PIZZELLE ICE CREAM SANDWICHES

Pizzelle Ice Cream Sandwiches image

Provided by Giada De Laurentiis

Categories     dessert

Time 2h50m

Yield 6 servings

Number Of Ingredients 9

1/3 cup sugar
2 large egg whites
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
4 tablespoons butter, melted
1/3 cup all-purpose flour
3/4 cup chocolate-hazelnut spread (such as Nutella)
1 pint good-quality ice cream or gelato, such as espresso, vanilla, chocolate
Powdered sugar, for dusting

Steps:

  • To make the pizzelles: Preheat the pizzelle iron to medium-high heat. Whisk the sugar, egg whites, vanilla, and salt in a large bowl to blend. Whisk in 2 tablespoons of butter. Add the flour and whisk just until blended.
  • Brush the pizzelle cooking surfaces with some of the remaining melted butter. Spoon 1 tablespoon of batter in the center of the pizzelle iron. Close the iron and cook until deep golden, about 3 minutes. Transfer the pizzelles to a cooling rack. Cool completely. Trim off any excess pizzelle along the edges. Store the pizzelles airtight at room temperature.
  • To make the ice cream sandwiches: Gently spread the chocolate-hazelnut spread over 1 side of 12 pizzelles. Cut the ice cream carton to remove the ice cream from the carton in one piece. Starting at the widest end of the piece of ice cream, cut the ice cream crosswise into 1/2-inch-thick rounds. Place 1 slice of ice cream atop each coated pizzelle. (Alternately, the ice cream can be scooped atop the pizzelle.) Top each with a second pizzelle, pressing gently to adhere. Arrange the sandwiches on a baking sheet and freeze until firm. (Can be made 2 days ahead. Store airtight and keep frozen,)
  • Dust the ice cream sandwiches with powdered sugar and serve.
  • Cook's Note: If the ice cream sandwiches are eaten immediately, the pizzelles will be crisp. However, if the sandwiches freeze overnight, the pizzelles will soften just enough to allow the sandwiches to be cut into wedges, if desired.

PIZZELLE

Pizzelle image

Hailing from Abruzzo in Central Italy, pizzelle are crisp, flat waffle-esque cookies made in a special hot iron. Like mostaccioli, these cookies predate Christmas -- in fact, it is said that this is the oldest known cookie recipe on earth, dating back to the 8th century BC. In olden times, presses were made from cast iron and would be heated over a fire, or directly on the stovetop. You can still find those irons if you're up to the challenge, but electric irons are much easier to use, and very easy to find both online and at major retailers.

Provided by Food Network

Categories     dessert

Time 1h55m

Yield 2 to 4 dozen cookies, depending on size of iron

Number Of Ingredients 9

3/4 cup sugar
1/2 cup unsalted butter, melted
2 tablespoons milk
1 teaspoon vanilla extract
1/2 teaspoon anise extract, optional
3 large eggs
1 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt

Steps:

  • Whisk together the sugar, butter, milk, vanilla, anise extract if using and eggs in a large bowl. Add the flour, baking powder and salt, and continue to whisk until the batter is smooth. Allow to stand at room temperature for at least 1 hour so the batter can hydrate.
  • Heat the pizzelle iron, and cook your pizzelles according to the manufacturer's directions.

AUNT PHILLOMENA'S PIZZELLE

Aunt Phillomena's Pizzelle image

At the holidays, these crisp, simple cookies are stacked everywhere in Italian kitchens. My family was from Abruzzi, and my mother always used the recipe from her older sister. You can scent these cookies with orange, almond or lemon or just vanilla, but we always made plenty with anise at Christmas. You can use a simple stove-top pizzelle maker or an electric one. I prefer the kind without a non-stick coating. A little shot of cooking spray or a wipe with some cooking oil helps prime the press. Like pancakes, you will probably throw away the first one.

Categories     dinner, lunch, cookies and bars, side dish

Time 1h

Yield About 4 dozen

Number Of Ingredients 8

1 3/4 cups/210 grams flour, plus a little more if batter is too thin
2 teaspoons/15 grams baking powder
1/2 teaspoon/6 grams salt
3 eggs
3/4 cup/150 grams sugar
1/4 pound/113 grams butter, melted
1 teaspoon/5 milliliters vanilla
1/2 teaspoon/2.5 milliliters anise extract

Steps:

  • Whisk together flour, baking powder and salt in a small bowl. In a larger bowl, beat eggs and sugar until blended and slightly fluffy, 3 to 5 minutes. Slowly add cooled, melted butter, vanilla and anise and mix until incorporated well. Mix in dry ingredients a cup or so at a time, until batter is smooth but thick.
  • Using 2 spoons, one to scoop up the batter and the other to ease it onto the iron, drop batter onto the center of a well-heated pizzelle maker. For smaller, 3-inch pizzelles, use a generous teaspoon of batter. For the 5-inch, use about a tablespoon.
  • Cook for 30 to 40 seconds, or until just lightly brown. Gently remove to a rack or plate to cool.

ANISE PIZZELLE

Anise Pizzelle image

Hailing from the Abruzzo region of central Italy, these wafer cookies get their intricate shape by cooking a waffle-like batter between two hot iron plates. Martha flavors hers with toasted anise seeds and anise extract.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 18

Number Of Ingredients 10

1 1/4 teaspoons anise seeds
1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 large eggs
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon pure anise extract
5 tablespoons unsalted butter, melted and cooled
Confectioners' sugar (optional)

Steps:

  • Heat a nonstick pizzelle iron. In a small skillet, toast anise seeds over high heat, stirring, until fragrant, about 1 minute. Transfer seeds to a spice grinder, let cool, and finely grind. Scrape into a medium bowl; whisk together with flour, baking powder, and salt.
  • In a large bowl, whisk together eggs and granulated sugar until well combined. Whisk in vanilla and anise extracts. Slowly add cooled butter in a steady stream, whisking continuously, until batter is smooth. Stir in flour mixture until just combined (do not overmix).
  • Transfer batter to a piping bag fitted with a 1/2-inch round tip. Pipe about 2 tablespoons batter in a circle around the center of each pattern on the heated pizzelle iron. Close and seal with clasp. Cook until golden brown, about 45 seconds. Using a small spatula, release and remove cookie. Using kitchen shears or a 4 1/2-inch ring mold, trim any ragged edges, if desired. Transfer cookie to a wire rack to cool. Repeat with remaining batter. Dust cooled cookies with confectioners' sugar, if desired.
