5 bacon strips
3/4 cup chopped onion
2 tablespoons all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1-1/3 cups water
2/3 cup cider vinegar
1/4 cup sugar
6 cups sliced cooked peeled potatoes

Steps:

  • In a large skillet, fry bacon until crisp; remove and set aside. Drain all but 2-3 tablespoons of drippings; cook onion until tender. Stir in the flour, salt and pepper until blended. Add water and vinegar; cook and stir for 1 minute or until slightly thickened. , Stir in sugar until dissolved. Crumble bacon; gently stir in bacon and potatoes. Heat through, stirring lightly to coat potatoes. Serve warm.

2 pound Baby Potatoes (cut in half)
1 1/2 tablespoon Salt (divided)
5 slices thickly cut Bacon (diced)
1 medium red Onion (finely diced)
2 tablespoons Olive Oil
3 tablespoons White Wine Vinegar
1 tablespoon Sugar
1 tablespoon Dijon Mustard
1 tablespoon chopped Dill

Steps:

  • Place potatoes to a boil and add a tablespoon of salt to it. Boil them till they are fork tender. Drain and set aside.
  • Cook the bacon till the fat starts to render, and then add the onions. Cook the onions and bacon for 5 more minutes and then remove the onions and bacon in a large bowl. Reserve the remaining bacon fat and pour it into a small jar to make the dressing.
  • Add the olive oil, vinegar, sugar, mustard, dill and half teaspoon salt to the jar with bacon fat and shake well to make the dressing.
  • Add the potatoes to the large bowl with bacon and onions and pour the dressing on top. Toss well to combine. Serve warm or cold.

3 slices bacon, cut in 1-inch pieces
1/2 cup chopped onion

1/4 teaspoon celery seed
1/4 teaspoon pepper
1/2 cup water
1/4 cup cider vinegar

Steps:

  • In 3-quart saucepan, place potatoes; add enough water just to cover potatoes. Heat to boiling. Reduce heat to low. Cover and cook 30 to 35 minutes or until potatoes are tender; drain. Let stand until cool enough to handle. Cut potatoes into 3/4-inch dice.
  • Meanwhile, in 10-inch skillet, cook bacon over medium heat 7 to 8 minutes, stirring occasionally, until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels.
  • Cook onion in bacon fat in skillet over medium heat 3 to 5 minutes, stirring occasionally, until tender. Stir in sugar, flour, salt, celery seed and pepper; cook 1 minute, stirring constantly.
  • Stir water and vinegar into onion mixture. Heat to boiling over high heat, stirring constantly. Boil and stir 2 to 3 minutes or until thickened.
  • Reduce heat to medium. Stir in potatoes and cook, stirring gently to coat potatoes, until hot and bubbling. Top with bacon. Serve warm.

9 potatoes, peeled
6 slices bacon
¾ cup chopped onions
2 tablespoons all-purpose flour
2 tablespoons white sugar
2 teaspoons salt
½ teaspoon celery seed
⅛ teaspoon ground black pepper
¾ cup water
⅓ cup distilled white vinegar

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.
  • Saute onions in bacon drippings until they are golden-brown.
  • In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

4 slices bacon
1 small onion, diced
¼ cup white vinegar
2 tablespoons water

Steps:

  • Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
  • Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

2 1/2 lbs red potatoes, skinned and quartered
8 slices bacon
3 tablespoons olive oil
1 medium red onion, sliced
3 tablespoons red wine vinegar
1 cup beef stock
3/4 lb kielbasa, cut into half moons
1/4 cup fresh flat leaf parsley

Steps:

  • Preheat the oven to 400°F.
  • Place the potatoes in a pot and cover with water. Bring to a boil and cook until fork tender, about 15 to 18 minutes.
  • Arrange the bacon on a slotted broiler pan and place in the middle of the oven. Bake the bacon until crisp, 10 to 12 minutes. Cool, chop, and reserve.
  • Heat in a medium skillet over medium-high heat and add 2 tablespoons of olive oil. Add the red onion and sauté until just tender, about 5 minutes. Add the vinegar and stock and turn off the heat.
  • Preheat grill pan or a large nonstick skilled over medium-high heat. Drizzle the sliced kielbasa with a bit of olive oil and arrange on the preheated hot grill or in the preheated skillet. Cook for 2 minutes on each side, until hot and crisp on the edges.

6-8 medium red potatoes
5-6 turkey bacon slices
1 chopped onion
3 tablespoons sugar
1 cup water
1/3 cup apple cider vinegar
3-5 tablespoons flour
salt and pepper to taste

Steps:

  • Boil the potatoes whole, without peeling, until fork tender. Drain and allow to cool until you can handle them. Slice as thin as you can into a large bowl. Set aside.
  • In a large skillet, fry bacon until crisp. Remove to a paper towel-lined plate and reserve the bacon grease in the skillet. Crumble bacon on top of the potatoes in the bowl.
  • Saute onions in bacon grease over medium heat until tender. Remove skillet from heat and stir in the water, vinegar, sugar, and flour (add flour a little at a time to your liking, you can always add a little more later). Also, add salt and pepper to taste (I start with 1 tsp of salt and 1 tsp of pepper).
  • Return to heat and bring just to a boil while stirring constantly. Boil for one minute, while still stirring. Remove from heat and pour over the bacon and potatoes. Carefully stir until well coated and serve warm.

10-12 medium red potatoes, (cut into 1" cubes (do not peel))
6 hard boiled eggs, (chopped)
1 lb Kielbasa, (sliced)
4 green onions, (sliced)
2 large red peppers, (roasted, peeled and chopped (or 1 can of store bought))
4 oz can chopped olives, (only used about 2 oz (can use whole can).)
3/4 cup mayonnaise
1 16 oz jar pepperoncini (chopped (reserve 1/2 the juice))
4 Tbs olive oil
1 tsp smoked paprika
1/4 cup minced onions
Garlic salt and pepper to taste

Steps:

  • Boil potatoes until fork tender. Drain water and leave in pan to cool off enough to handle.
  • In a saucepan, boil eggs until done. Drain and rinse with cold water. Peel, chop and add to large mixing bowl.
  • While the potatoes and eggs are boiling, slice the kielbasa in half and then slice again into 1/4" pieces. Place kielbasa in a frying pan with 2 tablespoons of water and cook on low, turning occasionally until done.
  • Rub a little oil on the red peppers and roast over open flame until charred. Put into an air tight container for about 10 minutes. Peel off skin and chop, add to bowl.
  • Cube potatoes into 1" squares, add to bowl.
  • Add the juice from the pepperoncini and the remaining ingredients, stir and serve warm (no need to put in the oven since the potatoes are still warm, however, can place in oven on 200°­ until ready to serve. Cover with foil so it doesn't dry out.
  • Also good served cold.

3 lb (about 9 medium) russet potatoes
6 slice bacon, diced
3/4 c chopped onion
3/4 c water
1/3 c vinegar
2 Tbsp flour
2 Tbsp sugar

1/2 tsp celery seed
1 pkg turkey kielbasa, sliced or 1 pkg. little smokies, cut up

Steps:

  • 1. Wash potatoes; peel and cut into eighths. Place potatoes in a large cooking pot and cover with water. Bring to a boil and cook for 10 min.
  • 2. While potatoes are boiling, mix together flour, sugar, salt, pepper, and celery seed. in a 2 cup measuring cup, mix the water and vinegar.
  • 3. Drain potatoes, place back in cooking pot; set aside.
  • 4. In a large skillet, fry bacon until crisp; remove and drain. cook and stir onion in bacon drippings until tender and golden brown. stir in flour mixture. Cook over low heat stirring until bubbly. Remove from heat; stir in water and vinegar. Heat to boiling, stirring constantly.
  • 5. Add kielbasa or smokies. Boil and stir 1 min. Crumble bacon over potatoes; pour meat mixture over potatoes and bacon. Stir until well coated.

Steps:

  • 1. Put the potatoes in a large saucepan. Add 2 tablespoons salt and enough cold water to cover by 1-inch. Bring to a boil, lower the heat, and simmer until fork-tender, about 30 minutes. Drain and cool slightly.
  • 2. When the potatoes are almost done, cook the bacon in a skillet over medium-high heat until crisp, 4 minutes. Drain the bacon on a paper towel-lined plate. Lower the heat to medium. Add the onion and 2 teaspoons salt and cook, until the onion is translucent, about 8 minutes, stirring occasionally. Whisk in the broth, wine, vinegar, mustard, and sugar and boil until slightly thickened, about 5 minutes.

1/4 cup flour
1 cup water
1/2 cup vinegar

Steps:

  • Cook potatoes, drain and keep warm.
  • Heat kielbasa in water to cover. Retain water and keep meat warm.
  • Brown and drain bacon. In 1/4 cup of drippings cook onion until tender. Add flour to drippings and onion.
  • Add water and vinegar. Stir until thick. If too thick add additional water.

2 pounds waxy potatoes
6-8 slices bacon (finely diced)
½ cup finely chopped onion
¾ cup beef stock
6 Tbsp white vinegar

1 tsp sugar
½ tsp salt (or more to taste)

Steps:

  • Boil the potatoes in a large pot covered with an inch of water over high heat until tender, about 20 minutes depending on the size of the potatoes.
