CHOCOLATE-DIPPED VIENNESE FINGER BISCUITS RECIPE
This sweet and moreish chocolate-dipped Viennese finger biscuits are simple and easy to make and perfect for sharing with friends and family.

Steps:
- Cream the butter and icing sugar until light and fluffy. Sift in the flour, cornflour and spice, if using, and beat well.
- Set the oven to 180°C/350°F/Gas Mark 4. Put the mixture in the piping bag and pipe fingers, about 7.5cm long, spaced evenly apart on the paper.
- Bake for 15 mins. Transfer to a wire rack to cool.
- Melt the chocolate in a small bowl over a pan of hot water. Dip one or both ends of the fingers in the chocolate and place on paper to set. After dipping in chocolate, you could dip the ends in finely chopped pistachios, if you like.

- Chop dried fruit (currants, raisins, sultanas or a mixture). Put flour and sugar into a bowl and rub in the butter lightly with the finger tips until no lumps remain, then stir in the sugar.
- Add 1-2 Tbs milk to give a stiff dough and turn this on to a floured board.
- Pat lightly into shape and roll out very evenly to 1/8 inches thick, keeping the dough a regular shape, then cut in half.
- Sprinkle one half evenly with chopped fruit and cover with the other piece of dough.
- Lightly flour the board and roll the mixture again until 1/8 inches thick,.
- keeping as square as possible.
- Trim the edges and cut into squares or triangles and bake on a greased tray in mod. hot oven @ 400°F for 15 minutes.

- Preheat oven to 425 F Mix first 4 ingredients together in a bowl.
- Cut in butter with a pastry blender or a fork, or two knives, until crumbly.
- Add milk.
- Stir until it forms a ball.
- Add a bit more milk if necessary to make a soft dough.
- Roll or pat to 1 inch thick. (I usually pat the dough).
- Cut into circles with a biscuit cutter or a floured glass.
- Arrange on a greased baking sheet.
- Bake in 425 F for about 10- 12 minutes or until risen and nicely browned. (in my oven it usually takes 15 minutes).
- This is supposed to make 12, but I almost always only get 11 biscuits, with the size of the glass that I use.
- Variations: Try adding some fresh or dried herbs. Some good pairings are basil and oregano, or parsley and fresh ground black pepper, or thyme and garlic, or add some grated sharp or old cheddar cheese.

- Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. Break cheese into large chunks; transfer to a food processor, and pulse until coarsely ground, 16 to 20 times. (You should have a little over 12/3 cups ground cheese.) Reserve 2 tablespoons cheese.
- Stir together flour, sugar, pepper, and 1 cup ground cheese in a large bowl. Cut butter into flour mixture using a pastry blender or your fingers until mixture resembles coarse crumbs. Stir in buttermilk until a shaggy dough forms.
- Transfer dough to a floured work surface. Pat into a 1-inch-thick rectangle, and cut into quarters; stack quarters on top of each other. (Dough will be crumbly at first but will come together as you work.) Pat stacked dough back into a rectangle. Repeat cutting and stacking 2 more times. Roll or pat dough into a 3/4-inch-thick rectangle (about 8 1/2 x 10 inches). Cut rounds out of dough using a 11/2-inch round cutter, pressing straight down, without twisting cutter. (You’ll have about 35 biscuits; discard dough scraps.)
- Sprinkle 2/3 cup ground cheese in a 12- x 8-inch rectangle on prepared baking sheet. Arrange biscuits 1/2 inch apart on cheese. Freeze 10 minutes. Remove from freezer; brush biscuit tops evenly with egg. Sprinkle lightly with pepper and reserved 2 tablespoons ground cheese.
