My Grandma (Gigi) received monthly recipe cards from the Montana-Dakota Utilies Co during World War II. This was a recipe from the month of "June" Year unknown. The comment on the card states: Food for Victory! Peanuts are about 28% protein.

4 1/2 cups peanuts, coarsely chopped
1/4 cup butter or 1/4 cup margarine
1 lb pork, cut in small pieces
6 cups celery, chopped
1 cup onion, finely chopped
2 1/2 cups water
1/4 cup soy sauce
salt, to taste
pepper, to taste

Steps:

  • Brown meat in butter/margarine.
  • Add remaining ingredients.
  • Cover and simmer 45 minutes.
  • Serve on rice or toast.

Tender pork belly cubes are doused in a sweet and sticky sauce – a mixture of vinegar, soy, and sugar that come together in a vibrant red color, hence the Chinese character “hong” (红) in the name.
  • Steamed Hairy Crab (qing zheng da zha xie 清蒸大闸蟹) Come late September/early October, the entire city of Shanghai will be in a tizzy with the arrival of this scarce delicacy from nearby Yangcheng Lake, especially the prized crab roe.
  • Shanghai Shao Mai (烧卖) Less well-known than its Cantonese cousin – the dim sum mainstay shumai – Shanghai’s version is filled with sticky rice and shaped like a bell, with a small neck and a big, round bottom.
  • Deep-Fried Dough (youtiao 油条) Often served with rice congee, youtiao is basically a savory version of a churro, if the churro were bigger and airier.
  • Egg Pancake (dan bing 鸡蛋饼) Originally from Nanjing, this is a breakfast burrito, Chinese style. The wrap is made of egg mixed with a little water, flour and cornstarch, grilled until a bit crispy on the outside but still chewy on the inside.
  • Shandong Pancake (shan dong jian bing 山东煎饼) If dan bing were a burrito, then Shandong pancake would be a crepe. Just like a crepe, the Shandong jian bing is paper-thin and cooked till crispy on a custom flat round grill.
  • Scallion Pancake (cong you bing 葱油饼) Unlike the dan bing and the Shandong jian bing, which originated somewhere else in China, the scallion pancake is pure Shanghai.
  • Soy Milk (doujiang 豆漿) Together with shao mai, fried dough sticks and pancake anything, soy milk is the final member of Shanghai’s undisputed Four Kings of Chinese Breakfast.
  • Steamed Buns (baozi 包子) Baozi refers to a family of steamed buns made with a variety of fillings. Minced pork is the most common ingredient, but do try the vegetable version and the red bean paste.

  • Xiaolongbao or Soup Dumplings. Steamed buns. A Shanghai Classic - these soup dumplings should be your first meal in Shanghai. Delicate thin-skinned dumplings, with pork or vegetable or shrimp or crab fillings inside with a delicious hot broth, each is an explosion of flavor in the mouth.
  • Steamed Crab. Shanghai streamed crab. Shanghai's famed steamed crab uses a special type of crab found in rivers, and is normally consumed in late autumn and winter.
  • Smoked Fish Slices. Ideal for those who like highly spiced food, Shanghai's "smoked" fish slices (fresh fish marinated and spiced to taste like smoked fish) make a tasty dish.
  • Beggar's Chicken. This dish has come strong folklore behind its origins. Beggar's Chicken originated in the Qing Dynasty (1644–1911) and calls for a stuffed and marinated chicken that is sealed tight with layers of lotus leaves, and then wrapped in wax paper along with mud.
  • Peking Duck. Roast Duck. Beijing roast duck or Peking duck has the name Beijing attached to it but it is also a Shanghai specialty. Shanghai has many places that serve some of the best Peking Duck in China.
  • Braised Pork. This is a a classic Shanghai dish, sweet and caramelised pork belly cooked and served in brown sauce. The brown sauce is a mixture of Shaoxing sauce, light soy and dark soy sauce, in addition to sugar.
  • Fried Pork Buns. Fried mantou (steamed bread) is a plainer variation on Shanghai's fried porrk bun. Pan-fried pork buns, a local fried dim sum dish of Shanghai, has a history of over 100 years.
  • Shanghai Snacks. Shanghai boasts 1,800 snack houses and stalls serving various sorts of refreshments. Taking breakfast foods by way of example, there is a total of some 300 kinds of dumplings and pastries including deep-fried twisted dough sticks, soy milk, glutinous-rice balls, fried cakes with green onions, noodles with topping, dumplings in soup, steamed buns, fried dumplings, glutinous-rice cakes and dumplings, sweet pasty soups.
  • Yellow Croaker Noodle Soup. Croaker is a popular fish in Shanghai, and so naturally the croaker fish soup with noodles is one of the most local authentic dishes you can try!
  • Chicken and Duck Blood Soup. Yes, you guessed it. This Shanghai favorite is soup (known as Jiya Xuetang) that contains solidified blood as its main ingredient.

  • The M Pavlova. Correction, the famous M Pavlova. Forget cocktails, trade in your yuan for a sweet slice of this meringue torte heaped with tropical fruit and glazed with tangy passion fruit sauce.
  • Grilled oysters (烤生蚝) Shanghai is sea food foodie heaven and we have an entire street dedicated to oysters, mussels, scallops, crawfish and abalone (and for cheap!)
  • Choose your own adventure … in seafood. If you haven’t visited the Tongchuan Lu seafood market strip, go. Go now. This is the place to test and refine your haggling skills as hunger will drive you to a new level of motivation.
  • “The chicken has no sexual experience” (童子鸡) We appreciate tongzi ji, or young chicken, if only for hilariously awkward menu translations like the one above and contributions from the local vernacular (“tongzi ji” is slang for a younger man dating an older woman, or another name for a male virgin).
  • Caramel strawberry kebabs (糖草莓串) A descendant of the classic Sweet Hawthorne Kebab (糖葫芦), the appearance of these ripe, crunchy-sweet strawberry kebabs in vendor stalls announces “Spring is here” to Shanghai.
  • Raw, drunken crab (醉蟹) Don’t let those translucent crab parts and globs of orange roe intimidate you. Drunken crab, made with spotted sea crabs, is a must-try for its textures: the flesh is yielding like cold sashimi, the roe creamy but firm.
