German Strawberry Roll image

This is a classic German strawberry roll (Erdbeerrolle) recipe made with sponge cake, whipped cream, and fresh strawberries. My favorite cake when strawberries are in season! If you like, you can cover the outside with more whipped cream and decorate with extra strawberries.

4 eggs, divided
½ cup white sugar
2 teaspoons vanilla sugar
3 tablespoons confectioners' sugar
¼ cup all-purpose flour
½ teaspoon baking powder
2 teaspoons white sugar
¾ cup heavy whipping cream
teaspoon vanilla sugar
2 cups finely chopped strawberries
½ cup whipping cream
5 fresh strawberries, halved

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Combine egg yolks, 1/2 cup sugar, and 2 teaspoons vanilla sugar in a large bowl; beat with an electric mixer until foamy.
  • Beat egg whites in a glass, metal, or ceramic bowl until foamy. Gradually add confectioners' sugar, continuing to beat until stiff peaks form. Slide over the egg yolk mixture.
  • Sift flour and baking powder over the stiff egg whites. Carefully fold everything into the egg yolk mixture until batter is well combined, but do not over mix. Spread batter onto the prepared baking sheet.
  • Bake in the preheated oven until sponge cake is set and lightly browned, 12 to 16 minutes.
  • Lay a clean dish towel on a flat work surface and sprinkle dish towel with 2 teaspoons sugar. Invert sponge cake onto the dish towel and remove parchment paper. Roll up cake with the dish towel and allow to cool completely, about 1 hour.
  • Beat 3/4 cups cream in a chilled glass or metal bowl with an electric mixer until frothy. Add vanilla sugar gradually, continuing to beat until stiff peaks form. Fold in strawberries with a spatula.
  • Carefully unroll sponge cake. Spread strawberry cream on top, leaving a little room on the edges. Carefully roll up and place seam down onto a cake platter. Allow to chill in the refrigerator for 1 hour.
  • Beat 1/2 cup cream in a chilled glass or metal bowl with an electric mixer until frothy. Add vanilla sugar gradually, continuing to beat until stiff peaks form. Spread all over the strawberry roll and garnish with strawberry halves.

3/4 cup butter (6 oz.)
2/3 cup milk
4 1/4 cups all-purpose flour
1 1/4 teaspoons active dry yeast
2 tablespoons superfine sugar
2 eggs
1 pinch salt
2 tablespoons confectioners' sugar, sifted

Steps:

  • Put the butter and milk into a small saucepan and heat gently to melt. When melted, pour into the mixer bowl with the flour, yeast, sugar, eggs, and salt. With the dough hook, mix on speed 4 for 3 minutes until combined. Cover and leave in a warm, draft free place for 30 minutes.
  • Preheat the oven to 325°F Remove the dough from the mixer bowl and divide into 24 equal size pieces. Roll each piece into a sausage shape and roll them in the confectioners' sugar.
  • Lay three pieces of dough side by side and press the ends of these together. Braid the three pieces, pressing the other ends together to finish. Repeat with the remaining dough to make eight rolls. Transfer to a cookie sheet and leave to stand for 30 minutes. Cook the rolls in the oven for 20 minutes until golden brown, and serve warm. Makes 8. Preparation time: 15 minutes plus 1 hour rising time. Cooking time: 20 minutes.

My friend's Grandmother made this one day and my family just gobbled it up. She then went to Germany before i could get her recipe. What I found is similar, something I found on the internet. I hope that you enjoy!

vegetable oil (or spray very lightly with non-stick spray)
1 (18 ounce) package angel food cake mix
1 quart strawberry, sliced
1/4 cup sugar
2 cups heavy cream or 4 cups non-dairy whipped topping
1 whole strawberry
confectioners' sugar

Steps:

  • Grease 17 x 11 1/2 x 1 inch jelly roll pan with vegetable oil and line with waxed paper, grease the wax paper.
  • Prepare cake as directed on package.
  • Spread batter in pan.
  • Bake at 375 degrees F for 10 to 12 minutes.
  • Sift powdered sugar in a 17 x 11 1/2 inch rectangle on a clean dry kitchen towel.
  • When cake is done, loosen sides and turn out onto powdered sugar on towel.
  • Peel off waxed paper.
  • Starting at narrow end, roll up cake and towel together.
  • Cool on wire rack for 30 minutes seam side down.
  • Combine strawberries and sugar and set aside.
  • If using heavy cream, beat cream until foamy, gradually add 3 tablespoons powdered sugar and continue beating til soft peaks form.
  • Drain berries thoroughly.
  • Unroll cake and remove towel.
  • Spread cake with 1/2 the whipped cream or non-dairy whipped topping.
  • Top with sliced strawberries.
  • Reroll the cake (without the towel).
  • Place on serving plate, seam side down.
  • Spread with remaining whipped cream or topping.
  • Chill and slice and enjoy!

Found on Tasty-german-reciipe.com to use during ZWT 6 and during our bumper crop of home-grown strawberries. This is a spongcake sort of dish underneath with strawberries and glaze on top. I envision a bit of whipped cream for to topping too, just to make it even more decadent. Because this dessert really spolights the strawberries, I recommend only making this when strawneeries are in season. And if you can find a friendly neighbor with a strawberry patch - more's the better! You can do this with small whole berries too for a breathtaking presentation.

50 g superfine sugar, plus
2 teaspoons sugar
50 g flour, plus
1 teaspoon flour
2 eggs
225 g strawberries, hulled and sliced
3 tablespoons strawberry jam or 3 tablespoons glaze

Steps:

  • Grease an 8 inch (20cm) raised-based flan tin. Sprinkle over 2 tsp sugar and tilt to coat evenly. Add 1 level tsp flour and coat similarly, knocking out any excess.
  • Place the eggs and remaining sugar in a deep bowl and whisk until the mixture is very thick. Sift the flour over the surface of the mixture. Fold in gently with a metal spoon, then turn into the prepared tin and tilt to level the surface.
  • Place on a baking sheet and bake in the oven at 180 degrees C for 20-25 minutes until the sponge springs back when pressed lightly. Allow to cool on a wire rack.
  • Arrange the sliced fruit in the flan case. Put the strawberry jam and 1 tbsp water in a small saucepan and heat gently together until liquid. Cool a little then brush over the fruit.
