- Combine 1 1/2 cups sugar and butter in a mixing bowl either using a mixer. Do not overbeat. One the mixture is nice and smooth, add the eggs and vanilla. Beat or mix again until just smooth.
- In a separate bowl, mix together dry ingredients. Slowly stir those into the butter mixture until cookie dough is well mixed.
- Mix together the 3 tablespoons sugar and cinnamon for the topping either in a bowl or on a plate. I like to do this on a plate and then roll the cookie dough balls through it.

See photos for an example- I’ve found the best stage is when about half the butter is liquid, but the rest is super soft. Like the texture of pudding. You want it to easily stir completely smooth when you touch it. If you butter is all the way melted, no worries!

- In a medium-sized mixing bowl, stir the butter and 3 Tablespoons sugar together until creamed – mixture may be a bit crumbly. That’s OK. Add the egg and vanilla until mixed. Stir in flour, baking soda, salt,cream of tartar, and 1/4 tsp cinnamon until just combined. Do NOT overmix.
- Place the dough in the center of the prepared cookie sheet into a tall ball (see pictures above). Sprinkle with 1/4 teaspoon cinnamon and 1/4 teaspoon sugar. Bake for 14-16 minutes until the edges are browned. The center may appear undone but that’s what you want. It will firm up. Allow to cool completely ON the baking sheet. Enjoy!
