMED BROCCOLI WITH GINGER
Steps:
- In a steamer place the stems on the bottom, slice 3 thin slices of ginger, place over stems and top with broccoli florets. Steam broccoli for 5 minutes.
- Grate the rest of the ginger, there should be about 2 teaspoons. Mix the ginger with soy, vinegar, and sesame oil, and toss with broccoli (remove the ginger slices before serving). Arrange on platter, top with red pepper, scallions and sesame seeds
- TIP:
- LOOKS LIKE BROCCOLI.... BROCCOLI RABE
- Trim off the bottom, tough stems of the broccoli rabe, wash well. Slice stems into 1/2-inch pieces and saute with whole peeled garlic cloves in olive oil. After 5 minutes add florets, saute until slightly tender, add a pinch of Italian red pepper and serve over pasta.
