- In large bowl, beat butter, granulated sugar, brown sugar, and vanilla until light and fluffy. Add eggs, one at a time, beating well.
- Gradually add flour, salt, and baking soda, beating until well blended. Stir in chocolate chips and nuts.
- Spread in greased 14 inch round pizza pan. Bake at 375 degrees F (190 degrees C) for 20-25 minutes. Cool cookie in pan on a cooling rack. Decorate as desired.

- Heat oven to 180C/160C fan/gas 4. Tip the butter and sugar into a large mixing bowl, beat until combined, then stir in the yolks and vanilla. Tip in the flour, baking powder, chocolate chips, a pinch of sea salt and any other fillings you want to add. Mix until a crumbly dough forms.
- Lightly butter a 25cm ovenproof frying pan. Spoon in and flatten the cookie mixture. For a gooey dessert, bake for 20 mins, leave to rest for 5 mins, then scoop straight from the pan and serve with ice cream, if you like. For a firmer cookie you can cut, bake for 30 mins, then leave to cool completely before cutting into wedges.

- Preheat the oven to 400˚ F. Whisk the flour, 1/2 teaspoon cinnamon, the cream of tartar, baking soda and salt in a medium bowl until combined.
- Beat the butter, 1/2 cup granulated sugar and the brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg and vanilla until well combined. Reduce the mixer speed to low. Add the flour mixture and beat until just combined.
- Combine the remaining 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon in a small bowl. Pat the dough together into a ball. Roll in the cinnamon sugar until well coated, sprinkling the cinnamon sugar on the dough as you go. Put the dough in the center of an unlined baking sheet. Press into an 8-inch round, about 1/2 inch thick. Sprinkle any remaining cinnamon sugar over the dough.
- Bake until the cookie is cracked in the center and light golden brown around the edges, 10 to 12 minutes. Transfer the pan to a rack and let the cookie cool completely on the pan. Cut into wedges.
GIANT LOADED OATMEAL COOKIE

- Preheat the oven to 350˚ F. Line a baking sheet with parchment paper. Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until smooth and light, 1 to 2 minutes. Add the peanut butter and mix until smooth. Scrape down the bowl. Add the egg and vanilla and beat until smooth, about 1 minute.
- Reduce the mixer speed to low. Add the flour, baking soda and salt and mix just until combined. Add the oats and mix just until combined.
- Combine the dried cranberries, chocolate chips and peanuts in a small bowl. Add all but a few tablespoons of the cranberry mixture to the dough and mix just until combined. Refrigerate the dough until slightly firm, about 15 minutes.
- Turn out the dough onto the baking sheet. Press into a 9-inch round, about 1/2 inch thick. Sprinkle the top with the reserved dried cranberry mixture and press to adhere. Bake until the cookie is crisp and golden around the edges and set in the center, 22 to 24 minutes. Transfer the pan to a rack and let the cookie cool completely on the pan. Cut into wedges.

I thought of this cookie when I was playing around with a chocolate chip cookie recipe. Hope it's liked!

- Preheat oven to 350 degrees.
- Cream together butter, sugar, and brown sugar.
- Beat in the vanilla and the eggs one at a time until completely incorperated.
- In a seperate bowl sift together flour, cocoa powder, salt, and baking soda.
- Add the flour mixture 1/2 cup at a time waiting until each portion is well incorperated.
- Stir in chocolate chips, coconut, and almonds.
- Grease 1 12 inch cake pan
- Shape the dough into a large ball and flaten into the middle of the pan until it is 1 1/2 inch disk (it will not reach the sides of the pan).
- Bake for 30 minutes.

GIANT CHOCOLATE CARAMEL COOKIE BARS
When a good ol' American candy bar veers French, it becomes a decadent dessert. Buttery pat-in-pan shortbread takes the place of mass-produced cookies and gets smothered with silken chocolate and from-scratch caramel, rich with fresh cream.

- Make the cookie:
- Preheat oven to 350°F. Butter a 13x9" baking pan, line bottom and sides with parchment paper, and butter parchment.
- Using an electric mixer on medium speed, beat 1 cup butter in a large bowl until creamy. Add sugar and beat, scraping bowl occasionally, until incorporated. Beat in salt, then vanilla. Reduce mixer speed to low and gradually beat in flour, scraping bowl occasionally, until dough just starts to form and large pieces of flour remain.
- Press dough into prepared pan in an even layer. Poke holes all over with a fork. Bake cookie until golden brown and firm to the touch, 30-35 minutes. Transfer to a wire rack and let cool.
- Make the caramel:
- Heat cream, butter, and salt in a heatproof measuring cup or bowl in a microwave until cream is warm and butter is melted, about 45 seconds.
- Gently stir sugar and 1/3 cup water in a large saucepan. Heat over medium and cook, brushing down sides of pan with a wet pastry brush if needed and swirling pan gently (do not stir), until sugar is amber-brown, 15-20 minutes. Remove from heat.
- Carefully add cream mixture in a steady stream, stirring with a silicone spatula (it will bubble up violently); if it looks like it may boil over, stop adding cream mixture and stir to break up bubbles.
- Fit saucepan with candy thermometer and heat over medium. Cook, undisturbed, until mixture reaches 245°F (almost firm-ball stage). Immediately and carefully pour over cookie. Tilt pan to spread caramel evenly. Let sit until set, at least 1 hour and up to overnight.
- Make the chocolate coating:
- Heat chocolate in a heatproof bowl set over a saucepan of barely simmering water (bowl should not touch water), stirring, until melted. Remove from heat and, stirring constantly, add oil. Let cool, stirring occasionally, until chocolate firms slightly, about 10 minutes.
- Place a sheet of parchment paper over cake pan. Place cutting board over parchment. Holding pan and board, invert quickly. Lift off pan, then peel off parchment.
- Pour one-third of chocolate mixture over cookie; reserve remaining chocolate mixture at room temperature, stirring occasionally. Spread chocolate mixture evenly with an offset spatula until cookie is coated. Chill until set, about 15 minutes.
- Using an oiled knife, cut cookie in half lengthwise. Carefully invert bars, caramel side up, and transfer to a wire rack set inside a rimmed baking sheet lined with waxed paper, spacing 2" apart.
- Slowly pour reserved chocolate mixture over bars; coat tops completely and let run down sides (use an offset spatula to coat sides completely if needed). If you run out of chocolate mixture, carefully lift rack off pan, then remove waxed paper with chocolate drippings. Return rack to pan and pour chocolate drippings over. Create a swoopy texture in chocolate with offset spatula, if desired. Chill until firm, about 45 minutes.
- Let sit at room temperature 10 minutes, then slice each bar crosswise into 10-12 pieces.
- Do Ahead
- Cookie bars can be made 3 days ahead; loosely cover and chill.
GIANT PIZZA COOKIE

- OPTIONAL CANDY TOPPINGS: red licorice wheels or red fruit leather, black licorice, square piece bubble gum, green and/or purple taffy candy, pink bubble tape.
- Press sugar cookie dough into a round cookie pan.
- Bake according to package or recipe instructions.
- Remove from oven, allow to cool at least 2 hours. You can remove from the pan or leave it inside.
- Make royal icing according to box or recipe instructions.
- Divide about half of the icing into two other bowls, one with slightly more than the other.
- Color the remaining icing yellow (gel icing colors work best because they don't alter the consistency of the icing).
- Color the smallest portion of icing red and the last bowl a tan crust-like color (we used a little copper and a little brown to achieve this look).
- Fill an icing bag affixed with a large round tip (like #2A) with the yellow icing. Pipe a large circle onto cookie representing where you'll want your "cheese" layer to go out to (leave about 1 1/2 inches for the sauce and crust). Immediately fill this circle in with the rest of the yellow icing, spreading together with a spatula if needed.
- Allow the yellow icing to set for a few minutes until it has a slight crust on it.
- Now fill an icing bag with the same larger tip with the red icing. And pipe this around the "cheese" circle. This represents pizza sauce so it doesn't need to be perfect.
- Similarly allow to set for a few minutes before finally following with the crust-colored icing and spreading it out to the edge of your cookie. A flatter icing tip, such as #125, is perfect for this.
- Now make the perfect pizza for yourself by choosing your favorite toppings! Red licorice wheels are perfect pepperonis, and so is red fruit leather cut into circles. Cutting black licorice into little rings makes great olives. Red square bubble gum for tomatoes, yellow for pineapple, green or purple for onions. Bubble gum tape can be cut into squares for ham, and green or purple taffy can be cut into pepper slices or purple onion strips.
- Add your desired toppings and then use a pizza roller to slice into pieces and serve!

- Preheat oven to 350 degrees, with one rack in upper third and another in lower third. In a medium bowl, whisk together flour, baking powder, salt, and baking soda; set aside.
- Using an electric mixer on medium-high, beat butter and sugar until light and fluffy, 2 to 4 minutes. Add egg and vanilla; beat well to combine.
- With mixer on low, add half the flour mixture, followed by sour cream, then remaining flour mixture; mix just until smooth. (Dough will be stiff; you may need to finish mixing it by hand with a wooden spoon.)
- Drop mounds of dough, each equal to about 3 tablespoons, 3 to 4 inches apart, onto two ungreased baking sheets; sprinkle with sugar.
