Ginger Berry Compote with Angel Food Cake image

This compote livens up angel food cake and is delicious on ice cream, yogurt, oatmeal, or pancakes.

1 bag (1 pound) frozen mixed berries, unthawed
2 to 3 tablespoons sugar
1 teaspoon grated lemon zest
1 teaspoon minced fresh ginger
1 (about 13 ounces) store-bought angel food cake, for serving

Steps:

  • In a medium saucepan, combine berries, sugar, zest, and ginger. Cook, stirring occasionally, over medium heat, until berries have softened and released their juices, 10 to 12 minutes. Let compote cool slightly.
  • Cut angel food cake into 8 wedges. Spoon compote over or alongside cake wedges and serve. (Compote can be served at room temperature or cold.)

1/4 cup sugar

Steps:

  • In a large saucepan, combine all ingredients. Cook, uncovered, over medium heat until berries have softened and released their juices, 12-15 minutes, stirring occasionally. Serve warm or refrigerate and serve cold.

2 pints blueberries, plus more for garnish
2 pints raspberries, plus more for garnish
1 lemon, zested and juiced
1 cup brown sugar
1 stick (8 tablespoons) unsalted butter
2 teaspoons ground cinnamon
3 teaspoons cornstarch
1/4 cup water
3 cups hazelnuts
3 cups oatmeal
2 teaspoons vanilla bean paste
1 teaspoon ground cinnamon
1 teaspoon salt
2 sticks (1 cup) unsalted butter, melted
2 cups mascarpone
1 cup cream cheese
1 cup heavy whipping cream
1 cup confectioners' sugar
3 teaspoons ground ginger
2 teaspoons grated fresh ginger
1/2 cup molasses
1 whole lemon, zested, plus zest for garnish

Steps:

  • For the compote: Combine the blackberries, blueberries, raspberries, lemon zest and juice, brown sugar, butter and cinnamon in a saucepot. Cook over medium heat until thick. Stir the cornstarch into the water in small bowl until dissolved, then add to the compote. Continue to cook until thickened further.
  • For the crunch topping: Preheat the oven to 350 degrees F. Combine the hazelnuts, oatmeal, vanilla bean paste, cinnamon, salt and melted butter in a food processor and blitz to medium crumbs. Transfer to a baking sheet and bake for 20 to 25 minutes, until toasted.
  • For the ginger molasses mousse: Whip the mascarpone and cream cheese in a mixing bowl with an electric mixer until fluffy. Add the whipping cream, confectioners' sugar, ground ginger and grated ginger, and whip until stiff. Add the molasses and lemon zest, and whip just to combine.
  • To serve: Place some compote in the bottom of dish, top with mousse and crunch topping. Garnish with berries and lemon zest, and enjoy!!

2 cups strawberries, hulled, quartered
1 cup blueberries
1 cup blackberry
2 teaspoons fresh lemon juice
1 pinch salt
1/4 cup unsalted butter, room temperature, cubed

Steps:

  • In a large, nonreactive saute pan over medium heat, combine 1/4 cup water & 1/2 cup sugar & bring to boil, stirring to dissolve sugar.
  • Cook 2 minutes, then add berries, lemon juice & salt.
  • Return to boil, then add butter & swirl mixture around in the pan until butter melts.
  • Spoon berries along with the sauce onto warmed dessert placts &, if desired, place a small scoop of vanilla ice cream (or yogurt) in center of each plate.
  • Serve immediately & enjoy!

1 cup fresh raspberry
2/3 cup granulated sugar
6 fresh mint leaves

Steps:

  • Place peaches and blueberries in 1 quart casserole dish.
  • Mash raspberries through sieve.
  • Combine raspberries and sugar in blender; blend for 3 minutes. Pour over fruit.
  • Bake at 350 degrees for 12 minutes. Cool, cover and refrigerate. Do not stir until ready to serve.
  • Spoon into individual serving bowls and top with fresh mint leaves.
