300 grams Pastry flour
3 eggs
1 tsp salt
2 onions
500 grams Sauerkraut (canned)
30 grams clarified butter
150 milliliters dry white wine
salt
freshly ground peppers
1 bay leaf
3 allspice
1 Tbsp Caraway

Steps:

  • For the spaetzle: In a bowl, whisk together the flour, eggs and 200 ml (approximately 7 ounces) of cold water. Stir with a wooden spoon to a smooth dough. Season with salt. Cover and let stand 20 minutes. Meanwhile, peel the onions and cut into strips. Rinse the sauerkraut and drain well.
  • For the sauerkraut: Heat the butter in a skillet and saute the onion until golden brown. Add the cabbage, saute briefly and deglaze with the wine. Add the bay leaf, allspice and caraway and season with salt and pepper and simmer over low heat for 5-8 minutes.
  • Meanwhile, using a spaetzle maker, board, or a colander, scrape the spaetzle into a pan of boiling salted water. Cook until the spaetzle rise to the surface, 2-3 minutes. With a skimmer or a slotted spoon, lift out the spaetzle and rinse under cold water. Toss the spaetzle with the sauerkraut and serve.

15 ml vegetable oil
530 g all-purpose flour
20 g salt
8 large eggs
235 ml water
1 (14 1/2 ounce) can sauerkraut (or 14.5 oz of homemade)
115 g butter
25 g plain breadcrumbs

Steps:

  • Fill a large pot with water, add oil, and bring to a boil.
  • Place flour in a large mixing bowl and make a well in the middle. Add salt, eggs, and water and beat the dough until smooth and bubbly. The dough should have a thick consistency.
  • Fill a spaetzle press with the dough and squeeze into the boiling water (You may use a colander to push the dough through or a wooden cutting board and scrape dough little by little with a knife into the water).
  • When the spaetzle float to the top of the pot, drain them. Place half of the spaetzle in a glass baking dish and add a layer of sauerkraut on top. Add another layer of spaetzle and sauerkraut. Cover the pan to keep the dish warm.
  • In a separate pan melt the butter and add breadcrumbs just long enough to moisten them. Top the spaetzle with the breadcrumbs.
  • Place in a preheated oven at 200 C for 15 minutes.
  • This is also delicious reheated the next day with a little bit of butter.

3 cups spaetzle noodles
1 onion, chopped up
1 cup bacon, diced
2 cups sauerkraut
juniper berries, bay leaves
1 dash white wine
3 tablespoons butter
salt and pepper
1 bunch parsley
4 bratwursts

Steps:

  • Cook the Sauerkraut for about 15 minutes with some juniper berries, bay leaves and a dash of white wine. (Don't let it burn).
  • Cook the Spaetzle al dente in boiling salt-water.
  • Melt three tablespoons of butter in a large pan. Sauté the chopped up onion and about 1 cup of diced bacon. (Be careful with the amount, depending on the saltyness of the bacon).
  • When the bacon is nice and crunchy, fry the Spaetzle in the same pan until they are just a bit golden.
  • Add the cooked Sauerkraut and stir well. Season with salt and pepper.
  • Just before serving, throw in the chopped parsley for some fresh color.
  • Fry up the sausages and place on top of the Spaetzle.

3 cups dried spaetzle (uncooked)
1 tbsp olive oil or butter
14-1/2 ounces sauerkraut (reserve juice)
18 ounces shredded mozzarella cheese

Steps:

  • Cook the spaetzle al dente, about 15 minutes in salted water.
  • Add a layer of cooked spaetzle to a casserole dish. Top with a layer of sauerkraut, then a layer of cheese. Season top with salt and pepper.
  • Repeat for a second layer, and a third if needed.
  • Heat the olive oil in a pan and brown the sliced onion. Place the browned onions on top of the casserole.
  • Bake at 450 just till the cheese is melted and the sauerkraut is warmed, about 20 minutes.
  • For a juicier casserole, add some or all of the reserved sauerkraut juice to the casserole before baking.

1 gallon hot water

Steps:

  • Mix together flour, salt, white pepper, and nutmeg. Beat eggs well, and add alternately with the milk to the dry ingredients. Mix until smooth.
  • Press dough through spaetzle maker, or a large holed sieve or metal grater.
  • Drop a few at a time into simmering liquid. Cook 5 to 8 minutes. Drain well.
  • Saute cooked spaetzle in butter or margarine. Sprinkle chopped fresh parsley on top, and serve.

This wonderful dish combines all things Oktoberfest! It has spaetzle and sausage, and the sauerkraut is flavored with bacon, brown sugar, apples, and sauteed onions. Yum! This dish reheats well the next day and is very filling!

1 ⅓ cups all-purpose flour
1 teaspoon salt
3 eggs
⅓ cup water
1 teaspoon vegetable oil
2 slices bacon, diced
½ large onion, chopped
2 tablespoons butter
1 small Gala apple, cored and chopped
2 tablespoons brown sugar
1 (16 ounce) package sauerkraut
1 (16 ounce) package kielbasa sausage, cut into 2-inch pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a metal colander.
  • Whisk together the flour and salt in a bowl. Mix the eggs and water, and pour into the flour mixture. Stir to form a dough.
  • Bring a pot of water to a boil. Place the spaetzle dough into the oiled colander, and set the colander over the pot of water. Use a flexible spatula to push the dough into the boiling water through the holes in the colander. Stir the spaetzle as they boil. When they have floated to the top, they are done (about 5 minutes). Scoop the spaetzle out of the boiling water, and place into an ungreased 9x9-inch baking dish.
  • Place the bacon in a skillet over medium heat, and cook, stirring often, until the bacon is crisp, about 8 minutes. Remove bacon, leaving drippings in pan, and set aside. Cook the onion in the same pan as the bacon until browned, about 10 minutes.
  • In a large skillet, melt the butter over medium heat until foamy, and stir in the apple and brown sugar. Cook and stir until the apple is soft, about 5 minutes. Transfer the cooked bacon, onions, and sauerkraut into the skillet, and cook, stirring often, until the flavors have blended, about 5 minutes. Pour the sauerkraut mixture into the 9x9-inch baking dish on top of the spaetzle.
  • Place the kielbasa pieces into a microwave-safe dish, and cook on full power in a microwave oven until the sausage is hot and has lost its pink color, 2 or 3 minutes. Transfer the sausage to the baking dish.
  • Bake in the preheated oven until bubbling, about 15 minutes.
