CHOCOLATE ALMOND GRANOLA

8 pitted dates (125 grams)
1/2 cup boiling water (125 milliliters)
Cooking spray
1/3 cup almond butter (90 grams)
1/4 cup cocoa powder (25 grams)
2 to 4 tablespoons maple syrup (30 to 60 milliliters)
2 tablespoons canola oil or melted coconut oil (30 milliliters)
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
3 cups rolled oats (345 grams)
3/4 cup slivered almonds (100 grams)

Steps:

  • Roughly chop the dates and add into a blender along with the boiling water. Cover and set aside to soak for 20 minutes.
  • Preheat your oven to 300 degrees F (150 degrees C) and lightly grease a large, rimmed baking sheet with cooking spray.
  • Add the almond butter, cocoa powder, maple syrup to taste, oil, vanilla and salt to the blender and blitz until smooth (a few bits of dates is totally fine).
  • Stir the oats and almonds together in a large bowl and add the cocoa mixture. Mix very well until evenly combined, then transfer to the prepared baking sheet. Spread the mixture into an even layer and bake until crisp and crumbly, stirring about halfway through, 50 minutes to 1 hour.
  • Cool the granola to room temperature, then break any large chunks up and transfer to a resealable container and store at room temperature for up to 1 month. Serve with milk, on yogurt or enjoy out of hand.

1 tablespoon ground ginger
1 teaspoon kosher salt
2 teaspoons olive oil
1 teaspoon dark sesame oil
1 dried arbol chile, stemmed and broken into small pieces
1 pound whole natural almonds
1 tablespoon less-sodium soy sauce
1 tablespoon Worcestershire sauce

Steps:

  • Heat the oven to 250 degrees F.
  • Combine the ginger and salt in a large mixing bowl and set aside.
  • Heat the olive oil and sesame oil in a 12-inch saute pan over medium-low heat. Add the arbol chile and cook, stirring frequently, until the chile begins to give off an aroma, 30 to 45 seconds. Add the almonds and cook, stirring frequently until lightly toasted, approximately 5 minutes. Add the soy sauce and Worcestershire sauce and cook until reduced slightly and the pan looks dry, approximately 1 minute. Immediately remove the nuts to the large bowl and toss with the ginger mixture.
  • Spread the coated nuts into a single layer on a half sheet pan lined with parchment paper and bake in the oven for 20 minutes. Remove the pan to a cooling rack for at least 30 minutes or until completely cool. Store in an airtight container for up to 1 week.

This is my version of a granola recipe I saw on Sarah's Secrets one day. I did make a few changes to suit our taste, but the recipe is basically the same. This is wonderful eaten dry or with milk.

3 cups old fashioned oats
1/2 cup sliced almonds
1/2 cup chopped walnuts
1 cup coconut
1/2 cup sunflower seeds
1/2 teaspoon salt
1/4 cup unsalted butter
6 tablespoons honey
1 cup chopped tropical blend dried fruit

Steps:

  • Preheat oven to 325 degrees F.
  • In a large bowl, stir together oats, nuts, coconut, sunflower seeds and salt.
  • In a small saucepan melt butter with honey over low heat, stirring constantly.
  • Pour butter mixture over oat mixture and stir until well combined.
  • In a large jelly-roll pan that has been sprayed with Pam, spread granola evenly.
  • Bake in middle of oven, stirring halfway through backing- approximately.
  • 20 minutes.
  • Cool granola in pan on a rack and stir in dried fruit.
  • Can be kept in an airtight container at cool room temperature up to 2 weeks.

COCONUT ALMOND CLUSTER GRANOLA

As terrific as homemade granola tastes, its texture often lacks the thick, crunchy clusters found in store-bought versions. This recipe is an exception, filled with crisp, sweet clumps of oats, coconut flakes and seeds. The secret is grinding a portion of the oats and coconut into flour, which helps bind the ingredients together. Feel free to mix up the spices, nuts and seeds to taste, and to add dried fruit or chocolate chips after it cools if you like. Granola is adaptable, so make it the way you like it. You can also cut the brown sugar in half. The granola will be less sweet and less cluster-packed but still quite satisfying.

1/2 cup/120 milliliters coconut oil
1 tablespoon olive oil (or use more coconut oil)
2/3 cup/160 milliliters pure maple syrup
2/3 cup/160 grams packed turbinado or light brown sugar
2/3 cup/160 milliliters coconut or almond milk
1 1/2 teaspoons fine sea salt
2 teaspoons vanilla extract
5 cups/455 grams old-fashioned rolled oats
1 cup/50 grams unsweetened coconut flakes
1 teaspoon cinnamon
1 teaspoon ground ginger or cardamom
1 cup/85 grams sliced almonds
1/2 cup/70 grams raw pumpkin seeds
1/2 cup/65 grams sunflower seeds (optional, or use more pumpkin seeds or almonds)

Steps:

  • Heat oven to 325 degrees. Line 2 baking sheets with parchment paper.
  • In a saucepan over medium heat, combine coconut oil, olive oil, maple syrup, sugar, coconut milk and salt and bring to a simmer. When sugar has dissolved, stir in vanilla extract and let cool slightly.
  • In a food processor, grind 1 1/4 cups/105 grams of the oats and 1/4 cup/12 grams of the coconut into a flour. Transfer to a large bowl and stir in remaining oats and coconut, the spices, the nuts and the seeds. Pour maple syrup mixture over and stir to combine. Let sit 10 minutes.
  • Using your hands, drop oat mixture onto prepared baking sheets in one layer, and pinch together into clumps with your fingers.
  • Bake 40 to 50 minutes, flipping the mixture (taking care not to break up the clumps) every 15 minutes. The mixture is done when it's golden brown all over and starting to crisp. It will continue to crisp up after as it cools. Transfer pans to wire racks and let cool. Store in an airtight container at room temperature for up to 1 month.

200g clear honey
4 tbsp mild-flavoured oil , such as sunflower or rapeseed
300g rolled oats
100g whole unblanched almonds
1 tsp ground cinnamon
140g dried apricots , roughly chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large pan, heat the honey and oil together until bubbling, then tip in the oats, almonds and cinnamon. Stir well until the oats are well coated, then tip onto 1-2 large baking sheets, spreading the mixture out. Bake for 20-25 mins, stirring halfway, until golden.
  • Remove from the oven and, while still hot, stir in the apricots. Spread out again and press down with a spatula to cool - this will help it to clump together. Once cool, serve with yogurt or milk, and fruit, if you like. Will keep in an airtight container for 3 weeks. See 'Goes well with' for recipes using your granola.

This granola is really good with fresh fruit for breakfast. Or try it in yogurt, over ice cream...yum! It is the easiest method I've ever come across, because you don't have to combine the wet ingredients separately: just stir everything together in the pan, and you're good to go!

5 1/2 cups rolled oats
1/4 cup sunflower seeds
1/2 cup untoasted wheat germ
1/2 cup sliced almonds
1/2 cup coarsely chopped walnuts
1/2 cup unsweetened coconut
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup oil
2/3 cup mild honey
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract

Steps:

  • Preheat oven to 350 F and grease 9x13 baking dish.
  • Combine rolled oats, sunflower seeds, and wheat germ in dish; bake 10 minutes and remove from oven.
  • Add remaining dry ingredients (almonds through salt) to dish and stir to combine; add wet ingredients (oil through almond extract) and stir until completely combined.
  • Bake 18-20 minutes, stirring halfway through, until uniformly golden; granola will not be chunky yet, but will "harden up" as it cools.
  • Remove dish to rack and cool, stirring occasionally to prevent sticking to pan; store in airtight container.

  • In a mixing bowl combine the syrups, almond butter, vanilla, salt, ginger, turmeric, cinnamon, pepper, and nutmeg. Microwave in 10 to 15 second intervals just to warm the syrup slightly. This makes it easier to stir and combine with the other ingredients.
  • Once the wet ingredients are mixed, add the oats, coconut, and seeds to the bowl. Stir until everything is well coated with the syrup mixture.
  • Spread the granola onto the prepared pan, lightly pressing it down (see photo in post). Bake for 20 minutes, then remove from oven. Using a large spoon or small spatula, scoop up chunks of the granola and flip them over. This helps ensure you end up with plenty of clusters. Bake for another 15 to 17 minutes, keeping an eye on the bottom of the granola in the last few minutes to prevent burning.
